Thanks so much for joining Sarah and me for Meatless Monday today. Now that spring is here to stay, I am looking for some lighter, protein packed lunches. I love to use beans as a protein source because they are so filling and so adaptable. The key for me is finding new ways to prepare them with different seasoning blends so I don’t get bored. Today’s Curried Chick Pea Salad in Collard Green Wraps brings a pop of flavors I know you will love.

Curried Chick Pea Salad in Collard Green Wraps

If you have never used Collard Greens for a wrap before, don’t be intimidated. They really are easy to work with. After washing them & drying them completely, simply slice the leaves off right next to the stem. You then have the perfect canvas to make any type of wrap you wish.

Why eat collard greens you ask? They are low in calories and carbs yet high in fiber. Collard greens, like many leafy greens, offer lots of nutritional bang for your buck as they are loaded with Vitamins A, C and K, calcium and iron. Find more info here.

This Curried Chick Pea salad is another recipe that you can make ahead and enjoy for a days. I had the whole salad prepped and ready to wrap in 5 minutes. Honestly, 5 minutes.

Spices like curry, turmeric and cumin pack a huge flavor punch and really elevate the taste of the wraps. You can literally stuff them with any of your favorite veggies for a quick lunch or snack. I’ve added avocado, sprouts, cucumber and tomato slices but any other veggies will work too.

Vegan, Gluten Free, low carb and high protein everyone is happy with these Curried Chick Pea Salad in Collard Green Wraps. Hope you enjoy them!

Curried Chick Pea Salad in Collard Wraps

Ingredients

  • 1 15 oz can of garbanzo beans (rinsed and drained)
  • 1 Tbl of vegan mayo
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp coriander
  • 1/4 tsp kosher salt
  • pepper to taste
  • collard green leaves (washed & dried, cut from stems
  • garnish:
  • avocado
  • tomato slices
  • cucumber slices
  • alfalfa sprouts

Instructions

  1. In a food processor add
  2. beans, mayo and spices
  3. pulse until combined
  4. keep texture
  5. Scoop 1/4 of mixture into each wrap
  6. top with desired toppings
  7. roll up and enjoy

    This looks really good! Collards as a wrap, what a great way eat greens! A quick and easy filling I’ve used for a wrap is black beans mashed with avocado and nutritional yeast. Thanks for the recipe!

    I love using collards as wraps! Totally forgot about that… I used to do it all the time in Georgia, but I don’t see collards as much in California. I guess it’s a Southern (Eastern?) thing.
