Hello Monday! What a weekend! I had an amazing time at Ragnar if you couldn’t tell by all my photos everywhere. I can’t wait to share all of my stories with you all this week so please tune back in tomorrow because today it’s Meatless Monday with Tina Muir.
I had completely forgotten all about this recipe for a while! It ‘s a take on a traditional Scampi dish using tofu, white wine, broccoli and mushrooms. Makes for a hearty vegetarian dish that’s easy to whip up on a weekday night. It’s great over top of your favorite pasta or rice.
- 1 block of extra firm organic tofu (drained & pressed)
- 1 egg-beaten
- 1 cup gf panko bread crumbs
- 2 tbl butter or substitute
- 3 garlic cloves
- 1 cup veggie broth
- 2/3 cup white wine
- 1-2 tbl chopped fresh parsley
- 1 tsp oregano
- salt & pepper
- 1/4 cup parmesan cheese
- serve over pasta of your choice
- Drain and press tofu then cut into 8 triangles
- dunk 1 at a time into egg mixture then dip into panko-set aside
- In a large skillet-heat with olive oil to coat
- add tofu and brown on each side remove from pan and place on paper towel
- Add butter to pan with garlic and saute
- Add broth and seasonings
- Add broccoli and mushrooms and steam until tender
- Add tofu back in and simmer for 5 min
- Serve on top of pasta
- sprinkle with parmesan cheese
Keeping it short and sweet today because I am still half asleep. Looking forward to seeing all of your recipes.
Tofu Scampi-What do you think?
How was your Mother’s Day?
I have never cooked with tofu. I’ve eaten it at restaurants before. This looks like an interesting option to try.
Really? It’s so easy hope you give it a try.
Great job with Ragnar! And a new tofu recipe yummmm! Thanks for the link up! 🙂
Thanks! It was a blast.
Glad Ragnar went well, I look forward to hearing about it! I really need to use more tofu, I did get it in my breakfast the other day, but I often forget about it….must remember to add to the list 😉 This sounds lovely!
Thanks I had a blast but I am so tired! Even forgot to add the inlinks until just now. Anyway I love tofu bc it is so versatile. Have a great day
Love this idea! I’m a huge scampi fan and think this is really creative. Hope you had a great weekend and Mother’s Day!
Thanks I did! Super tired still today 🙂
Love the ingredients in this! It’s been a good 20 yrs since I cooked with tofu. Can’t wait to hear about Ragnar!
Really? You haven’t had tofu in 20 years? It’s so easy to cook with. Ragnar was amazing stay tuned. I am so exhausted today 🙂
Mmm I love scampi though I’ve never tried it with tofu! Can’t wait to hear about Ragnar and all the fun you had!!! 😀 PS. I linked up with you today- thanks for hosting <3

There are times that I want to cook Tofu for dinner and yet want to make it tasty – this looks delicious! Will give it a try!!
Thanks! It is easy to use tofu this way bc it soaks up the flavors. Ragnar was a blast stay tuned!
This sounds fantastic, and white wine? yes please! Can’t wait to hear about Ragnar!
Yes the white wine truly makes the dish. My kids even loved it. Hopefully the alcohol burns off right? LOL/ Stay tuned Ragnar post coming tomorrow if I can keep my eyes open today to write it
Tofu Scampi? Millions of recipes online and you’ve managed to create a unique dish. Well done Deborah. Now, about Ragnar! How did it go?
I was making shrimp scampi last week for the kids and thought, “why not?”. Ragnar was awesome hope to get my post out tomorrow if I can keep my eyes open to write it 🙂
Looks delicious! It’s been a while since I’ve made tofu at home but this seems like a good reason to get some tofu 🙂
It was super easy and really good!
My Mother’s Day was great. I don’t know about the tofu scampi but it looks good. I tried tofu in a stir fry recently and I couldn’t stomach it lol.
Really? It doesn’t really have a taste. You might have to come over for dinner sometime 🙂
I’ll be honest, the only thing I’ve ever cooked with tofu is Miso soup. But this looks delicious!
It is so easy to sub it in for any protein really. Hope you give it a try. Or come over and we can have lunch one day 🙂
This looks yummy! I’ve never thought to do a meat-less or shrimp-less scampi before!
It’s really easy!
