Thanks for joining me and Sarah for Meatless Monday today. It’s ridiculous freezing here in Northern Virginia. Winter weather like this calls for chili! Craving something different than the normal tomato-based veggie chili? You will delight in this award winning Vegan White Bean Quinoa Chili.
Vegan White Bean Quinoa Chili
For those nights that you don’t know what to make, this easy recipe can be made ahead in a crock pot or last minute in a stock pot. This Chili also freezes really well and can be taken out to enjoy when you need a quick meal.
Filled with white beans and quinoa, this meatless meal is packed with plant based protein to keep you warm and satisfied for hours. Top it off with cheese, avocado or chips or all three. Anything goes. I am a spicy girl, the hotter the better for me. You can control the heat by reducing the jalapeño peppers or chili powder.

Cook for 4 hours?? 😀 I would have to start in the early morning.. 🙂 But it looks worth it!
So you can make it on a Sunday or you could put it in your crockpot on low for 6-8 hours. It’s worth it!

I’ve never used Quinoa in chili before but this recipe sounds great! We have a few different chili recipes we go through in the winter!
It really makes it a lot more filling and adds some protein too!
We just made a very similar white bean chili yesterday, but with chicken. With how cold its been lately, its definitely perfect weather for chili!

White bean chili is a favorite! I don’t get it much since my husband makes better chili then I do and he does not like beans in his. This does inspire me to make a smaller batch and freeze some for my lunch.
What? You can’t have chili without beans 🙂

I love spicy chilli, actually, I love all foods spicy!!! I love making soups and casseroles, when it’s freeezing outside!

I really like chili but my hubs does not like spice at all, can’t handle it! So I tend to not cook it much cause it’s hard for me to not heat it up. 🙂

I love chili. It has so many good for you veggies and protein packed beans in it. Nice alternative than the standard chili. But I think I’ll keep mine on the mild side. 🙂
I am all about the spicy but you can easily adjust the heat in chili to suit your tastes.
I love making a really spicy, hearty chili, but always use kidney beans. Will try with white beans next time, just to keep things exciting 🙂

I love adding quinoa to my chili. My husband doesn’t so I have to cook it and add the quinoa separately. You can’t beat the convenience of crockpot cooking. Pinned for menu planning.
Yes crockpots are the best invention! You could definitely add in the quinoa afterwards.
