My husband (non-vegetarian) and I have quite the cooking battles around Thanksgiving. He really likes to show off his carnivorous cooking so this year I am upping my game with my vegetarian sides. Stay tuned to see what happens. For this week, I’ve modified and enhanced a recipe I originally found in Bon Appetit to make it healthier and vegetarian friendly. It makes a great addition to the Thanksgiving table. Hope you enjoy as much as I did!

- 6 C torn multigrain or your favorite hearty bread
- 1/2 C raw pumpkin seeds
- 1 lb baby bella mushrooms-cleaned and diced
- 3 celery stalks-diced
- 6 C raw Kale (ribs & stems removed, chopped)
- 1/2 C fresh peas
- Olive oil for sauteeing
- Kosher salt, pepper & sage to taste
- 1/2 C white wine
- 1 egg white (omit for Vegan recipe)
- 1 1/2 C Veg stock
- Fresh Rosemary
- Preheat oven to 350*
- Spray casserole dish with cooking spray or brush with olive oil
- Place torn bread in large mixing bowl
- Toast pumpkin seeds for 10 min until browned and add to bread bowl
- Heat olive oil in skillet and saute mushrooms, celery, kale and peas until softened about 6-8 min
- Season with salt & pepper & sage
- Transfer to bread bowl and combine
- Reduce heat and add wine to skillet scraping up any left over veggies about 1 min
- Pour over bread & veggie mixture
- In a small bowl, wisk egg white and veg stock adding salt & pepper pour over bread mixture
- Bread should be moist (you may need to add more stock)
- Transfer mixture to casserole dish, top with fresh Rosemary
- Cover with foil and baker about 30 min
- Remove foil-increase oven temp to 425* and bake to brown top about 20 min
- Can be made the day before and cooked day of

Bookmarking! Geoff and I are in charge of thanksgiving this year, and we are both vegetarians. If it was only the two of us, we’d totally go with just a Tofurkey and some cranberry sauce, haha! But since we have to feed the non-vegetarians in the family, we are trying to find some creative veggie recipes that won’t make them miss meat 🙂 This is on the list, thank you!

I’m hosting this year and I can’t wait. I don’t eat meat either so my hubby and I divide and conquer. He makes TWO turkeys for the crowd and I make a bunch of vegetarian sides. The sides are always as big of a hit as the turkey and we have never had any complaints that they are meat free!

This looks A-MA-ZING! Last year I made a roasted squash side (squash, craisins, pecans and shallots I believe) from the the Runner’s World cookbook. I loved it and can’t wait to make it again this Thanksgiving. I will let the rest of the family have their sweet potato casserole and the sugar coma that happens later.

I’m not even sure how we are celebrating T’day this year since DH’s dad is in a rehab place after his stroke two weeks ago. I’m trying to get my planner self to just chill and go with the flow at this point.
That dish sounds interesting, but I’m not a stuffing fan and DH doesn’t like Kale, so probably not going to show up at our house LOL.
