Thanks for joining Sarah and me for Meatless Monday today. I couldn’t let the summer end without one more recipe featuring the delicious summer tomatoes and watermelon I’ve been enjoying. I figured why pick just one of my summer favorite foods when I can combine them? Today I’m bringing you a refreshing Spicy Summer Watermelon Gazpacho that I know you are going to love.

Spicy Summer Watermelon Gazpacho

No longer will you have to decide between watermelon feta salad and a tomato feta salad because I’ve combined them into one scrumptious bowl of goodness. Trust me there is no going back from this! I left in the traditional spiciness of gazpacho and added in the watermelon to give a touch of sweetness. The flavor combination is incredible.

Spicy Summer Watermelon Gazpacho

This spicy summer watermelon gazpacho is so simple to whip up. I literally made this batch in under 15 minutes by just using my Ninja blender. No need to cook or dirty any bowls. You throw all the fresh summer ingredients right into the Ninja and presto done in seconds. (affiliate link)

Forget smoothies because a bowl of this goodness is pure vitamins and antioxidants sure to refresh you and be the star of your Labor Day barbecue or picnic. Make it ahead, chill and serve!

Spicy Summer Watermelon Gazpacho

My spicy summer watermelon gazpacho has just a few simple ingredients: watermelon, cucumber, tomatoes, jalapeno and optional feta crumbles making it naturally vegan and gluten free. Everyone is happy! What’s even better you ask? This bowl of clean eats is low in calories and high in taste.

Spicy Summer Watermelon Gazpacho

Cooks notes:

The measurements of the tomatoes and watermelon do not have to be so exact. I like to pulse the cucumbers and tomatoes so that they retain some texture however if you prefer your gazpacho smooth, blend it up. The saltiness of the feta cheese pairs so well with the spicy and sweet watermelon and tomatoes.

Spicy Summer Watermelon Gazpacho

Ingredients

  • 6 cups of watermelon seedless
  • 2 lbs of tomatoes
  • 1 large cucumber-peeled
  • 1 jalapeno pepper-seeds removed
  • salt & pepper to taste
  • optional garnish of feta cheese

Instructions

  1. Place watermelon in the blender and puree
  2. transfer into a pitcher
  3. Add tomatoes, cucumber and jalapeno to blender and pulse
  4. Combine with watermelon juice
  5. Add salt & pepper to taste
  6. Chill and serve
  7. Garnish: feta cheese crumbles

    This looks and sounds delicious! We haven’t been having the best luck with watermelon lately so we picked up a yellow one at the market over the weekend and it was ok. Guess we need to take a trip to the store an pick up a watermelon!

    Yum! Gazpacho is so refreshing in the Summer. I’ve been experimenting with watermelon recipes this summer but I haven’t combined them with tomatoes. I’ve kind of been using them as a tomato replacement instead. I’ll have to give this a try.

    well….I’m not really a gazpacho fan, but this looks interesting. Does it have a bit of a Bloody Mary taste? That’s all I could think of as I read the ingredients LOL

      LOL oddly I don’t care for bloody mary’s. It is not like drinking tomato juice but more of a chunkier texture.

    The combination of watermelon, tomato and cucumber is so refreshing. I keep a Nutribullet on my desk at work. I could throw these ingredients into a glass container and whip one up to go with my salad at lunch! YUM!

    Wow this sounds interesting! I have only had watermelon plain except once when my frined made a salad with it and feta. I thought it would taste weird but it was delicious, so I’ll have to try this out!
