Watermelon, Cucumber, and Avocado Salad
Obviously, I am a little biased but this could be the best tasting summer salad I’ve ever tasted. Not only is it a fabulous combination of fruit and vegetables, but it also could not be easier to mix up and enjoy.
What are the ingredients?
Quite simply fresh watermelon, sliced cucumbers, diced avocado, and Arugula. The sweet flavors of the watermelon pair perfectly with the crisp cucumber slices and the slight spiciness of the Arugula. A little drizzle of high quality balsamic and olive oil is all you need on top. The natural juice from the watermelon will add depth to the flavor. So simple and so tasty!
What proteins could I add?
This salad starts off vegan so it is a blank slate. Some great protein toppings could be grilled chicken or shrimp or tofu. Parmesan cheese or these Parmesan crisps are one of my favorite salad toppers.
Can I make this salad ahead?
Because the watermelon and the cucumbers start to release their juices, this salad is best enjoyed a la minute or shortly after prep. Drizzle on your balsamic and olive oil right before serving.

- 3 Cups of cubed watermelon
- 1 large or 3 mini cucumbers- thinly sliced
- 1 avocado-diced
- 4 cups of arugula lettuce
- Olive Oil and Balsamic to drizzle
- salt and pepper to taste
Instructions
- Add arugula to large bowl
- top with watermelon, cucumber, and avocado
- drizzle with olive oil and balsamic
