Thanks for joining Sarah and me for Meatless Monday. We are all looking for easy and healthy meals these days and that’s just what I’ve got for you today. This sweet and spicy Maple Siracha Roasted Cauliflower is the easiest and tastiest side dish. Full of flavor and so simple for a weeknight meal.
Maple Siracha Roasted Cauliflower
Cauliflower has long been one of my favorite vegetables mostly because it so versatile. Roasting it, in my opinion, is the tastiest way to enjoy it. Roasting it with my Maple Siracha glazed elevates it even more. My non veggie loving husband remarked how good it was.
How easy is this Maple Siracha Roasted Cauliflower? It has just 3 ingredients! Olive oil, maple syrup and siracha. You can easily adjust the spice level by adding in more or less of the siracha. The maple syrup caramelizes while it’s roasting to bring out a flavor that is over the top delicious.
We have already used this preparation on broccoli and asparagus which also came out delicious. I am trying to think up other veggies to try it out on. Next up carrots! Maybe even a mixture of veggies.
There is no marinating or prep work necessary for this Maple Siracha Roasted Cauliflower. Simply toss the cauliflower in the olive oil, maple syrup and siracha and pop it into the oven for about 20 minutes. A great side for fish, meat or chicken. Leftovers were fantastic on top of a salad for lunch. Vegan, gluten free, dairy free so everyone is happy!

Wow, this sounds great! We love roasted cauliflower–even with just plain oil and salt, it’s so much more flavorful than steamed cauliflower. Did you know that if you get a cauliflower with untrimmed leaves, you can roast the leaves, too?
