Apple Zucchini Muffins – Seasonal Eats

Thanks for joining Sarah and me for Meatless Monday today. I wrote last week about how much I love all of the fall fruits and veggies so, for the next few weeks I will be sharing some great seasonal eats with you all. Pumpkin will have it’s chance too but that’s what October is for right? Today I am sharing my healthy and delicious Apple Zucchini Muffins.

Apples are so sweet and juicy right now I just can’t get enough of them. My favorites are Honey Crisp but you can use any variety you like in this recipe. The zucchini keeps the muffins super moist and delicious. Adding veggies to baked goods is a great way to sneak some more of them into your diet and your kids’ too. My non vegetable eating son, snarfed it right down without even realizing that zucchini was in there. Let’s not tell him!

These apple zucchini muffins are super easy to make by quickly grating them with a food processor. You don’t need a fancy one in fact, I just replaced an old broken one with this reasonably priced one. (Affiliate link)

I mentioned trying to do a little more meal prep now that school is back in. These muffins are easily individually wrapped and frozen for later use. I take a frozen one out and leave it in my car while I run and when I come back it’s defrosted and ready to eat.

Apple zucchini muffins

My apple zucchini muffins are sweetened with honey and have no added white or brown sugar. I’ve packed them with heart healthy walnuts and hemp hearts to boost their nutritional value. You can easily sub gluten free flour if that fits your dietary needs.

Apple Zucchini Muffins

Ingredients

  • 2 cups of grated apples
  • 1/2 cups of grated zucchini
  • 1/4 cup oil
  • 1/2 cup pure honey
  • 2 large eggs
  • 1 1/2 tsp vanilla
  • 1 1/2 Cups of flour of your choice
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp all spice
  • 1/2 cup chopped walnuts
  • 1/4 c hemp hearts

Instructions

  1. Preheat oven to 350 degrees
  2. whisk together honey, oil, eggs and vanilla
  3. stir in apples and zucchini
  4. combine dry ingredients together in a small bowl
  5. fold into wet ingredients
  6. spray muffin pan with cooking spray
  7. divide evenly and bake for approx 25 min until firm
  8. Allow to cool and enjoy
