Happy New Year friends and thanks for joining Sarah and me for Meatless Monday today. Now that the holidays are over, I am refocused on creating and sharing some yummy new recipes. These Lemony Tahini Soba Noodles with Spicy Crunchy Kale are an easy weeknight dinner that can to customized your family’s likes.
Lemony Tahini Soba Noodles with Spicy Crunchy Kale
This dish combines some of my favorite flavors into one delish bowl. Lemony Tahini dressing brings a flavorful yet subtle nutty taste that clings to the soba noodles. Feel free to sub with any other noodle of your choice. I prefer these Tahini Soba Noodles as a warm bowl but leftovers are great for lunch as well at room temp.Soba noodles are Japanese buckwheat that offer a nice serving of protein. These fast cooking noodles are found in the Asian food area of your regular grocery store.
Let’s talk about that spicy crispy kale. I know some are put off by kale but it’s easy to turn it into a delicious complement to salads and power bowls. I’ve taken my chopped kale and tossed it with some chili oil, salt, pepper and garlic. Next, I’ve baked it on a sheet pan for around 20 minutes until crispy. You can adjust the spice level to your tastes and use a combination of olive oil and chili oil. My spicy crispy kale can also be made in advance and stored in an air tight container. It makes a yummy snack or salad topper too.
I topped my Lemony Tahini Soba Noodles with Spicy Crispy Kale with some pan sautéed Tofu triangles. You can easily sub in any other protein as well. Don’t forget the everything bagel spice! It really brings a nice flavor that pairs just perfectly with the tahini sauce.

I need to try the kale! I love spicy snacks. I don’t know that I’ve seen chili oil. Is it in the Asian food section?

Yes you should be able to find the chile oil where the Asian foods are located. I use it all the time for stir fry dishes. We love spicy foods over here

I love the addition of the crunchy kale to everyone’s favorite noodles! Also loving the citrus tahini twist for the sauce. I think we have everything to make this, minus tofu for the top which looks so good right now. They were out of the sprouted one I wanted to buy when I tried to make a couple quick stops to restock the fridge yesterday.
