Happy Meatless Monday! I made this fabulous Tempeh Rice Noodle salad for our Super Bowl party and it was a big hit. I’d love to share it with you. Please join Tina Muir and I for the Meatless Monday linkup. Check out some new blogs and feel free to add your own links as well.
I was a little afraid to experiment with Tempeh but now that I have, I am loving it. It’s a nutritional powerhouse! One serving of Tempeh has:
- 18 grams of Protein .
- Zero sugar
- 1 gram of saturated fat
- low sodium
- 5. High potassium
- low calorie (140 c)
- Great source of iron
One of the tricks I used with the Tempeh was to boil it, then simmer for 10 minutes followed by marinating it. This really improved the texture and allowed the marinade to saturate.
- Tempeh Marinade:
- 1/4 C rice vinegar
- 4 tbl red sodium soy sauce (or gf substitute)
- 1 tbl chili garlic paste
- 1 tsp garlic chopped
- 1 tsp of ginger paste or fresh ginger
- 1 package of Tempeh-cut into bite size chunks
- Salad:
- 1 package of Rice Noodles-cook according to directions, rinse with cool water and drain
- 1 c edamame
- 2 c red & yellow peppers quatered
- 1/3 c sesame oil
- splash Ponzu
- siracha to taste
- 1 tsp ginger paste & garlic chopped
- sesame seeds and cashews to garnish
- Bring a small pot of water to a boil, drop in Tempeh and simmer for 10 min
- Remove from heat and drain
- Pour marinade over top and refrigerate for at least 1 hr.
- Meanwhile:
- Cook Rice Noodles according to package, drain and cool
- Add in edamame and peppers
- Saute Tempeh on medium heat to carmelize the marinade and brown each side
- Add marinated Tempeh with the left over marinade to salad
- Dressing:
- Combine sesame oil, ponzu, siracha, giner & garlic and pour over top
- Garnish with sesame seeds and cashews
- Serve room temperature
Have you tried Tempeh? What do you think?
Kyra @ Vie De La Vegan says
Yum, this looks great! I love tempeh, I like to fry it up with a bit of soy sauce and paprika and make “fakin’ bacon” haha. I love how you’ve marinated the tempeh in this recipe, I haven’t tried doing that yet, will try that the next time I cook some up 🙂
Deborah Brooks says
Thanks! I think that really helps the tempeh to soak up the flavor. Hope you give it a try.
[email protected] says
I have never tried tempeh. The dish looks like something you would order out though…very tasty! I don’t know about all the prep time…1 hr seems like a lot.
Deborah Brooks says
It is only 1 hour bc you need to marinate the tempeh. If you can do that in advance the rest is a snap.
Megan @ Skinny Fitalicious says
I’ve never had tempeh. What does it taste like? I love the recipe! Anything Asian I adore.
Deborah Brooks says
It’s a more chewier texture than tofu but similarly it will pick up the taste of any sauce. Hope you give it and try and let me know what you think.
susie @ suzlyfe says
I’ve had mixed results win tempeh. I think I like seitan better? Honestly can’t remember!
Deborah Brooks says
I haven’t done much with seitan but I believe they are quite similar. I will check it out!
tina muir says
Ahhhh this sounds like exactly my kinda meal….and I think we were on a similar wavelength this week! Yum! I love tempeh!
Deborah Brooks says
It turned out great! Happy Meatless Monday!

