Happy Meatless Monday friends! I am loving all of the fruits and veggies that are so fresh and yummy right now. I can’t wait to see what you all bring to link up this week. One of my all time favorite summer recipes is a Spicy Gazpacho. I whipped it up in no time at all and topped it off with some homemade croutons. Yummy Yum! Take a bowl of yummy goodness and in minutes go from this:

My secret ingredient in the Gazpacho is spicy V-8 juice. I use it as the base instead of tomato juice. It brings a great, healthy flavor and the spicy variety kicks it up a notch. I like the crunch of the mini cucumbers right now but any will work.
- Soup-
- 48 oz bottle of V-8 Spicy V-8 juice
- 6 mini cucumbers or 2 large
- 1 jalapeno pepper
- 1 vidalia onion
- handful of fresh cilantro
- 1-1/2 lbs of fresh Campari tomatoes
- 2 C multi colored peppers
- salt & pepper to taste
- Croutons-
- 4 slices of day old Italian or Multigrain bread
- olive oil
- Kosher Salt
- Rosemary
- Working in batches add all ingredients to a food processor or blender
- Pulse until desired consistency is reached
- Transfer to bowl to combine
- Chill for at least 1 hour
- Croutons:
- Preheat oven to 350
- line a baking tray with foil
- Place bread slices and sprinkle with olive oil, salt & rosemary
- bake until crunchy about 10 m on each side
- crumble and sprinkle on soup before serving
I love no cook meals and this one does not disappoint! It’s vegetarian, vegan, GF, & Paleo whew I hit them all this week!

Anyway, this soup sounds so delicious! I appreciate chilled and/or no cooking required meals. It gets so hot where I love it’s nice not to heat the house up ant further.

No not at all. I didn’t add any additional salt though I am really sensitive to salt

Yes you totally can. I just like the flavor of it
I’m the weirdest person. I love salsa, I love tomato soup…. I do not like gazpacho. At. all. It is so annoying because I always think that I might!…and then no. But I love the recipe creativity all the same!
Funny as I was eating it I felt like I was eating a bowl of salsa

Oh this sounds so good! I’m wondering if my girls would go for it. There are some of the vegetables they love and some they aren’t huge fans of but blending them up they would never know. They haven’t been soup fans this year, so that was interesting, maybe I can spark the excitement with this cold soup! Oh or they might even go for it when we pull the veggies and herbs from our garden!

Gazpacho is one of my favorite summer dishes. So refreshing in the heat. I love to top it with tortilla chips and avocados too. It reminds me of the beach!

That does look good! I am kind of funny about tomatoes. I like a good pico de gallo, but there is something texturally that throws me. That being said, I have never had gazpacho. I should probably try it before I say I don’t like it.

Yummy! I’ve been doing meatless Mondays for 7 months now and I’ve lost some weight and definitely feel better. I only noticed how meat does fill you up once I started meatless Mondays.
