Why should meat eaters have all the fun? I made a Shepherd’s Pie for my family with meat a few weeks ago and I thought, “I can do this meatless”! I’ve used the Beyond Meat crumbles again and they really hold up well. This recipe takes a bit longer to prepare than my usual ones but trust me, it’s worth it. I made it last night for a potluck dinner and it was a big hit.

Shepherd’s Pie is basically a layered casserole of mashed potatoes, corn and “beef”. For my version, I use Beyond Meat veggie crumbles, home made mashed potatoes and a corn/peas mixture. I added in a little kale for color too. It’s all about mashed potatoes with a little texture so try not to over puree them. Leaving the skin on them bumps up the flavor and the fiber as well. It’s a hearty, filling dish that is just perfect for this crazy cold weather. It works best in a lasagna pan or casserole dish. Take the time to make it and I promise you won’t be disappointed.
- For Mashed Potatoes:
- 2 lb of baby gold potatoes-cleaned w skin on & halved
- 2 tbl light Sour Cream
- 2 tbl butter or substitute of your choice
- 1/2 C milk of your choice
- 1 tbl chopped garlic
- Kosher salt, pepper, garlic powder
- For “Meat layer”
- 1 package Meat substitute 10-12 oz
- 8 0z baby bella mushrooms-diced
- 1 onion-chopped
- 1 1/2 c kale-chopped
- 3 tsp Worcestshire sauce or sub vegan option
- 2 tbl flour
- 1 1/2 C veg broth
- 1/2 c red wine
- 1 tbl sage
- garlic powder, pepper, salt & parsley to taste
- Middle layer:
- 1 C of frozen peas and 1 C of frozen corn (does not have to be defrosted)
- For Mashed Potatoes:
- boil potatoes w a dash of salt until soft
- drain & transfer to food processor
- add remaining ingredients and pulse until you reach desired texture
- set aside
- While potatoes are cooking prepare “meaty” layer:
- saute onion, mushrooms, garlic in olive oil until softened
- add 1 1/2 C kale
- Add meat substitute combine
- transfer mixture to bowl
- Prepare sauce/roux:
- heat the same pan and add broth to deglaze
- add flour and whisk
- slowly add wine, sage, garlic , pepper, worcestshire & parsley
- Add “meat” mixture back into pan to combine
- Transfer to a casserole dish
- Add corn & peas layer
- Add mashed potatoes on top
- Bake on 375 for 45 min until browned on top

We love veg sheppard’s pie here! I usually use lentils and whatever vegetables I happen to have. I’ve never done a “middle layer” before though, I will have to try that next time!

You can certainly use lentils too. I like the middle layer as kind of a buffer between the potatoes. Hope you like it!

LOVE this…..okay, I ALMOST love it….except one thing….you spelled it wrong 😉 Well if you are going for the traditional English version that is…..which you may not be, but as this was the most english meal I could possibly think of, I had to change it in my tweet 😉 YUM YUM YUM either way, I have never tried a meatless version, but this sounds great! Visiting from the Blog Hop for Skortaholics! This post is appreciated because my husband and I decided a couple of years ago to go mainly vegetarian (or “Flexitarian” if you will!). It can be a struggle to come up with variety that has enough calories for runners/cyclists/triathletes — especially when we try not to use soy substitutes. We will have to give this one a try!

This looks fantastic – I adore shepherds pie but never thought to make it meatless. My favorite comfort food is probably chili. I love loading it up with cheese, avocado and cilantro and then dipping tortilla chips in it. So good during the winter months!

I love shepherd’s pie but we never have leftover mashed potatoes so I never make it. (We never have leftover mashed potatoes because we plow through them like nobody’s business.) That dish looks delicious! I never even thought about a meatless version.

Oh I love Shepherd’s Pie! I love how it mixes the corn and mashed potatoes together! I’ve never tried it meatless though, that sounds pretty interesting! My favorite comfort food is my grandmother’s Chicken and Dumplings. I’ve tried to make it “healthy” but it does not compare to the full fat and all of the good stuff version! So that’s a splurge!

Sheppard’s pie is a staple in my house. It’s funny because I never ate it growing up but I found a recipe for it on skinnytaste that both my husband and I really like. Sheppard’s pie is great to prep on the weekend and then just pop it in the oven during week for an easy meal.

I’ve never actually had shepherds pie and I’m not 100% sure why. It’s got a bunch of things I like even without the meat. If I had to pick a comfort food it would be green chile stew a New Mexico staple. It’s got beef and green chile, potatoes, tomatoes,onions,garlic and lot’s of seasonings it’s really good. With warm tortillas it’s the best thing ever, especially when I need some comforting!

I actually really enjoy “fake meat” crumbles! I love using them to make my version of street tacos. I don’t really like cooking meat because it grosses me out, so I use crumbles as an alternative that a little more appealing to me!

It’s made from soy similar to that of veggie burgers. I really like the texture. You could also use lentils if you can’t find them but most stores usually carry some version of them.
