Sweet Potato & Zucchini Latkes-Meatless Monday

Welcome to another Meatless Monday link up! Throughout the month of December, I will be bringing you Holiday Favorites made healthier. Everyone loves the Hanukkah favorite, Potato Latkes. I’ve made them a little healthier by reducing the oil and swapping in sweet potatoes and zucchini.

Meatless Monday|vegetarian

The traditional Potato Latke contains lots of white potatoes, white flour and oil. Not so healthy of a choice these days. I’ve subbed in Sweet Potatoes and Zucchini and used whole wheat bread crumbs and whole wheat flour and reduced the oil. I added some Chipotle peppers to spice it up a bit. They were amazing! (much better than the pictures). I ended up eating the leftovers with an omelet the next morning in a hash brown style. They were perfect. Hope you give them a try.

Sweet Potato & Zucchini Latkes-Meatless Monday
Cuisine: Holiday

Prep time: 15 mins
Cook time: 20 mins
Total time: 35 mins
Serves: 4-6
A healthier twist on a Holiday favorite
Ingredients
  • 1 small onion
  • 2 Zucchini
  • 2 Sweet Potatoes (peeled)
  • 2 Chipotle peppers in Adobe sauce (w 2 tsp of sauce)
  • 2 eggs slightly beaten
  • 1 cup Whole Wheat Panko bread crumbs
  • 2-3 Tbl of whole wheat flour
  • salt, pepper, garlic powder to taste
  • Olive Oil for cooking
Instructions
  1. In a food processor: shred onion, zucchini, chipotle and sweet potatoes
  2. Transfer to a mixing bowl
  3. Add eggs, panko and flour as needed
  4. Add salt, pepper and garlic powder
  5. Shape into patties and arrange on a plate
  6. Heat a large skillet to medium high with Olive Oil (enough to cover bottom of pan)
  7. Pan fry the Latkes until browned and flip to repeat
  8. Remove from heat and place on paper towels to absorb any excess oil
  9. Serve warm and enjoy

 These turned out incredible! I tried them topped with avocado and Greek yogurt-yum! I also served them with my omelet the next morning for a delicious breakfast.

    I don’t normally eat potato pancakes for the reason that they are not healthy. But this sounds like a great alternative to that.

      I don’t normally eat them either but if you watch the oil they can be healthy and delicious

    No joke, I was just thinking about making latkes with sweet potato yesterday, I just wish that zucchini was at a better price. Here in Chicago it is $$$$

      really zucchini is expensive there? I don’t think it is here. I believe I paid around $3 for 2 large ones. Funny how that is

    Great idea adding the chipoltle peppers. These sound really good. My mother-in-law made a vegan soup which was a tomato base and used white beans pureed to thicken it. If I can get the recipe, I will share it. It was really good!

    Yum! I’ve done zucchini or sweet potato latkes but never mixed the two together. It sounds delicious.

    Yeah for Hanukkah– I can’t believe how soon it is! I am getting lazy this year and bought the frozen Trader joes– they are pretty good and do the trick when you have to make a party for the family… I’m cutting myself slack as I’ll be 32 plus weeks pregnant at that point

      Slack is in order in deed for you! I don’t have that excuse to use so I think I am making my own. 🙂 These were great but my kids would never eat them if they had zucchini.

    This post is timely and too funny. Just 2 days ago my sister was telling me she still had a butt load of zucchini she wanted to use for somethings besides bread before it all goes bad. She also said she had a bunch of sweet potatos because she loves Yams at Thanksgiving and bought too many.

      gosh I have no idea whether there is a trick! My grandma would probably say yes and be mortified that I messed up her recipe. They are good though

    Sounds like a great combo! One of the featured recipes this week on the Weight Watchers website is Santa Fe Sweet Potato & Zucchini Latkes! Their version is different. They use low-fat Mexican style cheese, cilantro, and chili for flavoring.

        They did, and she also made the most amazing knishes…but you probably wouldn’t like those since there is meat in them. I wish I had gotten her recipes before she passed away last year.
