Thanks for joining me and Sarah today for Meatless Monday. I am just back from a whirlwind weekend out in Boulder where I was hanging with all my fellow Skirt Sports Ambassadors. Can’t wait to tell you all about my weekend later this week. Today I have Easy Breakfast Pizza 2 Ways to share with you all. Sometimes you just want to have pizza for breakfast!

Breakfast pizza 2 ways|Meatless Monday

I usually have eggs of some sort for breakfast most days of the week. Last week, I was craving something a little different and threw together these 2 easy Breakfast Pizzas and they were delicious. I used a very thin flat bread as my pizza base however, you could also use a tortilla or a pita and it would work just as well.

The veggie combos are endless! For my Spinach Tomato breakfast pizza I used a tomato sauce base, spinach, vegetarian sausage, eggs and mozzarella cheese. The trick with the eggs is to scramble them until about halfway done then add them to the pizza to finish off in the oven.

My Southwestern Breakfast Pizza was equally yummy with a salsa base, black beans, eggs, avocado and cheddar cheese. I love eggs with salsa and avocado and this was so satisfying with just the right amount of protein and carbs.

Breakfast pizza 2 ways|Meatless Monday

Ingredients

  • Spinach Tomato Pizza:
  • 1 flat bread crust (or tortilla, pita)
  • 1/4 C tomato sauce
  • 1/2 C fresh spinach
  • 1 egg-scrambled
  • 1/4 C shredded Mozzarella
  • 1 vegetarian sausage patty-diced
  • Southwestern Breakfast Pizza:
  • 1 flat bread
  • 1/2 C salsa
  • 1/4 C black beans
  • 1 egg scrambled
  • 1/4 C shredded cheddar cheese
  • 1/2 avocado-sliced

Instructions

  1. Preheat oven to 375
  2. cook plain flat bread for 5 min
  3. meanwhile lightly scramble egg
  4. Remove from oven and add toppings and scrambled egg
  5. Bake for 5-10 minutes until cheese is bubbly
  6. slice and enjoy!

    Apparently it is breakfast pizza day, and I am ok with that! The place that we went for lunch on Saturday had an amazing looking breakfast pizza–I’m definitely going to go back for that!

    Or if you’re my husband breakfast pizza for dinner! He makes a great breakfast pizza with that he cracks eggs on top of. Funny thing is I never thought to make that for breakfast or have pizza for breakfast other than pancake fruit pizzas or leftover cold pizza. Great idea, I’ll have to see if I can get the girls to eat this this summer.

    I’m so sad that I missed out on going to Colorado. I can’t wait to read all about it (and be even more jealous!).

    Both these pizzas look so good! Even though I’m vegan sometimes I crave eggs (which is why I was so excited to discover the Vegan Egg!). I think I could probably work something out. Pizza is the perfect breakfast food! 🙂

    I used to do breakfast pizzas all the time! It’s been too long. I love the flat bread idea. I usually just did tortillas or my cauliflower crust.

    Pizza for breakfast? Yes, please! My family used to make a super unhealthy breakfast pizza, which I LOVED as a kid. But I’d happily gobble up this version morning, noon or night! #eggsallday, amiright?
