Thanks for joining Sarah and me for Meatless Monday today. Now that the weather is warming up, I am ready to get back on the smoothie bowl band wagon. I have to admit I got a little bored with my usual banana strawberry smoothie bowls and I was looking for a new combination to try. Boy did I find a great one! You all are going to love this Chocolate Covered Cherry Acai Bowl.

Chocolate Covered Cherry Acai Bowls

I fell in love with Acai bowls when in Hawaii 2 summers ago. Since then, I’ve been playing around with different fruit combinations. Who doesn’t love a chocolate covered cherry right? So, I took some of my favorite flavors (chocolate and cherries) and whipped them up into an Acai bowl. But wait I did not stop there! I topped this bowl of deliciousness with granola, chocolate chips and chopped medjool dates.

Why use Medjool dates? Dates are a naturally sweet fruit and thus perfect to add into any recipe to bump up the flavor. Any recipes that normally call for bananas or raisins can be made with dates too. Did I mention that medjool dates are full of potassium too? In fact, Medjool dates have 50% more potassium by weight than bananas do. Yup the perfect food for all you fitness enthusiasts to refuel and recharge with.

The best part about this Acai bowl is that you can whip it up in 5 minutes flat. I am excited to play around with some new smoothie bowl combinations this summer and see what I can come up with. This week, I am definitely loving the Chocolate Covered Cherry Acai Bowl flavors.

Chocolate Covered Cherry Acai Bowls

Ingredients

  • 1 package of unsweetened frozen Acai (I used Sambazon)
  • 1/2 - 3/4 C Cherry or Pom cherry juice (unsweetened)
  • 1 C of frozen cherries
  • 2 pitted medjool dates
  • toppings:
  • 1/2 C medjool dates-chopped
  • 1/2 C granola
  • 2 Tbl mini choc chips

Instructions

  1. Add dates, cherries, cherry juice and acai to a blender and pulse until desired consistency
  2. Top with your favorite toppings and enjoy

    I have been using cherry juice in smoothies lately and loving it. I need to try adding dates. And Ive actually never tried acai but really want to!

    This is like a dream bowl for me. I’m obsessed with anything cherry, and I still haven’t gotten into the acai craze but this really makes me want to!

    I tried that Pom juice when I was sick the other month and I thought it was awful! Maybe it tastes better when mixed with some other ingredients. I want to like it because I heard it is good for you.

    Chocolate, cherries and granola?? Yuuuuuumy!! I can’t wait to try this! My go to breakfast lately has been plain/vanilla yogurt mixed with blueberries, strawberries and granola! Need to change it up!

    All healthy and tasty ingredients. This is a good idea to use frozen cherries, even here fresh cherries are available for a very short time.

    Acai has so many health benefits too, I’ve never had it in anything but drinks,
