Welcome to Meatless Monday! I am so excited to welcome my new co host Sarah of A Whisk and Two Wands. You are all going to love Sarah’s very creative and delicious recipes. Please check out our new badge and add it to your posts to link up with us. We are going to rock 2016 with our veggie love this year!
The other day after a very cold run day, I was craving noodle soup. Ok I was really craving it the whole time I was running! A number of times I’ve gone to Pho restaurants hoping to indulge on some yummy soup only to find that they did not have a vegetarian broth available. Crazy huh?! I rummaged through my fridge and was able to assemble a hearty, healthy “Faux Pho” in under 30 minutes. I promise you it will not disappoint.
I prepped all of my veggies first and threw everything into one pot to simmer while I jumped in the shower. I used Soba noodles, however any noodle of your choice can work. The Soba noodles only needed to cook for 4 minutes so I made them separately and added them in right before serving. If you are not a soy eater, you can certainly leave that out. 30 minutes later my Faux Pho soup was ready and was everything I hoped for. I could honestly eat this everyday this winter.

Ingredients
- 1 C shredded carrots
- 1 bunch of asparagus
- 8 oz baby bella mushrooms
- 4 cups of spinach
- 1 head of bok choy
- 1 Cup broccoli
- 1/4 cup chopped scallions
- 1 12 oz package of firm tofu-cubed
- 64 oz of vegetable broth low sodium
- 6 oz soba noodles
- 1 Tbl ginger chopped
- pepper & siracha to taste
Instructions
- cook noodles according to package, rinse and set aside
- Chop all veggies into bite size pieces
- In a large stock pot add broth and all veggies and tofu
- add ginger, pepper and siracha
- Bring to a boil and simmer for 30 min
- add in noodles and serve

I am all about the soups this winter! What’s your favorite?

