      • Happy Meatless Monday everyone! Wow this has been a crazy busy week for me. How about you? Well I had the most fantastic Raisin Pumpkin Bread at the Canyon Ranch spa cafe in Las Vegas last weekend, I knew that I had to try to recreate it. I was really happy with how it came out and I hope you will be too!

      • Bursting with yummy raisins and moistened by apple sauce this Raisin Pumpkin Bread is sooooo good! I’ve really cut the sugar to make them even healthier. I love to make my breads in these little individual loaves instead of one large loaf or even muffins. They are the perfect size for a post workout snack or breakfast for my kids. Bursting with yummy raisins and moistened by apple sauce this Raisin Pumpkin Bread is sooooo good! I’ve really cut the sugar to make them even healthier. I love to make my breads in these little individual loaves instead of one large loaf or even muffins. They are the perfect size for a post workout snack or breakfast for my kids. Pumpkin Raisin Bread

Ingredients

  • 3 tbl butter or substitute
  • 1 3/4 C of flour of your choice
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1 tsp nutmeg & allspice
  • 1/2 tsp cloves
  • 1/4 cup brown sugar
  • 4 oz of unsweetened apple sauce
  • 1/4 c of oil
  • 15 oz can of pure pumpkin
  • 2 eggs
  • 1 C raisins

Instructions

  1. Preheat oven to 350
  2. In a small bowl, combine flour, salt, baking soda, baking powder, cinnamon, nutmeg, allspice & cloves
  3. Beat butter, sugar, oil and apple sauce on high until light and fluffy
  4. Add pumpkin, eggs and mix
  5. On low speed add flour mixture slowly with 2/3 c of water and mix to combine
  6. stir in raisins
  7. Spray pan with cooking spray and evenly distribute.
  8. Bake for 25-28 min

These smelled so good I had to eat one right out of the oven! They came out so fluffy and light filled with yummy raisin goodness. I love them for breakfast or post workout snack. I think they are way better than the Canyon Ranch ones although I may be a bit biased! 🙂

    I love that loaf pan! How cute! Great recipe, as usual! (Although I tend to hate raisins in baked goods…when I read this it speaks to me “chocolate chip pumpkin bread”)

      I usually don’t like raisins but this was yummy. I also make this with choc chips but I was trying to be healthier 🙂

    Pumpkin bread is my favorite, and I love how this one is sort of like cinnamon raisin bread – the perfect combination of two great holiday breads!

    That looks yummy! I”m not a fan of pumpkin, but I might give this a try. I keep trying to get my hubby to do a Meatless Monday. So far I haven’t succeeded ha. But i’ll keep trying.

    Nutmeg, allspice, raisins and pumpkin = so YUM.
    This sounds delicious and my kids would be jumping for joy. Whenever I make bread, it’s gone by end of day 🙂

    I’ve planned a combination menu. I tried to keep it simple and please everyone. Mainly that means a gf vegetarian menu for me and traditional for the family. We’ll see how it goes 🙂

    Deborah! I made these into muffins and had to use cranberries since we didn’t have raisins! It turned out wonderfully! One thing I noticed is in the instructions you have baking soda and baking powder listed when only powder is a listed ingredient. I took a guess and only used powder. Also, I wasn’t sure about the nutmeg & allspice so I did a teaspoon of each. Will definitely make these again!
