Thanks for joining Sarah and me for Meatless Monday today. Wow this month totally flew by! I’ve been sticking to my no pumpkin rule until October so I am almost home free. I am just loving all of the fall produce and working on creating seasonal dishes. There is so much deliciousness to choose from right now. Today, I’m sharing one of my go autumn faves. This Fall Superfood salad is jam packed with healthy goodness.

Fall Superfood Salad

I’ve combined some of the best “superfoods” all in one place. We have kale, broccoli, carrots, brussels sprouts, apples, lemon, and walnuts just for starters. Then I’ve added in some hearty farro and whipped that all up with a tasty poppy seed dressing. I have shredded the kale and the rest of the greens so you might even be able to trick someone into eating it.

Fall Superfood Salad

All of this healthy goodness is combined into a delicious Fall superfood salad. You know I am all about make ahead meals and this salad is so easy to prepare and eat for days. If you leave the dressing and the seeds and nuts on the side, this salad will stay perfect for days.

Fall superfood salad

In case you are not familiar, Farro is an Italian, wheat based grain similar in texture to rice. Farro is packed with plant based protein and fiber and one of my favorite fall grains. If you are looking for a gluten free option, I would sub in quinoa or brown rice for this recipe. Farro is usually available at regular grocers or you can find it on Amazon. (affiliate link)

Cook’s notes:

I’ve shredded the kale, broccoli, carrots and brussels in my food processor however, you could purchase pre shredded options for many of these to make the salad even easier to prepare.

I like to squirt some lemon juice onto the apples to keep them from turning brown.

Ingredients

  • For salad:
  • 2 lbs of fresh Kale
  • 12 oz bag Brussels sprouts
  • 1 head of broccoli
  • 4 large carrots
  • 2 apples of choice
  • 1 C farro (cooked according to package & cooled)
  • 1 C chopped walnuts
  • 3/4 C pumpkin seeds -salted
  • salt & pepper to taste
  • juice from 1/2 lemon
  • For dressing:
  • 1 Tbsp Dijon mustard
  • 2 Tbsp honey
  • 1/2 C Olive Oil
  • 2 Tbsp poppy seeds
  • 1/4 C apple cider vinegar

Instructions

  1. For dressing:
  2. Whisk all ingredients together and chill
  3. For Salad:
  4. In a food processor shred kale, broccoli, carrots and Brussels
  5. Add to large bowl and combine
  6. Stir in cooked farro
  7. Add chopped apples
  8. Sprinkle with walnuts and pumpkin seeds
  9. Add dressing when ready to serve

    This has all my favorites! I’ve made this before but never with the Brussels Sprouts. Why didn’t I? YUM!

    I couldn’t hold off on pumpkin till October, I went pumpkin crazy already but I respect that you did lol!

    I love anything with apples and walnuts for fall and this looks amazing. I’m in half marathon training and I’m starving ALL THE TIME. Trying to find great food that I can eat a lot of! Definitely trying.

    This salad is like all my favorites! I just haven’t thought of putting them all together! I usually make giant salads when I’m trying to clean out the fridge or pantry. Oh and I love Farro, such a different taste than rice or quinoa and perfect to top on leafy greens

    There’s a lot of stuff mixed into this! Love the colors! I’m not much of a kale or Brussels sprouts person, though, do the other foods cut (or hide) some of the bitterness?

      Yes definitely! I love the tartness of the apples and the crunch of the nuts. I also like to add a little blue cheese to mine.

    This looks great!
    I really need more green’s in my diet, I haven’t been having as much salad as I should since I’ve moved.
    Question, because I’m now cooking for one. I am not sure if you know, but would a salad like this keep in the fridge for a few days, like say I made it on a Monday and planned to eat a little each day or would it get mushy? Have you tried it a day after, or is this one that is best for same day? I’m only asking because this looks amazing and I am seriously considering visiting the grocer tomorrow and buying the stuff for it.

      So I did make it for myself and I have been eating it for a few days. If you do that I would keep the dressing on the side and also keep the nuts on the side. You could just sprinkle them on when you are ready to eat it. I would say it should be good for 3 days at least. Hope you enjoy

    Holy cow. This really is a Fall superfood salad! Every single salad ingredients is prime right now! Love it! Does the dressing do a good job at covering up the bitter taste of the kale and maybe the brussel sprouts too?

    mmm, never heard of Farro but this looks and sounds really good! I use pumpkin seeds in my salads too! gives it a nice salty crunch.