I am soy-free so tofu is out but this still looks delish!
ooh too bad! But thanks for stopping in have a great day 🙂
I love shrimp scampi, and I love tofu. That means I’ll be all into this dish, right?! Happy Monday 🙂
Absolutely! 🙂
I am not much of a tofu person. What other proteins do you recommend for this recipe?
Well since I am a veg that would be how I would eat it however, I made it with chicken for my kids and they loved it. I used the smaller cut pieces as they are easier to cook. Enjoy!
Ooh I love this idea! I love anything scampi-esque (I love butter) and made a zoodle scampi recipe recently. I may have to try this out with some zoodles too!
I think that would be great and yummy!
I Love Scampi and I love white wine. What a brilliant idea to combine those with tofu! YUM!
Thanks! It was really good and thanks for the twitter love 🙂
This looks good…. now to try to figure out how to make it since I’m suppose to avoid and really limit soy. :/ I have so many “forgotten” recipes. I was just talking to my husband about it as we have some that I wrote up over a year ago but for whatever reason they got pushed down the list or didn’t get on my list so I forgot to schedule them.
I had a great Mother’s Day, just wish the weather was a little nicer. Hope you had a great Mother’s Day as well.
Thanks I really did! Don’t tell anyone but I made a chicken version for my kids but they tasted mine and really liked it.
My mother’s day was great… church followed by brunch. I’m so excited to have found #meatlessmonday! I’m always looking for meatless options, and this looks delish!
I am so glad that you found us! We always have tons of great looking link ups to try. Happy Monday 🙂
I have yet to have tofu that I liked the consistency. I’m definitely willing to try it though, maybe you can give me some tips!
Happy to! Just come over and cook with me one day-that would be fun right?!
It would definitely be fun! I’m in!
Let’s do it this summer at some point!
I have some tofu in my fridge that I need to do something with, and this sounds like a great way to use it up!
Hope you like it!
Scampi sounds good but tofu scares me- LOL! can’t wait to hear about your Ragnar race!
Do not fear the tofu!! LOl. I am trying to write my post now it’s really hard
Yum! What a great idea! I really want to try this (veganized). I’m happy to find a new way to “do” tofu.
I think if you had an egg substitute it work! Let me know
another amazing creation! I wonder if you could make mushroom scampi – I’d love this with some portobellos!
ooh maybe! Let me know if you try it
Yum! This sounds absolutely delicious! I will have to see if my husband and son would be up for some tofu 😉
Just make it and don’t tell them!:)
I truly can only use tofu in dishes like this — where I can let the tofu soak up all the other flavors. Great recipe!
Thanks! It really does soak up the flavor and the panko bread crumbs really give it a nice texture.
Ooooh! Me likey!!!
Thanks hope you give it a try!
Great recipe – do you have a favorite brand of vegetable broth?
I usually use the Rachel Ray or the Giant has an organic one that is good. I look for the lower sodium option.
I’ve never tried cooking with tofu. I actually had it once in my life, and have to say it did not look anywhere near as wonderful as your dish looks:)
ha ha hope you try it again! It takes some practice 🙂
idk I have never tried tofu but it kinda weirds me out! lol I’d be open to trying it though in a recipe like this. What I don’t like is that is has soy in it…any options with no soy?
Well…you could make it with chicken I guess
I can’t say I’ve ever used tofu like this but I just love it!! This looks so yummy and I know you are a pro at making tofu!! Thanks for sharing your recipe with us!!
Thanks I hope you give it a try! I think you would like it.
Interesting!! I have never cooked with tofu before, but it looks delicious.
Really? Never? It’s super easy
I still have yet to try tofu. Maybe this will be the recipe to do it!! Thanks for the link-up.
Really wow! You must try it this week 🙂
This looks delicious! I need to add it to next week’s meal plan!
Thanks! Hope you give it a try
Love the ingredients! I haven’t cooked with tofu in a long time but did have some yesterday
It’s super easy to cook with!
I need to delve into cooking with tofu! This looks fantastic! I love all the veggie goodness!
Thanks! It’s really not too hard. Don’t fear the tofu 🙂
I haven’t had tofu in a while because I try to avoid soy, but I think I’m gonna have to make an exception. Sounds great!
Thanks so much hope you like it!
