Tempeh Rice Noodle & Edamame Salad-Meatless Monday

Happy Meatless Monday!  I made this fabulous Tempeh Rice Noodle salad for our Super Bowl party and it was a big hit. I’d love to share it with you. Please join Tina Muir and I for the Meatless Monday linkup. Check out some new blogs and feel free to add your own links as well.

I was a little afraid to experiment with Tempeh but now that I have, I am loving it. It’s  a nutritional powerhouse! One serving of Tempeh has:

  1. 18 grams of Protein .
  2. Zero sugar
  3. 1 gram of saturated fat
  4. low sodium
  5. 5. High potassium
  6. low calorie (140 c)
  7. Great source of iron

One of the tricks I used with the Tempeh was to boil it, then simmer for 10 minutes followed by marinating it. This really improved the texture and allowed the marinade to saturate.

Tempeh Rice Noodle & Edamame Salad-Meatless Monday
Recipe Type: vegetarian salad
Author: Confessions of A Mother Runner
Prep time: 1 hour
Cook time: 10 mins
Total time: 1 hour 10 mins
Serves: 6
Tempeh Rice Noodle & edamame salad-vegetarian, vegan & GF
Ingredients
  • Tempeh Marinade:
  • 1/4 C rice vinegar
  • 4 tbl red sodium soy sauce (or gf substitute)
  • 1 tbl chili garlic paste
  • 1 tsp garlic chopped
  • 1 tsp of ginger paste or fresh ginger
  • 1 package of Tempeh-cut into bite size chunks
  • Salad:
  • 1 package of Rice Noodles-cook according to directions, rinse with cool water and drain
  • 1 c edamame
  • 2 c red & yellow peppers quatered
  • 1/3 c sesame oil
  • splash Ponzu
  • siracha to taste
  • 1 tsp ginger paste & garlic chopped
  • sesame seeds and cashews to garnish
Instructions
  1. Bring a small pot of water to a boil, drop in Tempeh and simmer for 10 min
  2. Remove from heat and drain
  3. Pour marinade over top and refrigerate for at least 1 hr.
  4. Meanwhile:
  5. Cook Rice Noodles according to package, drain and cool
  6. Add in edamame and peppers
  7. Saute Tempeh on medium heat to carmelize the marinade and brown each side
  8. Add marinated Tempeh with the left over marinade to salad
  9. Dressing:
  10. Combine sesame oil, ponzu, siracha, giner & garlic and pour over top
  11. Garnish with sesame seeds and cashews
  12. Serve room temperature
Notes
Can be served room temp or chilled. Makes a great left over salad for lunch

    Yum, this looks great! I love tempeh, I like to fry it up with a bit of soy sauce and paprika and make “fakin’ bacon” haha. I love how you’ve marinated the tempeh in this recipe, I haven’t tried doing that yet, will try that the next time I cook some up 🙂

    I have never tried tempeh. The dish looks like something you would order out though…very tasty! I don’t know about all the prep time…1 hr seems like a lot.

      It is only 1 hour bc you need to marinate the tempeh. If you can do that in advance the rest is a snap.

      It’s a more chewier texture than tofu but similarly it will pick up the taste of any sauce. Hope you give it and try and let me know what you think.

    I’ve had mixed results win tempeh. I think I like seitan better? Honestly can’t remember!

    I used to love tempeh! You could get it nice and crispy on the outside. I stay away from it since finding out I’m allergic to wheat, but it used to be one of my favorite vegetarian protein sources.

      It is a great protein source sorry you can’t eat it anymore. You could make this with tofu as well.

    I would NEVER have guessed that wasn’t meat! It’s a beautiful dish. I’m sitting at work drooling at my screen! I’ve never had Tempeh before but this looks so good, and that nutritional value is awesome, I might just have to try it!

    This looks so good!! Yes I tend to go more tofu then tempeh just because I feel the overload of “grains” with it when I add it to some dishes. I do love it in some recipes though and have to say tempeh bacon is so good! I was trying to perfect making it last year for my oldest daughter as she always said she wanted to be a vegan or vegetarian that ate bacon. I think she could do it though if she wanted as we have found things like Maple Bacon Popcorn to get that craving…. but we are really striving to find a balance for the whole family this year as they really did well with me be vegan (no longer vegan) and we all have different “diets” but really I think after last year we can all be flexible and it will be good for all of us to find a “common ground”.

      ha we should talk. As the only vegetarian here, I often make 2 or 3 meals a night. It’s ridiculous and I almost fell over when my daughter told me she wanted to go paleo. Just help me know-LOL

        Yes! That poses an interesting challenge. In the past I would make a vegan dish and have meat to add for the 1-2 people in the house that would want it to add after a couple times a week. Or make something they would all like that I wouldn’t eat when I am gone or had something else I could whip up or make that didn’t take much. Over the last year my diet restrictions have changed drastically so it makes it a little easier but still trying to make things we all will eat with minimum alteration to meet everyone’s needs. With my husband working out and marathon training, my oldest running and doing traveling soccer (which is 3-4 nights a week), and my youngest being a gymnast and running in the summer, plus my HIIT/cross training and running and trying to get all our needs met I feel sometimes I need a big chart! I feel like we get it down and are running smoothly and then something changes.

    YUM! This looks amazing! I’ve been wanting to eat a little bit less meat as of late! Great recipe! I have rice noodles that I need to cook up! Love the nuts on top! …and 18 grams of protein in a vegan recipe!! SO good!

    I have never tried Tempeh. To be honest I had never even heard of it before reading this post. The recipe sounds delicious so I am going to have to put this on my to try list.

      So usually it is right next to the tofu in the refrigerated section. In my store it is in the produce section. Just ask if you don’t see it!

      They are available in the asian section of any grocery store. You could also use regular noodles as well. Hope you give them a try!

      I think that boiling it first allows it to soften up and then absorb the sauce better. Good luck with it!

    Tempeh is one of my favorite “meat substitutes” (though not marketed as one, I suppose). I love the consistency and nutty flavor. We use it a lot in our house!

    I like tempeh but have never tried to prep it. I just now got to the point where I feel I can prep tofu okay. I really should try some more since I want to get more meatless meals in the mix again.

    I’ve tried Tempah a couple of times. Admittedly, I’m not a fan but with so many great recipes out there, I think I need to give it another shot.
