I could not let that whole roasted feta and tomatoes trend slide by without coming up with another way to enjoy it. Can’t believe I did not think of this one sooner. I am a huge broccoli fan so this should have been a no brainer. This recipe happened when I was looking into the fridge for inspiration and the feta happened to be right next to the broccoli. Roasted Broccoli with Feta and Tomatoes
Sometimes the best recipes happen by accident. It was the end of the week and I had gone through most of my vegetable stash when I spotted the feta cheese next to the broccoli. Voila! This ridiculously easy side dish was born. Broccoli is always one of my go to veggies because it is so healthy and it’s so good roasted.
What are the ingredients?
With only 3 main ingredients, yes three, you can have this side dish on the table any night of the week. Broccoli, feta cheese, and tomatoes. Add in a few spices and you’ve got a delicious side! Gluten free, vegetarian, and low carb.
What kind of tomatoes should I use?
I used grape tomatoes in 2 colors here however any small tomato will do. Cherry tomatoes and grape tomatoes have a sweet flavor and work really well. If you cannot find them, feel free to cut up a larger tomato variety.
How do I prepare this Broccoli dish?
It could not be easier. Simply toss your broccoli, feta, and tomatoes with a little olive oil. sprinkle on some salt, pepper and garlic to taste. Roast at 375 degrees for 30 min. If you have a little lemon squeeze that on top, otherwise, you are ready to go.

Ingredients
- 3 Cups of fresh. broccoli
- 1 pint of grape tomatoes (halved)
- 4 ounces of feta cheese crumbles
- olive oil to toss
- salt, pepper, garlic powder to taste
- optional squeeze of lemon
Instructions
- Preheat oven to 375
- Spray a casserole dish with cooking spray
- In a large bowl toss broccoli and tomatoes with olive oil to coat
- season w salt, pepper & garlic to taste
- add to the casserole dish
- sprinkle on feta cheese
- bake for 30 min
- squeeze lemon if desired
- serve warm or room temperature
