Spring is the season of the hard boiled eggs! Admittedly, it can be a challenge to have your eggs come out just the way you’d like. Have you ever had trouble getting the shell off without destroying the egg? Confused about just how long to cook them? Wonder no more! I am sharing my 5 easy steps to the perfect hard boiled eggs.
5 Steps To The Perfect Hard Boiled Eggs
Cover your eggs with water & add 1-2 teaspoons of baking soda
This is the secret that no one knows about! The baking soda has a chemical reaction which helps the shell come off easily and smoothly. Who knew right?
Bring to a boil
Cover and remove from heat for 13 minutes
With my thoroughly unscientific testing, I have found 13 minutes to be the perfect amount of time for extra large or jumbo eggs.
Add ice to cover and chill
It is important to allow the eggs to cool so that they are easier to peel. They should feel cold so you may need to add ice twice if it all melts.
Peel and eat
Tap eggs on counter to crack shell. Eggs will be easy to peel and smooth of shells. I like to peel them under running water.
Follow the above steps and you will have the perfect hard boiled eggs! Eggs are one of my favorite protein sources and afternoon snacks. I frequently fill them with all kinds of flavored hummus. Check out my hummus ideas here.

Materials
- one dozen eggs
- baking soda
- ice cubes
- cold water
Instructions
- add eggs to large stock pot
- cover with water
- add 1-2 tsp of baking soda
- bring to a boil
- cover and remove from heat for exactly 13 min
- drain water
- add ice
- allow to cool completely
- simply peel and enjoy

I am a huge hard boiled egg fan with just some salt and pepper. My kids LOVE deviled eggs. Not sure that is normal for kids but a great way to get some good clean protein into them!

Baking soda… huh! Interesting tip. I crack the shell then roll it around the counter under my palm and that helps to make the shell pull off easily.

Another tip that no one seems to know about is to use older eggs. If I know that I’m going to need hard boiled eggs for cooking (deviled eggs), I buy my eggs in advance to they are nearing the expiration date when I use them. The thin membrane in the egg thickens as they age, and that makes a huge difference in how easily the shell comes off!
I have heard that as well but something about the sound of old eggs does not sound appetizing 🙂
The eggs aren’t old. I use them before the expiration date. I just make sure I don’t buy eggs today, and boil them tomorrow. You do have to plan ahead, though.

So I tried this a while back in my old school black Caphalon pot . . . and it took the finish right off 🙁 I was so mad, I don’t remember if the eggs turned out or not

I like to mix the yolks with a little greek yogurt & dijon mustard for a sort-of deviled egg — when it’s warmer! 30s in the morning still means it’s not time for that yet.
I didn’t know about the baking soda. My biggest problem is the yolks always get that greenish tint — usually I just buy hard boiled eggs at the store.
I think the baking soda helps with that too and the ice. Let me know!

I’ve also heard adding vinegar to the water can help the peels come off the eggs. Peeling hard boiled eggs is my nemesis.
It can be really hard to peel them sometimes and I find this method really helps. I hate when they get all bumpy. I have not tried the vinegar tip

Baking soda!!!!! Genius!
I make a lot of eggs for Passover. One of my first years hosting, I totally botched the eggs. I didn’t boil long enough, I didn’t soak in an ice bath, and the shells stuck to the eggs. It was a hot mess. Now I boil for what seems like hours and toss them in an ice bath and it’s much better. But baking soda may just be a life saver!

Crazy I have never added baking soda to my eggs, I’ll have to try it! I know that fresh eggs are harder to peel then slightly older ones.

Oh, I have not tried baking soda. A few weeks ago I forgot to buy my usual package of pre-cooked EB eggs and was at a loss until I remember I could make my own — even without our stove. I have an old egg cooker that works with steam.

I like them plain, I like them stuffed — often just mix yolks with a little greek yogurt & sprinkle with paprika.
It’s still a bit chilly for them right now.
It is easier to buy them I guess but I wonder when they were actually made and what keeps them fresh.

Great tips! I always use baking soda when I boil my eggs for the reason you listed. Also using “old” eggs helps too. Ones that have been in the fridge for a week or two.
