    • The other day after a very cold run day, I was craving noodle soup. Ok I was really craving it the whole time I was running! A number of times I’ve gone to Pho restaurants hoping to indulge on some yummy soup only to find that they did not have a vegetarian broth available. Crazy huh?! I rummaged through my fridge and was able to assemble a hearty, healthy “Faux Pho” in under 30 minutes. I promise you it will not disappoint.
    • I prepped all of my veggies first and threw everything into one pot to simmer while I  jumped in the shower. I used Soba noodles, however any noodle of your choice can work. The Soba noodles only needed to cook for 4 minutes so I made them separately and added them in right before serving. If you are not a soy eater, you can certainly leave that out. 30 minutes later my Faux Pho soup was ready and was everything I hoped for. I could honestly eat this everyday this winter.

Faux Pho-Meatless Monday

Ingredients

  • 1 C shredded carrots
  • 1 bunch of asparagus
  • 8 oz baby bella mushrooms
  • 4 cups of spinach
  • 1 head of bok choy
  • 1 Cup broccoli
  • 1/4 cup chopped scallions
  • 1 12 oz package of firm tofu-cubed
  • 64 oz of vegetable broth low sodium
  • 6 oz soba noodles
  • 1 Tbl ginger chopped
  • pepper & siracha to taste

Instructions

  1. cook noodles according to package, rinse and set aside
  2. Chop all veggies into bite size pieces
  3. In a large stock pot add broth and all veggies and tofu
  4. add ginger, pepper and siracha
  5. Bring to a boil and simmer for 30 min
  6. add in noodles and serve

      Typically Pho is made with a beef broth and has beef or chicken in it with a heavier noodle. I thought it sounded cute

    Looks so delicious! We had Pho last night, it’s like a warm hug. Usually we do it this way doing it quick but yesterday A helped me in prep all the veggies and we made homemade broth that simmered all day. Then she helped me prep all the veggies for adding in. I just love how healthy and comforting it is and that we can all have it our way adding our veggies and toppings and we are all happy!
    Definitely a Meatless Monday must make this winter, next time I’m adding asparagus, sounds delicious and not sure why I never thought to add it.

    Oh yum, this looks fab! I can never get the texture down for tofu..do you always use the firm?

      I do use the extra firm but you don’t have to add it if you don’t like the texture. My kids like the silkier tofu found in miso

    This looks fabulous! I am on a soup thing right now, twice a week I am having soups, (mostly because I am lazy and quick is nice:) But this looks so much better than a Campbell’s soup or a Chilli from a can! Definitely going to try this on Thursday! Thanks!!!

    Minus the mushrooms, this dish looks delicious. I’m just not a mushroom fan, but I’m guessing by taking them out that it wouldn’t change the taste of it too much.

    OMG I love soup!

    Lentil, baked potato, tortellini spinach, pasta fagioli, tomato (with grilled cheese, obviously), split pea, vegetable, broccoli cheese. I love them all!

    I’ve never had pho but this looks great. So if this is vegetarin what does normal pho contain? I literally have no clue what it is but just have heard many people rave about pho lol

      Most Pho is a meat based broth often with pork in it. I cannot find veg Pho near me at all so I figured why not make my own!
