Vegetarian Greek Stuffed Peppers with Tzatziki Drizzle

Thanks for joining Sarah and me for Meatless Monday today. January always feels like the longest month to me. It’s like a month where everyday feels like a Monday. Anyone else? Anyways, I have always enjoyed the Greek pairings of tomato, feta, lemon, olive oil and spinach and so I put them all together into these delicious  Vegetarian Greek Stuffed Peppers with Tzatziki drizzle.

Vegetarian Greek Stuffed Peppers|Meatless Monday

Cooking notes:

Preparing the couscous in advance will significantly cut down the prep time for this dish. I used Israeli (pearled) couscous but you can use the traditional as well. To make these Greek Stuffed peppers vegan friendly, simply omit the feta cheese. For my gluten free readers, brown rice or quinoa can easily be used instead of couscous.

Vegetarian Greek Stuffed peppers

The easiest way to precook the peppers is to roast them in the oven while you are preparing the filling. Then, you simply stuff them with the veggie goodness and bake them to heat throughout. I’ve also eaten these Greek Stuffed Peppers cold on top of a salad the next day and they were just as tasty.

The Tzatziki drizzle is a snap to make in seconds with your blender. It makes a great addition to the peppers and a fantastic healthy dip for raw veggies. I am all about using up my leftovers and I will be serving this drizzle as a salad dressing this week as well.

Vegetarian Greek Stuffed Peppers with Tzatziki Drizzle

Vegetarian Greek Stuffed Peppers|Meatless Monday

Ingredients

  • For the peppers:
  • 4-5 Red, yellow or green peppers
  • 1 C couscous -cooked according to package
  • 1 zucchini diced
  • 1-2 garlic cloves minced
  • 1 15 oz can of chick peas-rinsed and drained
  • 1 15 oz can of diced tomatoes (drained)
  • 6 oz feta cheese
  • 1 -2 C fresh spinach
  • oregano, basil, salt, pepper, garlic powder to taste
  • For Tzitziki sauce:
  • 12 oz Greek Yogurt low fat
  • 1 cucumber-peeled and unseeded
  • handful of fresh mint and dill
  • 1 garlic clove
  • salt and pepper to taste

Instructions

  1. Preheat oven to 375
  2. Wash peppers and remove stem and seeds
  3. Drizzle with olive oil and bake for 20 min
  4. Meanwhile prepare filling
  5. In a skillet saute garlic, zucchini for 5 min
  6. Remove from heat and stir in couscous
  7. add chick peas, spinach, tomatoes
  8. oregano, basil, garlic powder,salt & pepper
  9. add 2/3 of the feta cheese
  10. Stuff peppers with filling
  11. sprinkle on remaining feta cheese
  12. bake for 20 min
  13. To prepare Tzitziki sauce:
  14. in a blender add cucumber, yogurt, dill, mint, garlic, salt and pepper
  15. Pulse until all ingredients are smooth

    Tzatziki. Yum! Only problem is that my husband would never eat this . . . it would be good for him, though. Sometimes I make him eat veggie meals. Because I’m mean that way. 😉

    So when I was growing up I hated when my mom would make stuffed peppers because she used to always use ground beef and I am not a fan. But this sounds very tasty and healthy. I love anything with feta cheese….yum!

    I never think to vary my stuffed pepper filling. This sounds really delicious, and super easy to sub in for what I usually put in my peppers.

    I’m a day late to the party but I am not a fan of peppers much. We each have our own tatests and mine are evermore changing as I age. I shared your recipe because I know many of my readers would love this!

    Tomato, feta, lemon, olive oil, and spinach, are just the perfect combination. Yum-yum! For the stuffing, I’ll use quinoa instead, the creamy and somewhat nutty, is what I love about it. I’ll definitely prepare this over the weekend! I’m sure my family would love this! Do you have other recipe that include quinoa? Please do tell! Thanks!
