15 Minute Orzo Tomato Soup with Feta
With just a few simple pantry items, you can whip up this tasty Orzo Tomato Soup with Feta in just a few minutes. Perfect for a cold winter day or anytime you are looking for some comfort food.
What are the ingredients
-Can of chopped tomatoes or plum tomatoes
-Low sodium vegetable broth
-diced onion & chopped garlic
-tomato paste
-orzo
-feta cheese (can sub goat cheese or leave off)
-salt, pepper, oregano, basil, red pepper flakes
How to prepare
It could not be easier to quickly create this Orzo Tomato Soup with Feta. Simply sauté your onion and garlic in a stockpot. Add in the tomato paste, broth, and tomatoes. Sprinkle in the remaining spices. Use an immersion blender to pureé if needed. Bring to a boil and then reduce to a simmer. Add in your orzo and allow to simmer for 6-8 minutes. Ladle into your bowls and top with feta cheese. Oh so good!
Can I make this ahead?
Yes, you can make this soup ahead. I suggest leaving off the feta cheese until you are ready to serve.
Cooking Notes
I used vegetable broth however chicken broth would also work. If you don’t have feta cheese, goat cheese would be a great substitution. A dairy-free cheese can also work. Whole tomatoes, diced tomatoes, or plum tomatoes will all work in this soup just fine. You may need to use an immersion blender to chop up some of the bigger pieces of tomatoes.

Calling all tomato and feta cheese lovers! This 15 minute Orzo Tomato Soup with feta cheese is just what you are looking for
Ingredients
- 1/2 onion -diced
- 2 tsp garlic cloves minced
- 2 Tbl tomato paste
- 32 oz can of diced or peeled tomatoes
- 32 oz vegetable broth
- 1 c feta cheese
- 1/2 Cup orzo
- salt, pepper, oregano, basil & red pepper to taste
- olive oil for sauté
Instructions
- set a large stock pot to medium & drizzle olive oil in
- add onion, garlic and tomato paste sauté for 2-3 min
- add in tomatoes, broth and seasonings bring to. a boil
- pureé with an immersion blender to chop any large tomatoes
- reduce to a simmer and add in orzo
- let simmer 4-6 minutes until orzo is soft
- ladle into bowl and sprinkle on feta cheese
Notes
can sub in goat cheese for feta if needed.
