Spinach & Feta Mashed Potatoes|Meatless Moday

Thanks for  joining Sarah and me for Meatless Monday today. I know it’s Halloween, but I am moving on to more important holidays today. For the next few weeks, I will be offering up some meatless sides and mains for Thanksgiving that are a little different than the traditional eats. Today, the Thanksgiving staple, is getting a flavor makeover. These Spinach and Feta Mashed Potatoes are a tasty way to up the flavor and the color of traditional mashed.

While traditional mashed potatoes usually have lots of cream and butter in them, mine are lightened up quite a bit. To quote my husband, “you can’t make mashed potatoes without some butter”. Hate to admit it, he is right I did need to use a little bit of butter however I’ve replaced the cream with skim milk. Adding in a full 8 ounces of spinach loads up this side with tons of vitamin A.

Spinach & Feta Mashed Potatoes

Because spinach is paired so often with feta cheese, I knew that they would both be delicious combined with potatoes. The feta cheese melts into the mashed potatoes and creates a creamy, rich flavor that will blow you away. I like to use baby gold potatoes however any potato variety will work. I also like to leave the skin on the potatoes to add a little texture and more vitamins.

As we are hosting Thanksgiving this year, I like to prepare a few sides in advance that I know will reheat easily. These Spinach & Feta Mashed Potatoes will hold up really well when made in advance.

Spinach Feta Mashed Potatoes Meatless Monday

Spinach & Feta Mashed Potatoes|Meatless Moday

Ingredients

  • 3 lbs of baby gold potatoes
  • 4 oz milk of choice
  • 6 oz. feta cheese
  • 3 tbl butter
  • 8 oz fresh spinach
  • 2 cloves garlic
  • salt & pepper to taste

Instructions

  1. wash potatoes and quarter them
  2. In a large stock pot, boil potatoes until tender and drain
  3. meanwhile, chop spinach and garlic cloves in a food processor set aside
  4. In food processor add: potatoes, milk and butter
  5. combine until smooth
  6. add in feta and spinach mixture, salt and pepper
  7. heat and serve
  8. Can be made in advance and reheated

    This is a fun twist on a classic side dish. I just recently bought some fresh spinach and was thinking how I could use it rather than just a boring salad. Need to get some feta next time I’m at store.

    At BBQ restaurants I often get the veggie plate and mix my creamed spinach with my mashed potatoes. This sounds fabulous!

    Oh YUM!!!!! Totally had me at “potato” LOL I leave the skins on mine as well. I make them in the morning (of Thanksgiving) and put them in a crockpot…done! I have never thought of mixing spinach in, though (I usually sneak in a bit of sour cream).

    Vegas would love me forever if I made these. I am by far the least picky eater… but I can’t stand white potatoes (I know, I know). She loves them. Add feta and I know she’d be in heaven.

    This looks really good, and I’m not normally a spinach lover!
    I literally just ate mash potatoes for dinner, but wrapped in a microwave meal box, not so appetizing as your would have been!

    So Thanksgiving is hard. A lot of the things I love are things I really only make for that holiday, and I hate to miss them. We’ve actually gotten to a point where we don’t make mashed potatoes anymore, just because it’s too much food, and we can have potatoes anytime. It’s crazy.

    Every time I’ve attempted to swap out a familiar dish with something new, it’s been met with resistance, so… back to basics we go.

      I totally get that!I could argue both ways. As a vegetarian, I try to make at least one alternative veggie dish and a ton of sides. Have not decided yet what to make this year

    I like to mix it up a bit with a few standards! We will be traveling this year for Thanksgiving this year so I am not sure what dinner will look like! Now, green mashed potatoes? Way to cool! 🙂
