Zucchini Broccoli Casserole-Meatless Monday

My recipe, Zucchini Broccoli casserole, has been a favorite family holiday side dish for years and I hope you enjoy it as well. (Note you can easily make this Gluten Free by subbing out the Panko for a GF “bread crumb”.)

Zucchini Broccoli Casserole-Meatless Monday
Recipe Type: Veggie side dish
Author: Confessions of A Mother Runner
Prep time: 15 mins
Cook time: 45 mins
Total time: 1 hour
Serves: 4-6
Zucchini Broccoli side dish with a kick
Ingredients
  • 1 small onion-diced
  • 2 lbs of Zucchini (about 4) quarterd
  • 2 Broccoli crowns- cut with stems discarded
  • 8 oz package of salsa or spicy Monterey Jack cheese-grated
  • 2 egg whites
  • 1 cup light sour cream
  • salt, pepper, garlic powder to taste
  • optional dash of siracha
  • 1/2 Cup Panko whole wheat bread crumbs
Instructions
  1. Steam zucchini and broccoli until soft-approx 5 min
  2. Pre heat oven to 375
  3. Meanwhile, saute onion for 5 m and remove from heat
  4. Remove seeds from zucchini with a spoon
  5. Place zucchini, broccoli and onion in a food processor and pulse until chopped but chunky
  6. Transfer to large bowl
  7. Add in egg whites, sour cream and cheese stir to combine
  8. Add desired spices and siracha
  9. Spray a casserole dish with non stick spray
  10. Pour in veggie mixture and top with Panko bread crumbs
  11. Bake for approx 45 min until set
  12. Enjoy!

    Ooooh love the idea of making it into a casserole! This would definitely satisfy my other half with the cheese. Think we would substitute sour cream for greek yogurt though 🙂

      You probably could sub it out with yogurt but I haven’t tried that yet. let me know if he likes it.

    I can be weird about cassaroles, because you know that I like to know what is in my food, and they make it difficult, but this I could definitely get on board with. I would probably use greek yogurt rather than sour cream, but I love the ingredients.

    I love casseroles! I haven’t made one in a while but this looks delish! I could definitely modify it to be gluten free and I bet my kiddos would love it too (they are huge broccoli fans) 🙂 Pinnng this for later!

    Admittedly, I can sometimes go overboard–sometimes planning dinners for my family 1-2 weeks in advance. Looks like I will have to make some room for this as part of a dinner this week…

    Broccoli casserole is one of my favorite side dishes. I have never had it with zucchini. I will have to try it next time.

    I am all about all things zucchini right now:) probably because I have more than I could ever possibly use:) Broccoli I could do without, I love it fresh, but can’t eat it cooked for some reason. I know I am totally weird.

    Oh this brings back Birthday memories for me! My mom always made us our favorite meal for our birthday and I always wanted broccoli bake, but this version is much healthier! Maybe I can get Quinn to love this stuff as much as I do!

    Thank you for this recipe! I like that you also put the gluten-free option because I am trying this kind of lifestyle 😉 I’ve already visited some gluten-free restaurants here in Toronto to get some inspiration. I must tell you that the meals can be really delicious, which was a big surprise for me 🙂 Do you have a lot of these restaurants in your city too? To be honest, I have been obsessed with zucchini for about 1 year and I like everything with it. My boyfriend sometimes gets mad that zucchini is almost in every food but eventually, it tastes great when you combine it with good spices. I like your combination with broccoli! I haven’t tried that yet so maybe even my boyfriend will be happy that something different will be on the table 😀 Do you have any ingredient that you like very much?

    This looks so yummy! I bet you could even sub greek yogurt for the sour cream. I have a ton of veggies from the garden so this would be great to make! I love having sides in the fridge for easy sides to meals. Cook once, eat for days!
