Admittedly, I have a little bit of a baked oatmeal obsession at the moment. I love to tweak my favorite breakfast go-to for each season. Today, I am sharing my new festive Gingerbread Cranberry Oatmeal Breakfast Bake with you. I hope you enjoy it as much as I do.
Gingerbread Cranberry Oatmeal Breakfast Bake
Why do I love this oatmeal bake so much? First, it’s so easy to make ahead and reheat for breakfast. I am all about easy breakfasts over here. My favorite pre-run breakfast? You guessed it-it’s oatmeal. It provides a great mix of carbohydrates and protein to fuel your body for whatever your day has in store.
Second, oatmeal bakes are pretty family-friendly and easy to customize to your family’s preferences. This Gingerbread Cranberry combination brings in all the seasonal goodness with cinnamon, nutmeg, ginger, and allspice. I added in some fresh cranberries for color and variety.
Finally, oatmeal bakes can be prepped in about 5 minutes then baked and ready to eat in about 25 minutes. It is easy to double to triple the recipe to feed a bigger family or keep for enjoying later in the week. Doesn’t get much easier than that!
What are the ingredients?
Simple rolled oats, milk of choice, eggs, cranberries, banana, and all the delicious seasonal spices. Oatmeal is naturally gluten free for those who desire that. About the oatmeal: While any rolled oats will do, I like to use this one because it has pea protein added in. This boosts the protein up quite a bit.
To achieve that gingerbread taste, I used a tablespoon of molasses. If you don’t have molasses, pure maple syrup can be a substitute or you can leave it out altogether.
Variations to make
Looking for something a little sweeter? Add some mini chocolate chips. If you don’t have fresh cranberries, you can use dried cranberries. Feeling nutty? Chopped walnuts or pecans would fit nicely.

Gingerbread Cranberry Oatmeal Breakfast Bake
A seasonal holiday twist! This Gingerbread Cranberry Oatmeal Bake is a make ahead breakfast the whole family will enjoy. Gluten-fee, healthy and hearty. Double or triple to fit your family's needs
Ingredients
- 1 C rolled oats
- 1 tsp baking powder
- 1 serving vanilla protein powder (optional)
- 1 tsp cinnamon, nutmeg, ginger, allspice
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 tbl molasses or maple syrup
- 1 C milk of choice
- 1 large egg
- 1 banana sliced
- 1/4 C fresh cranberries
Instructions
- preheat oven to 375
- spray a pie pan or baking dish w cooking spray
- slice banana and add to bottom of dish
- combine all dry ingredients in mixing bowl
- add in eggs, milk, vanilla, and molasses mix well
- pour the mixture into pan
- top with cranberries
- bake for 22-24 min until set
- do not overcook
Notes
This can be made ahead and warmed up in the microwave as needed. Do not over bake