That looks really good! Now I’ll be craving it.
Thanks that was kind of the idea 🙂
I haven’t had pho in forever. That really must change!
Ah it’s so hard to find vegetarian Pho so now I will be eating it all the time
Pho is definitely on my recipe bucket list!
It’s so easy to make! Hope you enjoy
Love Pho so much! I will definitely try this version when I get home!
Thanks so much! Hope you are having fun and relaxing
What a great idea for a recipe! I really love this!! We have a new Pho place– I hope they have a vegetarian broth!
Surprisingly it’s really hard to find in restaurants!
Yay, welcome to Sarah! This soup looks delicious- I’d definitely make it (sans tofu since I’m allergic) going to pin to try for later! 🙂
It would be great without the tofu too thanks!
Yummm, I love a good Pho! Never thought to make it myself though! Thanks!
It’s so easy -less than 30 min and I was eating it
Looks delicious and perfect for a day like today when we’re below zero. So much for our mild winter.
Oh wow it’s not that cold here yet!
Yum!!! But what makes it faux?
Typically Pho is made with a beef broth and has beef or chicken in it with a heavier noodle. I thought it sounded cute
Looks so delicious! We had Pho last night, it’s like a warm hug. Usually we do it this way doing it quick but yesterday A helped me in prep all the veggies and we made homemade broth that simmered all day. Then she helped me prep all the veggies for adding in. I just love how healthy and comforting it is and that we can all have it our way adding our veggies and toppings and we are all happy!
Definitely a Meatless Monday must make this winter, next time I’m adding asparagus, sounds delicious and not sure why I never thought to add it.
Happy Meatless Monday!
The asparagus was great in there and I loved the bok choy. It is like a big hug 🙂
Oh yum, this looks fab! I can never get the texture down for tofu..do you always use the firm?
I do use the extra firm but you don’t have to add it if you don’t like the texture. My kids like the silkier tofu found in miso
Just the name makes me smile. I can’t wait to try some Faux Pho.
I was hoping you would like it!
My kids would love this, especially my daughter, who is vegetarian. I need to try this recipe!
Thanks hope she likes it!
Yum!!!! That pho recipe sounds great! I definitely need to join the link up next week! You know how I love Meatless recipes!
Yes definitely we’d love to have you!
This looks great! I’ve been really into Asian food lately so this will be a must try tof me!
Thanks hope you enjoy!
Yum! I live on soup in the winter and this sounds right up my alley (and I can even toss some beef in my husband’s portion and have it be dinner one night.)
You absolutely can! Hope he likes it too
Yum yum yum!! This is so perfect for the cold weather we’re finally getting.
It did kind of just get really freezing!
Yum! This looks really great. I was looking for warm meal recipes to serve my fam this week and this just made the menu! Thanks 🙂
Well thanks so much I hope they enjoy it!
I love your recipes! You always do such a good job with them.
thanks so much friend!
This could not have come at a better time! My husband and I have given up meat for the next three weeks and I have been looking for some fantastic recipes! Can’t wait to try this one!
Well that’s great to hear! Let me know how you like it and how that no meat challenge is working for you both. Have a great week!
This looks amazing, and easy enough that I think I could even pull it off! Soup season is here!
You can absolutely pull it off! Hope you enjoy. It did get really cold this week
Yes! Soups and chilies too. Since I am so lazy with cutting up lots of veggies, when I do make soup, I make enough to serve a small army! Yours here looks delicious! Happy Meatless Monday!
Thanks! I like to make a big pot too so much easier
Oh my gosh! Love all the veggies in this soup! It sounds like it would be super filling!
It was so good!
Looks delicious!! Makes me want some pho for lunch! 🙂
Thanks! It was so easy too
This looks fabulous! I am on a soup thing right now, twice a week I am having soups, (mostly because I am lazy and quick is nice:) But this looks so much better than a Campbell’s soup or a Chilli from a can! Definitely going to try this on Thursday! Thanks!!!
Ha yes way better than canned soup for sure!!
Minus the mushrooms, this dish looks delicious. I’m just not a mushroom fan, but I’m guessing by taking them out that it wouldn’t change the taste of it too much.
You can certainly interchange the veggies! It super easy too
I Love regular Pho so I don’t know how I feel about this! LOL! But it does look VERY delicious Deb!
Thanks I don’t even think you will miss the meat !
I want to lick my screen!
lol thanks!
This looks beautiful Deborah! And I love your play on words 🙂
Ah thanks friend I am all about the soup lately!
OMG I love soup!
Lentil, baked potato, tortellini spinach, pasta fagioli, tomato (with grilled cheese, obviously), split pea, vegetable, broccoli cheese. I love them all!
Wow you do love soup!
Oh, that looks good, and I do need to eat more veggies 🙂
Thanks it was so easy to make as well!
Another Meatless Monday that makes me want to try it sometime 😉 What do I need to do to linkup? Does it have to be a dinner meal? My pancakes are meatless 😉
We’d love for you to join us! Of course you can add your pancakes. All you need to do is link back to my blog and add our badge. It’s open all week join us!
Two awesome hosts, two awesome people!! So exciting that Sarah will be hosting with you!
This looks like a nice way to warm up on a cold day 🙂 YUM.
Thanks Jess! Yes Sarah will be a great addition to MM
Love the new badge!! This recipe looks really awesome. Perfect for a cold winter day. Love the huge array of veggies!! I will give this a try 🙂
Thanks I am really excited to have Sarah as my new co host!
I’ve never tried Pho. Looks like I need to.
Oh I think so! 🙂
Pho is all the rage these days. I need to get on board. I am soo happy you posted a meatless version!
Thanks so much hope you enjoy
Thanks for posting, this looks amazing. I often make ramen and throw some tofu in at the end, but now I think I can’t go back to that. And thanks on behalf of vegetarians everywhere for making meatless monday a thing.
Oh you are so sweet! I am glad you are enjoying our Meatless Monday linkups!
This looks fantastic! Now I will be thinking about soup during my entire yoga class! Love soup in the winter! I love to use leftovers and make a soup out of it- then it is something new!
It is! I am all about the soups these days as it just got really cold
I’ve never had pho but this looks great. So if this is vegetarin what does normal pho contain? I literally have no clue what it is but just have heard many people rave about pho lol
Most Pho is a meat based broth often with pork in it. I cannot find veg Pho near me at all so I figured why not make my own!
Sub in spaghetti squash and BAM – a recipe I can get my mouth on 😉
Ooh great idea!
Oh I love PHO! You read my mind, I have been craving this. Thanks for reminding me, I might just make this tonight! Thank you
Thanks! It is really easy to whip up hope you enjoy
