Thanks for joining me and Sarah for Meatless Monday today! You all know I love my breakfast foods and I have been very into sweet potatoes first thing in the morning lately. I had posted a pic of my sweet potato toast a few weeks back and had a bunch of questions on how to prepare it. It’s ridiculously easy to make and I have come up with a couple of tasty new ways to enjoy it. Today I am sharing my Savory Sweet Potato Toast 2 Ways.
Savory Sweet Potato Toast 2 Ways
I am more of a heartier breakfast food eater than a sweet food eater. I also find that breakfast can be a great opportunity to get a start on my vegetable consumption for the day. So, now that Sweet Potato Toast has kind of become a thing, I’ve been exploring new ways to enjoy this veggie.
A few tips on preparing Savory Sweet Potato Toast
Despite the fact that they are called “toast”, you cannot simply just toast them. The sweet potatoes need to be cooked in advance by roasting them in the oven. It’s very simple to do and you can prep your sweet potatoes for the whole week and then toast them when ready to eat. As I mentioned I enjoy a more savory topping to my sweet potatoes so I came up with two high protein, veggie filled ways to top them. I prepare the toppings, keep them in a separate container then top my toasts with them in the morning. That way I have a few days worth of breakfast ready to go. Easy as pie!
Savory Toppings
I wanted to create a meal with a balance of carbs and protein. A meal that would keep me going through my morning workouts. Beans are my go to vegetarian protein source and very filling. I’ve created 2 fabulous bean combinations that I know you are going to love as much as I do.
Black Bean and Spinach is one of my go to combos and a fabulous Sweet Potato Toast accompaniment. It literally takes about 5 minutes to make this. You simply add your spinach and your black beans to a food processor with a little salsa give it a pulse and voila! Ready to eat.
My second combination is a white bean and kale mix. I added a little deli mustard (strange but good) and a little curry. Gave that all a little pulse in the food processor and you are good to go. Warm it up in the microwave when you are ready to eat.

Savory Sweet Potato Toast 2 Ways
This plant based savory breakfast provides a tasty blend of protein and carbs to fuel your morning. 2 Savory options to enjoy
Ingredients
- 2 large sweet potatoes sliced into 1/2 inch "toasts"
- olive oil
- For Black bean topping:
- 1 15 oz can of black beans-rinsed
- 1-2 C fresh spinach
- 1/4 C salsa of choice
- salt & pepper to taste
- For White Bean and Kale:
- 1 15 0z can of white beans-rinsed
- Handful of kale
- 3 Tbl Deli mustard
- 1 Tbl Curry powder
- salt & pepper to taste
Instructions
- preheat oven to 400
- drizzle toasts with olive oil, salt and pepper
- bake for about 20 min until soft
- can be made in advance
- in a food processor pulse ingredients for each topping separately
- heat up in microwave when ready to eat and top on your "toast"
Notes
Potatoes can be made in advance and then "toasted" to enjoy each morning. Simply warm up your topping in the microwave and add to each slice of toast

I haven’t had sweet potato toast and I prefer sweet breakfasts (even if it’s not really in my best interest). I try to force myself to eat savory a few times a week.
I do enjoy sweet potato (asian sweet potatos) for breakfast sometimes — it seems simpler to just leave them whole & stuff them though.

I much prefer sweet over savory breakfast. I think it is because I like it going with my coffee and I am a fan of the flavored creamers that are always sweet. I think this would be a great option for a lunch though. I never made sweet potato toast!

Just yesterday, I made sweet potato toast from a recipe I found on Pinterest (wish I’d seen this first…). Anyway, the recipe said to pop the slices in the toaster set at high for about five consecutive times. It took more than five attempts and the end results were partially burned and partially under-cooked sweet potatoes. Next time I’ll roast them like my do sweet potato fries and leave off the Rosemary. We did enjoy them with our eggs and avocado, though!
