Thanks for joining Sarah and me for Meatless Monday today.I had the biggest granola craving this week! While perusing my pantry and finding no granola to speak of, I gathered up a few unique ingredients and came up with my own. This Chocolate Covered Cherry Espresso Granola checks all of the boxes.
Chocolate Covered Cherry Espresso Granola
Yes, there are a ton of brands of granola on the supermarket shelves. So, why should you make your own granola? A few reasons. There is often so much sugar added to prepackaged granola that it’s pretty much akin to eating a candy bar. Second, sodium levels can also be quite high. Lastly, it’s just so easy to make your own!
My Chocolate Covered Cherry Espresso granola literally came together in my mixing bowl in under 10 minutes. I had all of the ingredients right in my pantry so prep was a breeze. It baked in the oven while I hopped into the shower. So easy!
Cherry and chocolate always seem like a tasty combination to me. I used unsweetened dried cherries and some mini chocolate chips. Then, I saw that jar of espresso on the shelf and figured, hey “that will wake me up in the morning”. Honestly, there is not enough in here to get a caffeine rush from but the coffee flavor is always a nice pairing with chocolate and cherry.
Hemp hearts and protein powder give an added plant based protein boost and walnuts offer up a nice omega-3 boost. What’s not to love?
After you’ve baked your savory and sweet pan of deliciousness, allow your chocolate covered cherry espresso granola to cool. However, make sure you at least sneak a few tastes while it’s all warm because yum. Store it in an airtight container for up to a week. It’s gluten free as well.
I enjoy eating it mixed in with yogurt and fruit or just by the handful. Add more or less chocolate chips to your liking, Easy and oh so good hope try it out. Thanks for stopping by!

This healthy Chocolate Covered Cherry Espresso Granola will have you jumping out of bed Preheat oven to 300 degrees Line a baking sheet with with parchment paper In a large bowl combine: oats, nuts and seeds In a small bowl mix: cinnamon, nutmeg, cloves, salt, espresso, protein powder, syrup, olive oil and warm water Combine this mixture with the oat mixture Spread onto the baking sheet and press down with hands or spatula into a think layer Bake 30-40 minutes Remove pan from oven and sprinkle on dried cherries and chocolate chips Allow to completely cool and then break up into pieces store in air tight containerChocolate Covered Cherry Espresso Granola