Great check it out and let me know what you think!
Meg Bollenback says
Ditto – have never tried to boil tempeh before! Will have to try that out and this recipe. Looks very fresh!
Deborah Brooks says
You have to try it!
Pragati // Simple Medicine says
At first, the texture of tempeh weirded me out, but I like it! I love Asian inspired dishes and this one looks so good!
Deborah Brooks says
It took some getting used to for me too but now I really like it.
Carly @ Fine Fit Day says
Noodle anything is a winner in my book! I’ve never tried cooking tempeh before. Thanks for hosting another great link up! 🙂
Deborah Brooks says
Thanks! Tempeh is a great protein source hope you give it a try. I love rice noodles too!
Nicole @ Fitful Focus says
I used to love tempeh! You could get it nice and crispy on the outside. I stay away from it since finding out I’m allergic to wheat, but it used to be one of my favorite vegetarian protein sources.
Deborah Brooks says
It is a great protein source sorry you can’t eat it anymore. You could make this with tofu as well.
Margo says
Looks yummy!
Deborah Brooks says
Thanks hope you give it a try!
Amanda (@mommygorun) says
I would NEVER have guessed that wasn’t meat! It’s a beautiful dish. I’m sitting at work drooling at my screen! I’ve never had Tempeh before but this looks so good, and that nutritional value is awesome, I might just have to try it!
Deborah Brooks says
I think you must try it! Glad I made you hungry 🙂
Annmarie says
I have to be completely honest…I’ve never tried tempeh before. I’ve always been kind of afraid too! 😛
Deborah Brooks says
Ha you afraid?! No way-go out and get some immediately 🙂
Sarah says
This looks so good!! Yes I tend to go more tofu then tempeh just because I feel the overload of “grains” with it when I add it to some dishes. I do love it in some recipes though and have to say tempeh bacon is so good! I was trying to perfect making it last year for my oldest daughter as she always said she wanted to be a vegan or vegetarian that ate bacon. I think she could do it though if she wanted as we have found things like Maple Bacon Popcorn to get that craving…. but we are really striving to find a balance for the whole family this year as they really did well with me be vegan (no longer vegan) and we all have different “diets” but really I think after last year we can all be flexible and it will be good for all of us to find a “common ground”.
Deborah Brooks says
ha we should talk. As the only vegetarian here, I often make 2 or 3 meals a night. It’s ridiculous and I almost fell over when my daughter told me she wanted to go paleo. Just help me know-LOL
Sarah says
Yes! That poses an interesting challenge. In the past I would make a vegan dish and have meat to add for the 1-2 people in the house that would want it to add after a couple times a week. Or make something they would all like that I wouldn’t eat when I am gone or had something else I could whip up or make that didn’t take much. Over the last year my diet restrictions have changed drastically so it makes it a little easier but still trying to make things we all will eat with minimum alteration to meet everyone’s needs. With my husband working out and marathon training, my oldest running and doing traveling soccer (which is 3-4 nights a week), and my youngest being a gymnast and running in the summer, plus my HIIT/cross training and running and trying to get all our needs met I feel sometimes I need a big chart! I feel like we get it down and are running smoothly and then something changes.
Deborah Brooks says
Oh wow! Yes you do have a lot going on. I feel like a short order cook at times around here.
Elle says
Have never tried tempeh and have always been a bit leery of it… fear of the unknown, I guess! 🙂
Deborah Brooks says
Don’t be afraid of Tempeh! Lol it’s really good.
Cailee says
YUM! This looks amazing! I’ve been wanting to eat a little bit less meat as of late! Great recipe! I have rice noodles that I need to cook up! Love the nuts on top! …and 18 grams of protein in a vegan recipe!! SO good!

Thanks hope you enjoy it!

Maybe I missed this in your post, but where can I find Tempeh? Like, where actually in a grocery store?
MB
Deborah Brooks says
So usually it is right next to the tofu in the refrigerated section. In my store it is in the produce section. Just ask if you don’t see it!

I do not know about these noodles- is this like a specialty store item? You make it all look like fun! and I love edname!
Deborah Brooks says
They are available in the asian section of any grocery store. You could also use regular noodles as well. Hope you give them a try!
Diatta @ Femme Fitale Fit Club says
What does tempeh taste like? It looks like meat.
Deborah Brooks says
It is like a crunchier more textured tofu kind of hard to describe. Really healthy though!
MCM Mama says
I like Tempeh, so this salad looks yummy. (I know, it’s shocking, but sometimes I do eat non-meat options. LOL)
Deborah Brooks says
Ha shocking yes! Tempeh is a nice change sometimes and the texture is more satisfying than tofu.
Sam @ PancakeWarriors says
I’ve never had luck with temph but I can’t wait to try your method!! So excited because I wrote it off when I couldn’t get a good texture. Thanks for sharing!!
Deborah Brooks says
I didn’t like it when I first tried it. I had to play around with the prep a little myself. I hope you give it a try!

I have never tried Tempeh, but loving all the nutrients packed into it! I will give it a try – thanks!!
Deborah Brooks says
Really is a nutritional powerhouse and really satisfying.
jill conyers says
I’ve tried cooking tempeh but haven’t had a lot of luck. I’m going to try again with your recipe.
Deborah Brooks says
I think that boiling it first allows it to soften up and then absorb the sauce better. Good luck with it!
RFC says
Tempeh is one of my favorite “meat substitutes” (though not marketed as one, I suppose). I love the consistency and nutty flavor. We use it a lot in our house!
Deborah Brooks says
It is a great meat substitute and a lot more tasty than tofu.
Rachel says
Seriously. Can you come over to my house and cook for me!? (Oh yeah, my family too). Yet another fantastic mouth watering recipe! 🙂
Deborah Brooks says
Ha thanks! If you lived closer I certainly would. How much fun would that be!?
Jess @hellotofit says
OMG this recipe looks so yummy! I’ve never cooked with tempeh, but if it’s not so complicated, I’ll have to try making this recipe. Thanks for sharing, Deborah!!
Deborah Brooks says
It’s not too complicated you can do it!!
Erica G says
I like tempeh but have never tried to prep it. I just now got to the point where I feel I can prep tofu okay. I really should try some more since I want to get more meatless meals in the mix again.
Deborah Brooks says
It’s not really that scary-you can do it!
Stephanie (@FitMomTraining) says
I’ve tried Tempah a couple of times. Admittedly, I’m not a fan but with so many great recipes out there, I think I need to give it another shot.
Deborah Brooks says
I didn’t like it at first either. I think how you prepare it really makes a difference. Hope you try it this way and let me know what you think.
