    • I had completely forgotten all about this recipe for a while! It ‘s a take on a traditional Scampi dish using tofu, white wine, broccoli and mushrooms. Makes for a hearty vegetarian dish that’s easy to whip up on a weekday night. It’s great over top of your favorite pasta or rice.

I had completely forgotten all about this recipe for a while! It ‘s a take on a traditional Scampi dish using tofu, white wine, broccoli and mushrooms. Makes for a hearty vegetarian dish that’s easy to whip up on a weekday night. It’s great over top of your favorite pasta or rice.

Tofu Scampi-Meatless Monday
Recipe Type: dinner
Author: Confessions of A Mother Runner
Prep time: 15 mins
Cook time: 15 mins
Total time: 30 mins
Serves: 4
A hearty veggie filled dinner with tofu, broccoli and mushrooms
Ingredients
  • 1 block of extra firm organic tofu (drained & pressed)
  • 1 egg-beaten
  • 1 cup gf panko bread crumbs
  • 2 tbl butter or substitute
  • 3 garlic cloves
  • 1 cup veggie broth
  • 2/3 cup white wine
  • 1-2 tbl chopped fresh parsley
  • 1 tsp oregano
  • salt & pepper
  • 1/4 cup parmesan cheese
  • serve over pasta of your choice
Instructions
  1. Drain and press tofu then cut into 8 triangles
  2. dunk 1 at a time into egg mixture then dip into panko-set aside
  3. In a large skillet-heat with olive oil to coat
  4. add tofu and brown on each side remove from pan and place on paper towel
  5. Add butter to pan with garlic and saute
  6. Add broth and seasonings
  7. Add broccoli and mushrooms and steam until tender
  8. Add tofu back in and simmer for 5 min
  9. Serve on top of pasta
  10. sprinkle with parmesan cheese

    I have never cooked with tofu. I’ve eaten it at restaurants before. This looks like an interesting option to try.

    Glad Ragnar went well, I look forward to hearing about it! I really need to use more tofu, I did get it in my breakfast the other day, but I often forget about it….must remember to add to the list 😉 This sounds lovely!

    There are times that I want to cook Tofu for dinner and yet want to make it tasty – this looks delicious! Will give it a try!!

      Yes the white wine truly makes the dish. My kids even loved it. Hopefully the alcohol burns off right? LOL/ Stay tuned Ragnar post coming tomorrow if I can keep my eyes open today to write it

      I was making shrimp scampi last week for the kids and thought, “why not?”. Ragnar was awesome hope to get my post out tomorrow if I can keep my eyes open to write it 🙂

    My Mother’s Day was great. I don’t know about the tofu scampi but it looks good. I tried tofu in a stir fry recently and I couldn’t stomach it lol.

    I’ll be honest, the only thing I’ve ever cooked with tofu is Miso soup. But this looks delicious!

    I am not much of a tofu person. What other proteins do you recommend for this recipe?

      Well since I am a veg that would be how I would eat it however, I made it with chicken for my kids and they loved it. I used the smaller cut pieces as they are easier to cook. Enjoy!

    Ooh I love this idea! I love anything scampi-esque (I love butter) and made a zoodle scampi recipe recently. I may have to try this out with some zoodles too!

    This looks good…. now to try to figure out how to make it since I’m suppose to avoid and really limit soy. :/ I have so many “forgotten” recipes. I was just talking to my husband about it as we have some that I wrote up over a year ago but for whatever reason they got pushed down the list or didn’t get on my list so I forgot to schedule them.
    I had a great Mother’s Day, just wish the weather was a little nicer. Hope you had a great Mother’s Day as well.

    I truly can only use tofu in dishes like this — where I can let the tofu soak up all the other flavors. Great recipe!

      Thanks! It really does soak up the flavor and the panko bread crumbs really give it a nice texture.

      I usually use the Rachel Ray or the Giant has an organic one that is good. I look for the lower sodium option.

    I’ve never tried cooking with tofu. I actually had it once in my life, and have to say it did not look anywhere near as wonderful as your dish looks:)

    idk I have never tried tofu but it kinda weirds me out! lol I’d be open to trying it though in a recipe like this. What I don’t like is that is has soy in it…any options with no soy?
