What I Ate Wednesday

I am not sure if I’ve ever done a What I ate Wednesday post before! I honestly can’t remember. I always think it’s interesting to see how other people fuel up during the day. It’s a great way to get ideas for my meals. As a vegetarian, I find it challenging to get enough protein some days. So…here it goes my What I Ate Wednesday. Truth be told, this is actually what I ate yesterday.

  • I managed to get in a good amount of protein today and no added sugars or sweets. A win in my book! That’s a typical “What I Ate Wednesday” for this mother runner. What are your fave foods this week? Favorite Veggie?

What I Ate Wednesday

I am definitely a creature of habit person especially at breakfast. I either have some sort of egg and veggie omelet/frittata or an oatmeal bake. I just cannot get into the overnight oats as I much prefer a warm breakfast. This delicious Banana strawberry blueberry oatmeal bake can easily be prepped in advance and stored in individual portion sizes. The only ingredients are oats, almond milk, eggs and fruit. No sugar added at all. You can find the recipe here.

Exercise: 4 mile run

Lunch: Leftover Veggie Chili

Starving post run, I was looking for something comforting and cozy. Heated up some left over veggie chili with a little shredded cheddar and a few tortilla chips. All was good until I decided to go to a hot yoga class last minute. Note to self: do not eat chili before hot yoga. My usual lunch is a big salad with some sort of beans so a nice change for me.

Exercise: 60 min hot yoga class

Snack: handful of roasted almonds, clementine and a piece of cheddar cheese.

Dinner: Power Bowl with eggs and veggies

What I Ate Wednesday

Since I did not have eggs for breakfast today, I figured why not throw together a bunch of leftovers into one veggie power bowl. Depending on what I have leftover, I make a variation of this bowl at least twice a week. Tonight’s bowl has a base of greens, brown rice, 2 eggs, broccoli, asparagus, a little hummus and harissa. Strange but good. Hummus is a fabulous pairing with eggs.

I managed to get in a good amount of protein today and no added sugars or sweets. A win in my book! That’s a typical “What I Ate Wednesday” for this mother runner. What are your fave foods this week? Favorite Veggie?

    I love warm breakfasts in the winter but give me all of the overnight oats come spring and summer. The oatmeal bake looks delicious so I’ll have to check that out for my next batch.

    Currently I’m on an orange binge! I’ve been loving snacking on them after dinner for a healthy sweet.

      Something about the texture of the cold oats doesn’t do it for me. Yes I am loving oranges right now too but I definitely go in phases with them

    Your food always looks good and I swear, if I didn’t like fish and chicken, I would be inspired to become vegetarian! I just did a WIAW post for IG! I’ve never done one before either. I need better food photography skills.

      It’s ok to go meatless a few days a week. The food photos take so much practice. I have a great filter app I use for them called “foodie” check it out

    I like a warm breakfast as well, I tend to have overnight oats as dessert at night instead. All of your meals sound delicious but for some reason all of your pictures just have a little question mark thing and no image?

    I can’t get on the overnight oat train either. I’ll pack it when I know I have to run out of the house early and eat somewhere else, but otherwise, hot breakfast all the way.

    I have hummus, eggs and rice in my fridge right now. How have I not thought of combining them together!?

    Also…. chili going into hot yoga. Lol. I can see what you mean there….

    I’m new to your blog and so glad I found it! I’m not vegetarian, but many of my meals are meatless so I’m happy to have some new recipes to try.
    I’m currently obsessed with 2 over easy eggs in the morning and I used to never eat runny eggs. Eggs and a mini bagel with homemade veggie cream cheese is perfect before a run.

    I actually had nothing appealing in the fridge (no leftovers) or pantry, so I scrambled 4 eggs with some onion and cheddar for lunch yesterday. I was not hungry the entire rest of the day LOL I forget how filling eggs are, and never think of them as a meal option after breakfast hours.

      Eggs really can be a great meal option. I do eggs for dinner a lot when my hubs is working late.

    I’m doing the whole WIAW today too. So far, so good. Though I inhaled my salad so fast, I forgot to get a photo. Darn it!

    I love getting a glimpse into what other people eat! I eat almonds and fruit and cheese as snacks nearly every day as well.

      They are great snacks! My meals stay kind of constant but I do vary my snacks

    I am totally seasonal about my food, I love hot in the winter and cold in the summer. I would not have thought to put eggs and hummus together but now I want to try it!

    I actually LOVE looking and reading WIAW posts!! I think it’s so interesting to see what people actually eat and I get ideas for myself!! And nowwww I want some over easy eggs!

    That banana strawberry blueberry oatmeal bake looks really good! I did my first WIAW in January! Then busy February came along and I couldn’t really remember what I had for breakfast / lunch most days. I’ll do better this month!

    Everything looks so delicious! I pinned that oatmeal bake ages ago. I really need to make it soon. I do like overnight eats, but I usually warm them up in the morning. 🙂
