Thanks for joining Sarah and me for Meatless Monday today! I am combining some of my favorite foods together today to bring you another delicious summer salad. This Lentil Tabouleh Salad is so simple to make and is a great make ahead lunch or side.
Traditional Tabouleh salad is packed with heart healthy Mediterranean foods like tomatoes, olive oil, lemon and Bulgar Wheat. I’ve added in lentils to bump up the nutritional value even more. Bulgar Wheat is made from dried and cracked whole wheat kernels thus making it full of protein and fiber. Add in your lentils and this meal becomes a plant based nutritional home run!
You can easily prep this Lentil Tabouleh Salad in advance with a few easy steps. Prepare your Bulgar Wheat and lentils in advance according to the package instructions. I put mine on to simmer while I showered and they were ready to go when I was.
From there you can quickly whip up this bowl of yumminess in just a few minutes. Keys to this great salad are fresh parsley and mint and a high quality olive oil. The tomatoes are so fresh right now and they are just perfect for this salad. I know you are going to love this salad. It’s hearty enough for a meal in itself but versatile enough to use as a side as well.
