Chipotle Slaw with Siracha Broccoli

    • Happy Memorial Day everyone! This weekend just screams salads and BBQ’s doesn’t it? I am heading over to my parents house later and I am taking this along. By request from Mary @ For The Health Of It, I came up with a kicked up, spicy Chipotle Cole Slaw with Siracha broccoli. Oh yeah I said Siracha broccoli! It is great on it’s own or topped with your favorite protein. It’s definitely spicy just the way I like it! You can tone it down by reducing the the amount of Chipotle slightly.

I used a combo on traditional cole slaw (cabbage), broccoli slaw and shredded brussels sprouts which are all available ready to use at most grocery stores. That makes this slaw super easy to throw together. The Siracha broccoli really bumps it up a notch and the jicama gives it a nice little crunch too. Topped off with a sunflower & pumpkin seed sprinkle it’s full of flavor and texture. Hope you enjoy!

Chipotle Cole Slaw with Siracha Broccoli
Recipe Type: Salad or side
Author: Confessions of A Mother Runner
Prep time: 20 mins
Cook time: 15 mins
Total time: 35 mins
Serves: 8-10
Spicy twist on an average cole slaw
Ingredients
  • 1 bag of each: cabbage slaw, broccoli slaw, shredded Brussels sprouts
  • 6 oz cubed jicama
  • 4 oz sprouted beans (combo of lentil, pea sprouts or adzuki beans) -optional
  • 1/2 c sunflower seeds
  • 1/2 c pumpkin seeds
  • 1 head of broccoli cut into bite size pieces
  • 2 tbl siracha
  • Dressing:
  • 1/2 C Apple Cider Vinegar
  • 1/2 C Olive Oil
  • 3-4 oz of Chipotle in Adobe sauce
  • juice from 1/2 lime
  • salt to taste
Instructions
  1. Add slaw mix to large mixing bowl
  2. Toss broccoli with siracha and place on foil lined baking sheet
  3. Add pumpkin & sunflower seeds and roast together for 15 min on 350
  4. Meanwhile add jicama & sprouted beans to bowl
  5. Prepare dressing in blender or food processor:
  6. Puree vinegar, oil, chipotle and lime until smooth
  7. Add broccoli and seed mixture to bowl
  8. Toss with dressing & chill before serving

 The Chipotle dressing also makes a great marinade for veggies or your favorite protein.

    I think even my broccoli hating husband would love this. It sounds so good. My holiday will be pretty quiet but I might throw together a few fun foods to celebrate.

      Thanks! You can leave out the broccoli and it would still be good. Sorry for your loss of your friend. It’s never easy to deal with such an unexpected loss. I hope writing about her and honoring her gives you some peace. I am thinking of you.

    Oh yummy!! I want to try making this! We don’t have a Chipotle here 🙁 But I did find one when I was in Seattle a few weeks ago and oh my goodness, so yummy!

      ha I cook with chipotle peppers all the time. You can find them canned in the mexican food section. They are a great addition to everything!

      It does! I eat it all summer long. Just make a batch over the weekend and eat it for lunch all week. Super easy!

    We ran a 5K for Memorial Day and then grilled out with my mom. I love pretty much everything to do with BBQ, so it’s hard to name a favorite side.

    Yum! So creative! I love spicy, so this is right up my alley! the sunflower and pumpkin seeds sound awesome with it!
    We spent the day at home, eating, laughing and relaxing. It was perfect.
    Favorite side? Corn on the cob, fruit and a healthy potato salad with zero mayo.
