Happy Meatless Monday veggie loving friends! Sarah and I are glad to have you join us. Today I am all about the healthy Hummus snacks. I’ve loved traditional hummus for years but decided it was time to up my game a little with some new twists. Today I’m giving you 3 different recipes to Hummus Like You’ve Never Hummused Before! (Yup I just made up that word)
You may have noticed that I am also all about eggs and egg recipes lately. One of my favorite ways to eat hummus is to stuff it into hard boiled eggs. Of course it’s important to cook your eggs properly so they don’t fall apart. Here’s your guide to cooking the perfect hard boiled eggs.
Carrot Siracha Hummus
I wasn’t sure how this one was going to come out but-super yummy! I’ve used roasted baby carrots and a squirt of siracha to really create a satisfying, delicious snack. If you like spicy eggs, you will love this Carrot Siracha Hummus piped into hard boiled eggs. Of course, this hummus is fabulous with crudite or chips too. I loved the color!

Roasted Carrot Siracha Hummus, Roasted Beet & Goat cheese hummus & Avocado Hummus
Make your own healthy and delish hummus 3 ways
Ingredients
For the Carrot siracha hummus:
- 1 15 oz can of chick peas-drained and rinsed
- 1 lb of baby carrots
- 1/4 C Tahini
- 1/3 C water
- juice of 1/2 lemon
- 3 Tbl Olive Oil
- 2-4 Tbl of siracha sauce depending on taste
- pepper, salt, garlic powder
For the Roasted Beet & Goat Cheese Hummus
- 1 lb of fresh beets
- 1 15 oz can of chick peas-rinsed and drained
- 1/4 C of Tahini
- 1/3 C water
- juice of 1/2 lemon or lime
- 2 garlic cloves
- 2 oz. of goat cheese
- salt, pepper to taste
Avocado Hummus:
- 2 ripe avocados
- 1 15 oz can of chick peas-drained and rinsed
- juice of 1 lime
- sprinkle of chili flakes, salt & pepper
- 1/3 cup water
- 2 tbl olive oil
Instructions
For Carrot Siracha Hummus:
- Preheat oven to 400 degrees
- Arrange baby carrots on baking sheet with a coat of olive oil, salt & pepper
- Roast about 20 min until soft
- Add carrots and all the other ingredients into a food processor and pulse until smooth
- Chill before serving
- Serve with veggies or pipe into hard boiled eggs
For Roasted Beet & Goat Cheese Hummus:
- Preheat oven to 400 degrees
- Wrap beets in foil and roast for 50-60 min
- Add beets and rest of ingredients into food processor and pulse until smooth
- Top with goat cheese or add goat cheese into the hummus itself
- Chill before serving
For Avocado Hummus:
- Combine all ingredients in a food processor and pulse until smooth
- Chill before serving
Roasted Beet & Goat Cheese Hummus
I have always loved the taste of roasted beets paired with goat cheese so I figured, why not take that combo and create a tasty Roasted Beet hummus? I prepared this dip and topped it off with the goat cheese however, I think you could just as easily add the goat cheese into the hummus. I loved how this came out and it’s perfectly paired with the hard boiled eggs.
Avocado Hummus
If you like guacamole, this is the bomb! This Avocado hummus does not have Tahini and you won’t miss it at all. Loaded with healthy fat and vitamins from the avocado combined with the chick peas this is the perfect snack! I also think it would be amazing as a spread on a sandwich. I was worried it might turn brown but adding in the lime juice seems to take care of that.

Yum, these all look delicious! I love how colorful they are. For the eggs, did you mash up with yolk with the hummus before piping it in or just leave the yolk out? Thanks for sharing the idea 🙂

The roasted carrot and siracha sounds very interesting. My husband and daughter are big siracha eaters. I think they would like that one. The avocado is more my speed.

LOVE hummus and the carrot sriracha one is screaming my name! Cannot wait to try it! Beet hummus has always been a fav because I love beets and the color is so pretty. Hummus is one of the best recipes ever. We went to a mediterranean restaurant for the first time yesterday and they had 9 different hummus varieties. I wanted to try them all.

I love carrot hummus – I eat it every time I go to Rustico – so I’ll definitely be trying that recipe. Yum. (Beets are the only veggie I don’t like, so won’t be trying that one LOL)

I recently picked up beet hummus at trader joes and it is delicious. I would love to try these variations, especially the beet and goat cheese because goat cheese makes everything better!
