How To Make A Killer Vegetarian Frittata In Under 30 minutes

I love cooking with eggs and they are a great source of protein for me. One of my favorite ways to enjoy them is in a veggie filled frittata. They are so easy to make for dinner and then you have the leftovers to enjoy for breakfast or lunch the next day. Sharing my quick and easy recipe today to for a Killer Vegetarian Frittata in under 30 minutes.

How To Make A Killer Vegetarian Frittata

-First start off with a skillet that is safe for the stove and oven. Generously coat with olive oil remembering to get the sides of the pan and heat to medium heat.

-Preheat oven to 375

-Throw in 2 Cups of whatever veggies you have on hand and saute for 5 min

-Meanwhile whisk together 8 extra large eggs with a splash of milk and dash of salt and pepper

-Pour in egg mixture

-Add in 1/2 Cup of veggie sausages chopped  (or whatever protein you choose)

-Sprinkle on 3/4 Cup of shredded pepper jack, cheddar or mozzarella cheese

-Allow to begin to set for 5 minutes

-Transfer skillet to oven and bake for about 12-15 minutes

-Frittata will poof up and solidify

-Remove from oven and allow to cool for 5 minutes

-Slice, serve & enjoy!

I love to top my Veggie Frittatas with salsa and avocado. The perfect high protein low calorie breakfast, lunch or dinner in under 30 minutes. Also makes a great Mother’s Day or any day Brunch item. Frittatas are great heated up the next day too. Hope you enjoy!

    Super easy! I am going to have to whip this up. I love eggs. I can eat them for every meal. I definitely need my own chickens someday! I would put lots of spinach and kale in mine!

    There are times that I regret that I don’t eat eggs, and this is one of them. It looks SO good! I may have to experiment with my vegan egg 🙂

    Yum! I generally do whatever veggies I have on hand and cheese. I made a frittata once with roasted brussel sprouts and veggie bacon and it was so good!

    I just started making these for the girls! In mini or muffin form and it was great last night for Sam to make last night before she went to soccer and Aurora when she got home from gymnastics. I was never a fan of quiche growing up as my mom made it all the time and it had crust but after finding these realized they are just what I loved about them.
    Also a great way to use up all the leftover produce at the end of the week before going grocery shopping! We did this one week so we used up the last of the broccoli, spinach, pepper, things there wasn’t enough of for a dinner alone.

    This sounds so dang easy, even for me and that is saying a lot! I’m saving this to try, I usually have broccoli left over and since I have chickens, I always have eggs! Thanks for this!

    That frittata looks amazing! I really do miss eating eggs (I have an intolerance to them now). With all my food allergies, eggs are the one thing I miss the most!

    I don’t eat eggs, but the frittata looks delicious 😉 I do a lot of tofu scrambles, and I use similar ingredients to what you mention. I usually do kale, tomatoes & onion. For seasoning I like to toss in a bit of smoked paprika, nutritional yeast and turmeric. As a runner I’m always looking for anti-inflammatory foods, and turmeric is supposed to be good for that! If you like the flavour you might try a bit in your frittata sometime 😉
