Happy Meatless Monday! Hope you all had a wonderful Thanksgiving with your friends and family. If you hosted, as I did, I hope you’ve recovered! Whew it is a lot of work to host a big meal like Thanksgiving isn’t it? I really enjoy the cooking and the setting of the tables but those dishes and the clean up not so much. As Tina is off on her honeymoon this week, she has a couple of great guest posts lined up for you all. Let’s show her some love too!
We had a great combo of vegetarian and not so vegetarian dishes for our feast. It’s always hard to estimate just how much food to make isn’t it? I had a ton of Roasted Squash and Veggies left over and I couldn’t get rid of them. I ended up whipping up a Squash and Black Bean Quesadilla and it was so good I just had to share it with you today.
Basically, you can use any left over veggies you have. I threw in squash, broccoli, peppers and black beans. Any type of corn, flour or rice based tortilla works. Of course, topping it off with a little avocado and salsa is the way I roll.
Roasted Squash & Black Bean Quesadillas

Ingredients
- 1 C Roasted Squash
- 1 C Roasted Broccoli
- 1/2 C Black Beans
- 1 C green or red peppers
- 2 Tortillas (flour, corn or rice)
- 1/2 C grated cheddar cheese
- toppings: avocado and salsa
Instructions
- Cut veggies into bite size or diced pieces
- Add to a skillet to warm up
- Spray tortillas with cooking spray and add to warm skillet to brown
- Top with Roasted Veggie mixture and beans
- Add cheese and second tortilla
- flip over
- Brown in skillet until cheese is melted
- Slice and serve with avocado & salsa garnish
Do have any creative ways to use your leftovers?

Looks delicious! REALLY looking forward to meatless Monday after all the holiday leftovers!
Me too! Time to get back on track
Squash and black beans sounds so good! Can I have that for breakfast because I don’t think I can wait until dinner?
Oh great idea! I still have some in the fridge š
Yum! I’m terrible at judging the amount of food to make too- always have tons of leftovers!
I know it’s hard isn’t it?!

That looks so good! And easy to make vegan too :-). I don’t have any leftovers because we didn’t host this year, but I might just buy the veggies to prepare it.

Now that would be fun! I am often the only one who eats my food š
This looks amazing, I could really use a change of pace. Don’t get me wrong, I love Thanksgiving and I just finished off the last of the rolls for lunch today. But after 3 days of left overs, I am totally ready for something new and quesadillas sound fab right now!
Thanks so much! I ate these 2 days in a row they are so easy to whip up.
This looks delicious! We’re huge fans of Mexican food around here, so I’ll definitely be giving this a try!
thanks I love the squash black bean combo!
Black beans are my absolute favorite!!!! Putting them in a quesadilla is an excellent idea with homemade salsa. YES!!
Thanks enjoy!!
I actually did a good job of estimating food this year. We only have a small amount of turkey left that I will freeze for future soup.
I do have a butternut squash that needs roasting though…
I am all over squash these days!
I can pretty much guarantee that my son would eat this one!! He’d never miss the meat (sorry Arby’s guy)!
Awesome I hope he likes it and you do too!
That sounds like a great idea for leftovers this sounds yummy!
Thanks so much!
Your meatless monday recipe looks awesome and FILLING!!
Thanks so much hope you give it a try
We didn’t host thanksgiving but I would say definitely use up the meat in soups (turkey noodle & ham & potato)!
Soups work too!
So easy and it looks delicious! Adding this to my dinner menu in the coming weeks. YUM.
Ah thanks!
Yum! I love anything in quesadilla form. I just made a similar recipe (black bean and spinach enchiladas) and it turned out so good! Usually when I have a lot of veggie leftovers, I throw them in a bowl with some quinoa and call it a day š
That’s such an easy way to use them up isn’t it?
I love all kinds of different quesadillas. I have a favorite black bean and sweet potato that is so good. I’ll have to try your recipe next. It looks delicious!
