Veggie Breakfast Casserole (good enough to fool a meat eater)

I’ve been focusing on upping my protein at breakfast and also trying not to spend too much time on dishes and cooking. Not always so easy right? Enter the Breakfast Casserole. So easy to make, cut into serving size pieces and then pop in the microwave to eat all week. I pair it with a slice of Ezekiel bread. This week I added in some Beyond Meat Beef Crumbles (Fiesty flavor) for some extra protein. I have no affiliation with them just a product I like! You can use any “veggie crumbles”

Veggie Breakfast Casserole (good enough to fool a meat eater)
Recipe Type: Breakfast
Author: Confessions of A Mother Runner
Prep time: 15 mins
Cook time: 35 mins
Total time: 50 mins
A veggie breakfast casserole with a “meat”less pop
Ingredients
  • 1 red and 1 yellow pepper-seeded and diced
  • 1 package mushrooms diced
  • 1 6 oz bag of spinach or kale
  • 1 Cup of Beyond Meat crumbles (optional)
  • 5 eggs and 5 egg whites
  • 1 c of cheddar cheese or 1/2 c of goat cheese
  • splash of milk
  • salt & pepper to taste
Instructions
  1. Saute peppers, mushrooms and spinach until softened
  2. Add in frozen meat crumbles and cook and additional 5 min
  3. remove from heat
  4. spray a 9 x 13 dish with non stick spray
  5. Add veggies to dish
  6. Wisk eggs and egg whites with a splash of milk, salt & pepper
  7. pour over veggies
  8. top with cheese
  9. Bake at 350 degrees for approx 35 min or until firm
  10. Remove and cool for 5 min before cutting
  11. Store in individual serving sizes and enjoy

    Congrats on Ragnar! Breakfast wise, I am pretty standard English Muffin etc because I work out first thing. Otherwise, I’m all over the oats. I used to have eggs every morning, but now I love them more for lunch and dinner.

    Yummy! That is a great combination of veggies to go in a casserole! I do not have eggs enough, and I have never baked them, but maybe now I should! I can see how this would keep hunger at bay till lunch….if only it could keep my sweet tooth away 😛

    This sounds delicious and so easy for weekday breakfasts! How many servings did you get out of it?

      It was great. I cut it into 6 servings and individually wrapped them up. Pulled them out in the morning microwaved for about a minute topped with salsa and ready to go. hope you give it a try.

    Sounds yummy! I will have to try. I have never tried Beyond meat crumbles. Can they be found at Whole foods?

      Yes that’s where I found them. If you can’t find them you can use any brand. Adds a ton more protein and they are very filling.

    I love a good breakfast casserole for breakfast or dinner! I haven’t tried those crumble things- I will see if I can find them in the grocery store- I am always looking for stuff like that because I have an allergy to beef. Yes, weird I know! Thanks for another great recipe- I will let you know how the Mr. likes it!

    i don’t like eggs so i won’t be making this but i LOVE the beefy crumbles. i’m so glad i stumbled on beyond meat. it is SO delicious. i love it 🙂

    Oh I love these! My mom makes them, and although the ingredients might be just a little different they look pretty similar. So Yum, I even love this for dinner sometimes!
