What A Vegetarian Mother Runner Eats In A Day

Happy Friday! I don’t think I have ever done a “what I ate today” post before. I know you are all pretty much on the edge of your seats to know what a vegetarian mother runner eats in a day so I am sharing yesterday’s eats. I notice the Friday Five theme today was food so I figured I’d link up with Courtney, Mar and Cynthia today and share my typical meals.

I have a few “go to” breakfasts and lunches that I switch up on a typical week. I usually eat 5 times a day with 3 meals and 2 snacks. I do not currently track foods or calories.

Breakfast

I love breakfast! When I start off with a good breakfast, I feel like my day of eating just “runs’ smoother. As I’ve mentioned in my Meatless Monday linkup, I love to make a breakfast dish on a Sunday evening that I can enjoy all week long for breakfast. I usually alternate between fritatta dishes and oatmeal bakes. This week I am enjoying my blueberry banana oatmeal bake and 2 cups of coffee and sparkling water.

Snack – morning run followed by a homemade Butterscotch chocolate chip oatmeal bars filled with all kinds of healthy goodness and sparkling water.

I usually have a big salad of some sort with beans or cheese in it but this week I had a craving for a sandwich and came up with this plate of yumminess. I have now made this grilled cheese with hummus, avocado, spinach and tomato 3 times this week. It’s my  new fave! Finished my 32 oz bottle of water.

3 Hershey kisses-I need some sort of chocolate everyday and these are my go to.

Snack 2

Skim milk latte grande-I am not a milk drinker so adding it to coffee is the perfect way for me to get my calcium in each day. That’s how I rationalize the afternoon coffee fix.

I am so into these Cara Cara oranges the past few weeks. They are a cross between grapefruit and orange so not too sweet. I had one of these after coaching Girls on the Run today. Normally, I would have some almonds or a cheese stick but I wasn’t that hungry  today.

Dinner

With a crazy evening lacrosse schedule for my son, I picked up a Mexicali Vegan salad from Chop’t filled with veggies and beans  and caught up on some blogging while eating. Usually, my dinners are recipes that I am testing out for Meatless Monday, soups or stir fry dishes with tofu.

I had at least 84 ounces of water/sparkling water throughout the day.

Most days my breakfasts, snacks and lunches do not vary too much. I try to mix up my dinners more while trying to accommodate my meat eating family. Confession: I often end up making 2 meals.

    I love your take on grilled cheese, that looks delicious!! I haven’t heard of those oranges before. That sounds good, too. My husband likes grapefruit, although I don’t. But a hybrid type fruit might be good!

    One of these days I do plan to do a WIAW. I just have to remember to take photos of everything!

    Right now I’m really into the Sumo tangerines, but sadly they were gone when I went to the food store this week.

    I told you the hummus grilled cheese was addictive! So good. So good for you!

    I am not vegetarian; I eat everything, but I eat vegetarian a lot, and yes, I often end up making 2 meals. Which kind of sucks.

    I eat the same foods in a rotation during the week for sure. You are making me want to healthify my snacks 😉 My meals are always very healthy. My snacks… not as much!

      Healthy snacks are not hard you just have to plan ahead! I love to make my own bars and freeze them.

    Everything that you had eaten looks so tasty. I have a hard time eating foods that don’t include meat because I feel like I just compensate with more carbs that are not necessarily healthy.

      I think it takes some practice at first and then it becomes naturally easy to use beans and veggies in place of meat. I don’t think I eat a ton of carbs.

    That oatmeal bake looks so good and such a good idea to make it at the beginning of the week so you can eat it all week! And that grilled cheese? Yum! I love the hummus, avocado, cheese combo! I went to Chopt a few times when I lived in the DC area but I really LOVED SweetGreen. Now I want a salad!

    I think I could be a vegetarian…maybe…but I do love chicken and fish. So maybe not. Your food always looks so good!

    That sandwich has me craving on for real,…right now! I generally make either an “egg bake” with vegetables or an oatmeal bake for breakfasts/snacks for the week 🙂 I always go to fresh fruits and/or vegetables for snacks! Dinner is generally a hodge-podge…with a little guy that will eat ALMOST anything I put in front of him and a husband that works late, I cook twice a night (unless I feel that the leftovers can suffice the hubs).

    My meals don’t change much either, but sometimes I’ll switch things for the season. I don’t like to cook during the summer so I do go more towards salads that I can throw together.

    As much as I plan on mixing things up, I find myself going back to the same foods over and over. Lately that’s been taco salads, bananas and peanut butter, and smoothies. Don’t mess with a good thing right?! 🙂

    I tend to mix up my menu from day to day, with the exception of breakfasts which are pretty standard. I’ve been really into those cara cara oranges lately too!! I seriously ate 3 the other night for dessert. They are so good!

    I mix it up often but I since YTT started I’ve been using the same menu 2 weeks in a row. This might be a habit that continues even after I’m done with the training.
