Wild n’ Nutty “Family” Holiday Salad-Meatless Monday

This Monday I decided to have a little fun with my post. With so many family members dropping in and out, the need to feed them can seem ever ending. I created this hearty salad full of powerhouse veggies sure enough to please all of your guests. Combining wild rice, Farro, squash, kale, walnuts & pumpkin seeds you’ve pretty much got every vitamin covered. Bonus: it’s Vegetarian, Gluten free & Vegan.

Wild n’ Nutty “Family” Holiday Salad-Meatless Monday
Recipe Type: Meatless Main dish or Holiday side
Author: Confessions of A Mother Runner
Prep time: 1 hour
Total time: 1 hour
With wild rice, Farro, squash, cranberry, kale, pumpkin seeds you’ve got one great super food salad
Ingredients
  • 1 C Brown Wild Rice (prepare as directed)
  • 1 C Farro (prepare as directed)
  • 12 oz Butternut Squash-cubed
  • 1 1/2 C Baby Kale-coarsely chopped (can sub spinach)
  • 1/4 C Olive Oil
  • 1/4 C Apple Cider vinegar
  • 1/2 C Pumpkin seeds
  • 1/2 C chopped Walnuts
  • 1/2 C dried Cranberries
Instructions
  1. Prepare Farro & Wild rice as directed set aside
  2. Preheat oven to 375
  3. Roast squash with drizzle of Olive oil, salt & pepper until tender
  4. In a large bowl combine: Farro, Wild Rice, squash, pumpkin seeds, walnuts, cranberries, and kale
  5. Drizzle on Olive oil and vinegar
  6. Season with kosher salt & pepper
  7. Serve room temp or chilled

 This satisfying, healthy salad is sure to please whoever drops by this Holiday Season & also makes a great party dish. Hope you enjoy!

    I love walnuts added to dishes! I bought a cheddar cheese from TJ’s this week with walnuts in it. Still not sure how I feel about it yet. Thanks for another great recipe to try 🙂

    I’ve only made a few recipes with Farro. Yum! This gives me an excuse to use it again. Not that I need an excuse 🙂

    Squash has become my new go to lately. Oh and Kale I’ll eat in anything, I’ve been replacing spinach in recipes with it. Great Link up!

    We’ve recently been using a lot of farro in our recipes. It’s such a delicious grain, I’m surprised more people don’t know about it!

    That looks so good! Thank you for sharing, I will have to make this for sure, and once again for hosting!!       Ha ha it’s a whole grain which I assume you now know! I find it very tasty like a barley texture. If you give it a try let me know if you like it.

    This looks delicious, I would prob leave out the squash…texture issue for me. But I love everything else about it! My parents are visiting for 10 days over the holidays! Can’t wait!

    Yum, this sounds simple and delicious. I’ve never tried farro before. Can you find it easily at the grocery store?

      They definitely have Farro and whole foods and TJ and prob at your regular grocery store. Hope you like it! It’s kind of like barley texture.

    What is farro? Is it a grain? A vegetable? Where would I find it in a grocery store?

      It is a whole grain similar to barley in texture. They have at many grocery stores and at whole foods and trader joes. If you can’t find it, you could use barley too.
