Happy Meatless Monday friends! Sharing one of my favorite summer salads today which just happens to be perfect for 4th of July, Labor Day, Memorial Day or any day ending in “Y”. I love the combination of the tart blueberries with the sweet pomegranate seeds and parm cheese offset by the balsamic vinegar. It’s so easy to whip up and packs a fabulous flavor punch.
Blueberries are in season and deliciously sweet right now. Pomegranate seeds add a fun crunch and pop of flavor the salad. Not sure if you like raw kale? Try “massaging” it with the olive and salt for a few minutes to soften it up a bit. Bring along this Red, white & Blue Kale salad to your next BBQ and it’s sure to be a hit.
Easy colorful summer salad you can whip up in minutes full of good for you kale, blueberries and pomegranate seeds

Oohh!! This looks so awesome! I love, love kale. I love it whole and juiced.
The pomegranates with the blueberries and parmesan – YUM! I am so making this! So exciting that your Hawaii trip is almost here!!
I am excited for my trip too! I love kale salads as well. Thanks for linking up!
I can not get enough of the kale/blueberry combo lately. I’ve been making my own version of this every single week. I can’t wait to try this one! Have fun in Hawaii!!
They are a great combo! Thanks I am excited for my trip!
Goooood idea friend! This sounds lovely, and perfect for July 4! Love the champagne vinegar, I bet that contrasts well with the blueberries! Have a wonderful day friend!
It’s a great combo! Thanks I am excited for my trip!
I love kale salad and love when food plays to a theme, like a holiday, so this is perfect! It sounds really delicious and I think would be a great addition to a 4th of July table. Can’t wait to host the link-up next week!
I am so excited for you to host! thanks again š
I love kale salads! I’ve never been a ‘fruity’ salad person, but I think I really need to give it a try! Looks yummy! Enjoy Hawaii!
I was never a fruity salad eater myself but this one changed my mind. Hope you like it and thanks I am excited for our trip
Guess we both had Kale in mind today hehe! Hey when you had your plantar fasciitis how long did it take to resolve? Was there anything you found gave you relief? I can’t seem to knock this and the pain is excruciating.
Love the colors! I would add an additional color–yellow–by steaming the kale with a spritz of lemon juice (that is my personal favorite! Have fun in Hawaii!
That would be a good addition. Often I use a lemon infused olive oil which gives a great flavor to the veggies. Thanks excited for my trip!
Looks so refreshing! Love al those flavors together š
What a fun salad! I love kale as long as there’s a dressing massaged into it to tame the toughness/bitterness. This looks so great. Enjoy your trip!
Yes the dressing is great on this one and perfect for summer. Thanks I am excited for my trip
This looks sooooo yummy!!!!! Love the pomegranate seeds!
Thanks! I love the taste of them
What a great idea! I definitely need to bring this to a 4th of July BBQ!
Thanks! Enjoy
I adore kale salads and this one is so bright! Perfect for the 4th of July BBQ. I want to go picking blueberries soon, they are the best fresh. I like the parm cheese addition.
I loved the combo! I need Togo berry picking too
What a cool idea!! That looks really yummy too.. though I’d need to find a white alternative (can’t have dairy :() Maybe cauliflower?? Haha.
How about cucumbers?? It would still look pretty
I definitely love kale in salad, but don’t think I could do a complete kale salad. I tend to like them better when I go out to eat and order one rather then when I try to make one at home. But I love the colors of this salad and I think it’s a perfect dish to bring to a Fourth party!!
Thanks! Just pretend someone else made it for you
When I eat kale it literally feels like it gives me wings because it provides me with mad energy.
Well that’s awesome! You go girl
Another delicious recipe Deborah! I bet the added parm tastes wonderful with the sweet fruit.
It’s a great combo!
Looks delicious!! I love a good salad, kale, arugula, spinach… and berries are a bonus!!! Have fun and congratulations to your daughter!
Thanks! The berries are great in here
That salad looks amazing! And also so appropriate for the 4th of July š I’ve never tried blueberries in a salad but that sounds like a fun addition.
