Happy Meatless Monday friends! Sharing one of my favorite summer salads today which just happens to be perfect for 4th of July, Labor Day, Memorial Day or any day ending in “Y”. I love the combination of the tart blueberries with the sweet pomegranate seeds and parm cheese offset by the balsamic vinegar. It’s so easy to whip up and packs a fabulous flavor punch.
Blueberries are in season and deliciously sweet right now. Pomegranate seeds add a fun crunch and pop of flavor the salad. Not sure if you like raw kale? Try “massaging” it with the olive and salt for a few minutes to soften it up a bit. Bring along this Red, white & Blue Kale salad to your next BBQ and it’s sure to be a hit.

Love the colors! I would add an additional color–yellow–by steaming the kale with a spritz of lemon juice (that is my personal favorite! Have fun in Hawaii!

That would be a good addition. Often I use a lemon infused olive oil which gives a great flavor to the veggies. Thanks excited for my trip!

I definitely love kale in salad, but don’t think I could do a complete kale salad. I tend to like them better when I go out to eat and order one rather then when I try to make one at home. But I love the colors of this salad and I think it’s a perfect dish to bring to a Fourth party!!

Interesting. I would never have thought to pair kale with fruit. I guess I have had and loved spinach salad with strawberries in it, so this probably isn’t too far of a departure from that. Definitely pretty and patriotic.

oh I think you will love it it’s really easy. Just let the dressing sit on it for a little to soften it up. The flavors go really well together.
