Spring is the season of the hard boiled eggs! Admittedly, it can be a challenge to have your eggs come out just the way you’d like. Have you ever had trouble getting the shell off without destroying the egg? Confused about just how long to cook them? Wonder no more! I am sharing my 5 easy steps to the perfect hard boiled eggs.
5 Steps To The Perfect Hard Boiled Eggs
Cover your eggs with water & add 1-2 teaspoons of baking soda
This is the secret that no one knows about! The baking soda has a chemical reaction which helps the shell come off easily and smoothly. Who knew right?
Bring to a boil
Cover and remove from heat for 13 minutes
With my thoroughly unscientific testing, I have found 13 minutes to be the perfect amount of time for extra large or jumbo eggs.
Add ice to cover and chill
It is important to allow the eggs to cool so that they are easier to peel. They should feel cold so you may need to add ice twice if it all melts.
Peel and eat
Tap eggs on counter to crack shell. Eggs will be easy to peel and smooth of shells. I like to peel them under running water.
Follow the above steps and you will have the perfect hard boiled eggs! Eggs are one of my favorite protein sources and afternoon snacks. I frequently fill them with all kinds of flavored hummus. Check out my hummus ideas here.

Materials
- one dozen eggs
- baking soda
- ice cubes
- cold water
Instructions
- add eggs to large stock pot
- cover with water
- add 1-2 tsp of baking soda
- bring to a boil
- cover and remove from heat for exactly 13 min
- drain water
- add ice
- allow to cool completely
- simply peel and enjoy

Another tip that no one seems to know about is to use older eggs. If I know that I’m going to need hard boiled eggs for cooking (deviled eggs), I buy my eggs in advance to they are nearing the expiration date when I use them. The thin membrane in the egg thickens as they age, and that makes a huge difference in how easily the shell comes off!

The eggs aren’t old. I use them before the expiration date. I just make sure I don’t buy eggs today, and boil them tomorrow. You do have to plan ahead, though.

I like to mix the yolks with a little greek yogurt & dijon mustard for a sort-of deviled egg — when it’s warmer! 30s in the morning still means it’s not time for that yet.
I didn’t know about the baking soda. My biggest problem is the yolks always get that greenish tint — usually I just buy hard boiled eggs at the store.

It can be really hard to peel them sometimes and I find this method really helps. I hate when they get all bumpy. I have not tried the vinegar tip

I make a lot of eggs for Passover. One of my first years hosting, I totally botched the eggs. I didn’t boil long enough, I didn’t soak in an ice bath, and the shells stuck to the eggs. It was a hot mess. Now I boil for what seems like hours and toss them in an ice bath and it’s much better. But baking soda may just be a life saver!
