Thanks for joining Sarah and me for Meatless Monday today. Yesterday was our monthly Soup Club swap day and with the temps really dropping it’s the perfect time whip up a nice warm pot of soup. I picked up my weekly CSA box Saturday that was filled with root vegetables, fresh garlic and Yukon Gold potatoes. I combined all that goodness into a hearty, vegan Winter Minestrone.
Life can get a little crazy this time of the year and I love recipes that I can just throw right into the crock pot and forget about them. This is one of those recipes. Simply chop up all the ingredients and combine into your crock pot with the veggie broth, seasonings and lentils. Set your crock pot and come home to fabulously smelling and warm pot of veggie goodness. Still no crock pot? Add this one to your holiday list.
This winter minestrone is packed with all kind of vitamins and minerals. We have turnips, carrots, celery, potatoes, tomatoes, zucchini and a little bit of lentils thrown in for some plant based protein. Add in some fresh herbs and you’ve got one big pot of wholesome goodness. PS soups like this are a great way to hide some veggies that your family might not be accustomed to (hello turnips) and they won’t even know.

I’ve really been enjoying trying out some new winter root vegetables like turnips and rutabega. I was always a little intimidated by them in the past but boy was I missing out. They are just as easy to work with as potatoes and really add tons of flavor and nutrition to winter meals. Hope you enjoy this Vegan Winter Minestrone.
Tell me: Do you eat seasonally? What are some of your favorite winter foods?

This looks amaaaazing! It’s definitely not soup weather in Sydney at the moment but I’ll have to keep this for cooler weather!

It’s just so easy to throw everything in there!
Ooh, I love soup, especially in cold weather! This looks so comforting and hearty– yum!

Your csa pickup looks awesome for this week. I love minestrone soup and I bet it’s amazing with the root veggies in there. Yum!

Mmmm I love a good veggie minestrone soup! I actually have one very similar to this in my freezer right now! So warm and tasty for those cold winter days!
Yes exactly! Stay warm
This looks amazing – and even better that it is a crock pot soup!! I am definitely going to have to try this one.
I am all over crock pot soups and meals so easy!
Minestrone used to be my favorite until I realized I really can’t tolerate tomatoes 🙁 Wonder if I could make a white version?
I do definitely think you can leave out the tomatoes and just add a little more broth. Let me know if it works!
This looks so good! It’s not even 6 in the morning and I want some now! Thanks for hosting!
ha ha glad you like it!
This looks delicious Deborah! I love healthy comforting soups, especially this time of year!
Happy Meatless Monday!
Me too! It’s freezing today
Ohhhh this soup is right up my alley! So cozy this time of year!
Thanks hope you enjoy it
I looooove minestrone! This soup sounds so good. It’s so rainy and cold here that soup just sounds perfect!
It did just get really cold here too! Stay warm
This looks gorgeous, thanks for sharing! I always struggle to find winter warmers that are both vegan and filled with protein. So this was perfect x
It can be challenging! Hope you enjoy
I love the minestrone soup at Olive Garden….love this version and I will definitely be making it soon, getting to be full out soup season here…soooo cold!
Bring on soup season!
Hands down nothing is more comforting than minestrone soup!!! I love making it and freezing too. I gotta try your version this winter!
Thanks so much hope you enjoy it
This looks yummy. I don’t use my crock pot as often as I should…this motivates me to dig it out and plug it in LOL (thanks!!)
Oh you must it makes life so much easier 🙂
Yummy! This is so perfect for a cold rainy day here in NJ!
Thanks yes definitely
There is nothing better than soup on a cold winter day. Altho I’d cheat and put parmesan on mine! :p
Me too always 🙂
LOVE crock pot soups. This looks so good and I bet it was delicious. Does it freeze well?
I don’t see why not!
I do love digging the crock pot out in the winter. Now I need another cold snap! Minestrone has always been a favorite of mine!
Yes your weather is a tad warmer!
Is there anything better than soup in the winter? Minestrone’s one of my all-time favs too!
Mine too-so filling and good
Perfect time of the year for this. I love having a hot bowl of soup after my cold runs.
Hot bath and a hot bowl of soup!
i really need to try more veggies – just not a big fan. i do love a good hot soup during winter. nothing better to warm the bones.
You won’t even know they are in there and maybe you will even like them 🙂
It’s definitely getting to be soup weather! Can’t wait to try this 🙂
it got so cold this week!
That soup looks yummie. We use our crock pot a lot more this time of year and makes lots of soup and chili.
it’s so great and easy too
This looks so good!
I need to find time to do some shopping, I’m eating terrible these days. I mean I’m keeping it healthy (mostly) but variety is not something I’m good at. I am letting college take over, LOL I’ll have the same thing for dinner 3-4 nights in a row – boring- , LOL
Soup though sounds great, when I travel back north in a few weeks it will tast even nicer, I’ll have to remember to come back to this when I’m meal planning with my mom those weeks! Thanks!!!
I can fall into a habit of eating the same thing for a few days in a row too. Whipping the crock pot is a great way to mix it up
That soup looks great! And I’d definitely add the freshly grated parm – but it wouldn’t be vegan anymore. 🙂
Me too! Love my cheese
I am a HUGE fan of minestrone. This recipe is quite a bit different than I’ve made. I don’t usually put potatoes in mine and not lentils. But love, again, that I have another way to use up lentils.
Yes I thought I would switch it up for winter and make it a little more hearty
When the cold rolls around, I love a good hearty soup like this one!
Me too! Thanks
those yellow cauliflower looks so much fun. love the idea of lentil in this soup because im all about chunky veggies + brothy soup 🙂
Yes indeed!
There’s nothing like an easy crockpot meal. It’s my favorite way of cooking, both in the winter and year-round! I love hearty dishes in the winter – things like roasted chicken add veggies, soups, stews, chilis, etc.
Yes they are so versatile I love mine
This looks delicious! I love soup in the winter time!
Thanks and yes it’s the best
YUM! Minestrone is the bomb.com. I love your CSA box. I miss having one – but not we have great year round farmer’s markets it’s kind of nice too.
The year round farmer’s markets are great!
That looks so good. I love swiss chard. We’re going through quite the cold snap here, I’m all for warm and comforting.
It got very cold here too!
So perfect for the winter season Deborah!
Thanks so much! Hope you give it a try
this looks delish!!
Thanks so much I loved the veggie combo
That looks so yummy!
Love all the beautiful fall veggie colors!
Thanks so much!
This loos so fresh & fabulous! I can’t wait to try it!!
Thanks so much hope you do
I’m soup obsessed right now. Hot and tasty.
So am I! Wish you lived close enough to be in my soup club 🙂
That soup looks delicious 🙂
Thanks so much-it is really easy too to just throw it into the crock pot
This looks delicious and perfect for the cold, rainy day that we had yesterday.
Days like we had yesterday are the worst! But great for soup 🙂