It was my first time and I loved it!
Have fun in Hawaii!! I am jealous you get to go there.
Thanks so much!
Interesting. I would never have thought to pair kale with fruit. I guess I have had and loved spinach salad with strawberries in it, so this probably isn’t too far of a departure from that. Definitely pretty and patriotic.
Yes absolutely! And thanks hope you enjoy š
I LOVE kale salads in the summer! What island will you be on? We’re heading off to the Big Island next week! š
how funny! WE are going to be on Maui and Oahu. Have a great time!
Such a beautiful salad! Though I must find something else white to sub for the parmesan. Maybe a little seasoned tofu? I love kale salad, so long as the kale is massaged to soften it.
Tofu or cucumbers maybe? I chopped it up really well and I think that helps the dressing soak in.
This is perfect for 4th of July! love it š
Thanks! Hope you give it a try
Such a beuatiful salad!! I love the red, white and blue theme! I’m adding lots of berries to my salad for summer.
They are a great addition aren’t they?!
This looks good–I”m not a fan of kale, so I’ll substitute spinach in there…
You certainly can do spinach or even a romaine and it would still be yummy!
I’ve never thought about pairing these flavors. But they look amazing. thanks for sharing.
It kind of happened by accident by they tasted really well together.
I have not tried kale in a salad like this- I need to put on my big girl pants and do it!! Hawaii sounds great!!!!!!
oh I think you will love it it’s really easy. Just let the dressing sit on it for a little to soften it up. The flavors go really well together.
you have the BEST recipes! this looks delicious. Have a safe trip and enjoy Hawaii!!
Thanks so much and thanks I am looking forward to it!
That looks delish – as usual! I bet it would be good with goat cheese, too. I may have to try something pretty like this for my 4th of July shindig.
Yes goat cheese would be great too! I am having trouble commenting on your site again. I will try again later. This happened last week too.?
Kale salads are pretty much my favorite!! Oh blueberries are such a awesome added treat!! Love this combo an the colors could not be more perfect
Thanks we were on the same page this week with blueberries!
Sounds like a great combination of flavors! Definitely not a combination that I’ve seen before.
Thanks! Hope you give it a try
This looks good! And, I’m honestly not a big kale fan. I can easily make this vegan too (cheese & honey make it not vegan). I’ll have to try this out for the summer season.
Oh give kale a try! Or use spinach it would work too š
I absolutely LOVE kale. I make a salad similar to this a lot and it’s amazing. I like to use honey goat cheese instead of parmesan though! Have a great time in Hawaii!
Thanks and honey goat cheese sounds good too!
Love how colorful the salad is! I don’t like kale, but I am slowly learning to eat it š
It’s really grown on me but you could also use spinach
Looks like an awesome summer dish!!!
Have so much fun in Hawaii, hope you get to see and do everything you want to there!
Thanks so much! I hope to get some great pics. You’re my inspiration for that
This is so creative / simple! Been craving blueberries 24/7!
I newly love them!
I love kale, especially when there’s Parmesan involved. Ahh I’m excited for your trip to Hawaii!!
Me too and thanks so am I!
Wow, this looks over the top amazing! I think it’s actually the dressing that’s making me want to drool the most, honey is an amazing addition!
Well thanks! The dressing is really great hope you enjoy it.
Yum! This will be perfect when blueberries are in season.
Thanks I love the flavor combinations.
I LOVE how creative you are! With just one modification, it’ll work for Canada Day too! š
Great enjoy and post a picture if you make it!
I love kale salad and this looks absolutely delicious!!
Thanks! I loved the flavor combination.
This looks delicious! I really miss cheese in my salads š I have been trying an elimination diet so I haven’t been able to eat dairy.
Ooh giving up dairy would be rough for me! Maybe use cucumber?
I am a terrible vegetarian and need to find new recipes! This is awesome!
Oh really! I’ve been a veggie since I was 12. It’s really easy once you have a base of recipes. Hope you will join us again for Meatless Monday
