Warm Rainbow Salad Bowl-Meatless Monday

That’s how we all grow!
    • Today I have a great Warm Salad bowl for you filled with grains, veggies and seeds. If you do a little advance prep, it can easily be thrown together for a quick filling meal. I like to make a batch of grains to use throughout the week to make meal prep quicker. The seeds can be toasted in advance. For this recipe, you can also pre roast the butternut squash and simply re heat when needed. For the dressing, I used juice from 1/2 lemon, lemon flavored Olive Oil and Balsamic.
    •  Side note: My absolute new favorite spice is this Siracha powder! Simply genius-Have you seen it?

Today I have a great Warm Salad bowl for you filled with grains, veggies and seeds. If you do a little advance prep, it can easily be thrown together for a quick filling meal. I like to make a batch of grains to use throughout the week to make meal prep quicker. The seeds can be toasted in advance. For this recipe, you can also pre roast the butternut squash and simply re heat when needed. For the dressing, I used juice from 1/2 lemon, lemon flavored Olive Oil and Balsamic.

Warm Rainbow Salad Bowl-Meatless Monday
Recipe Type: lunch/dinner
Author: Confessions of A Mother Runner
Prep time: 45 mins
Cook time: 30 mins
Total time: 1 hour 15 mins
Serves: 2-4
A warm whole grains salad packed with a rainbow of veggies
Ingredients
  • 1 C Black rice-cooked according to package
  • 1 C Quinoa-cooked according to pakage
  • 2 C raw spinach
  • 2 C Kale or Cabbage shredded
  • 1 Butternut squash-cleaned and cut into chunks
  • 1/4 c Hemp seeds
  • 1/4 cup sunflower seeds
  • 1/2 C blue cheese
  • 1/2 C edamame
  • 1 small red beet-spiralized (raw)
  • Balsamic vinegar, lemon, olive oil to taste for dressing
  • pepper & kosher salt
  • siracha seasoning
Instructions
  1. Prep black rice and quinoa in advance and set aside
  2. Sprinkle Butternut Squash with salt, pepper and siracha seasoning and roast at 375 for 30 min or until softened
  3. Meanwhile, toast hemp seeds and sunflower seeds in toaster or skillet for 3-5 min until browned
  4. In a large bowl assemble:
  5. spinach, kale/cabbage, rice, quinoa, edamame, squash
  6. Sprinkle seed mixture and blue cheese
  7. top with spiralized beet
  8. Dress with lemon juice, Olive oil, balsamic, salt and pepper

    This warm salad looks amazing!! I love roast pumpkin in salads, and the spiralised beetroot looks divine…such a great combination of seeds and grains. Will have to find a sriracha seasoning to go with it!

    This looks great! I love warm salads, especially when we’re still in cold weather season. My husband has been teasing me about Meatless Monday the past few weeks so I may have to find another day to sneak in something like this.

    Yum! I made a warm salad just the other day. I heated up some TJ’s grain salad and put it on top of a big pile of greens… added some nuts and feta and viola!
    Your version looks amazing and it is sooooooo cool that met Tina! 🙂

    Sriracha powder – omg I need this in my life. I would put this on everything. I love this warm salad as well – I need a better spiralizer like now – mine doesn’t make the best noodles and I get discouraged. This looks so much more appealing!! I simiply love black rice – what a great addition!

    OK OK everyone is cooking with this black rice. I need to learn more because I have never seen black rice in the grocery store and I want to know how it taste and if I would like it. Hmmmm…..those spiralized beets look good too. YES!

    I need to try the Siracha powder – I could control the spice better with that than the liquid form!!!
    I need more warm salad bowls during the winter – I tend to stay away from salads during the cold weather because I want a hot meal.
