Thanks for joining Sarah and me for Meatless Monday today. Yesterday was our monthly Soup Club swap day and with the temps really dropping it’s the perfect time whip up a nice warm pot of soup. I picked up my weekly CSA box Saturday that was filled with root vegetables, fresh garlic and Yukon Gold potatoes. I combined all that goodness into a hearty, vegan Winter Minestrone.
Life can get a little crazy this time of the year and I love recipes that I can just throw right into the crock pot and forget about them. This is one of those recipes. Simply chop up all the ingredients and combine into your crock pot with the veggie broth, seasonings and lentils. Set your crock pot and come home to fabulously smelling and warm pot of veggie goodness. Still no crock pot? Add this one to your holiday list.
This winter minestrone is packed with all kind of vitamins and minerals. We have turnips, carrots, celery, potatoes, tomatoes, zucchini and a little bit of lentils thrown in for some plant based protein. Add in some fresh herbs and you’ve got one big pot of wholesome goodness. PS soups like this are a great way to hide some veggies that your family might not be accustomed to (hello turnips) and they won’t even know.
Vegan Winter Minestrone -Soup Club
Ingredients
- 3 large carrots
- 4 celery stalks
- 1 C red lentils
- 2 15 oz. cans of diced tomatoes
- 1 onion
- 3/4 lb of Yukon Gold potatoes
- 1 bunch of Swiss Chard
- 1 large zucchini
- 1 turnip (peeled)
- 64 oz vegetable broth
- garlic, basil, oregano, salt & pepper to taste
- 3-4 bay leaves
- handful of thyme
- optional topping: freshly grated parm cheese
Instructions
- Chop all veggies and add to crock pot
- Add vegetable broth and canned tomatoes
- Stir to combine
- Add in all spices
- Cook on high for 4 hours or low for 6 hours
I’ve really been enjoying trying out some new winter root vegetables like turnips and rutabega. I was always a little intimidated by them in the past but boy was I missing out. They are just as easy to work with as potatoes and really add tons of flavor and nutrition to winter meals. Hope you enjoy this Vegan Winter Minestrone.

I am a HUGE fan of minestrone. This recipe is quite a bit different than I’ve made. I don’t usually put potatoes in mine and not lentils. But love, again, that I have another way to use up lentils.
