All of us at home right now and relying on creating meals using what we have on hand, I am planning to offer easy and healthy meals using what I have in my pantry and freezer too. This Buffalo Chick Peas and Blue Cheese Wrap came about just that way. My photos are not up to my usual standards this week just did not have lots of greens. Nonetheless, it’s still delicious!
Easy Buffalo Chick Peas and Blue Cheese Wrap
This quick lunch idea is basically just 5 ingredients. Chick peas, buffalo wing sauce, blue cheese, hummus and a tortilla. These are all ingredients I usually have stocked. If you don’t have blue cheese, want to make this vegan, or just don’t care for it, that’s okay. It can easily be omitted.
I tossed the chick peas with 2 tablespoons of buffalo sauce and sautéed then for about 5 min on a medium high heat. While they were cooking, I spread some hummus on my tortilla wrap. Next, I sprinkled on some blue cheese. I added a handful of fresh spinach but any lettuce or green will do just fine. I added half of warmed chickpeas and wrapped it up. Yummy!
The warm and tasty Buffalo Chick Peas and Blue Cheese Wrap made a quick and comforting lunch. Use the other half of the cooked chick peas for a second wrap, as a topping for a salad, or a high protein snack. I am also working hard not waste food and use what I have in the house.

Still have a strong love for blue cheese I picked up when I was pregnant with Baby G. Adding these to the list to makes, I have everything except the chickpeas but have a feeling they’ll be restocked soon. This is a great way to enjoy them.
