    • I am loving all of the ripe, juicy summer fruits and veggies available right now. Sure strawberries are available all year round but they have been so juicy and sweet lately that my family is just plowing through them. I decided to create a fun, light and fruity dessert for you all this week.
    • You may have seen my post a few weeks ago where I mentioned a new product, BK Creamery Extra Thick Double Cream. Since I had some in my fridge, I wanted to see what I could make with it. If it were colder out, I would throw it into a soup or stew to make it more hearty. My kids were looking for some sort of fun, healthy dessert so we decided to make our own whipped cream with it. We added in a little vanilla and banana extract and boom this was delicious! The banana extract gave it a great flavor. Here’s what we came up with hope you enjoy as much as we did.

I am loving all of the ripe, juicy summer fruits and veggies available right now. Sure strawberries are available all year round but they have been so juicy and sweet lately that my family is just plowing through them. I decided to create a fun, light and fruity dessert for you all this week.

You may have seen my post a few weeks ago where I mentioned a new product, BK Creamery Extra Thick Double Cream. Since I had some in my fridge, I wanted to see what I could make with it. If it were colder out, I would throw it into a soup or stew to make it more hearty. My kids were looking for some sort of fun, healthy dessert so we decided to make our own whipped cream with it. We added in a little vanilla and banana extract and boom this was delicious! The banana extract gave it a great flavor. Here’s what we came up with hope you enjoy as much as we did.

Strawberry Shortcake with Banana Cream
Recipe Type: Dessert
Author: Confessions of A Mother Runner
Prep time: 15 mins
Total time: 15 mins
A light fruity dessert made with BK Creamery Double Cream that you can whip up in minutes
Ingredients
  • For Banana whipped cream:
  • 9 oz container of BK Creamery Extra Thick Double Cream
  • 2 tbl sugar (or sugar substitute of your choice)
  • 1 tsp vanilla extract
  • 1 tsp banana extract
  • For shortcake:
  • 4 indiv sized sponge cake dessert shells (or larger cake cut into slices)
  • 1 pint strawberries (washed & thinly sliced)
  • 1/2 cup of chocolate chips
Instructions
  1. In a mixing bowl at high speed
  2. whip Extra Thick Double Cream for 2-3 min until light & fluffy
  3. Add in vanilla & banana extract to combine
  4. Chill for 30 min
  5. Assemble the shortcake
  6. Layer the sponge cake
  7. spoon in the whipped cream
  8. add strawberries
  9. repeat layer
  10. end with a sprinkle of chocolate chips

    It really feels like summer! This looks so delicious! The strawberries are so incredible everywhere right now – I will have to try this.
    I love making my own whipped cream!!
    Favorite summer dessert – I would have to say peach cobbler in the month of July.

    It’s gotten so hot so quickly here where I live (after a glorious May) that it feels like the middle of summer. It’s supposed to be around 103 today! This dessert looks perfect for a hot weather treat,

    I love the banana whipped cream idea! My dad always requests strawberry shortcake or angel food cake with strawberries for his birthday. I think I will have to suggest that we add these other elements this year!

    I never think to have banana extract on hand, but honestly, it seems pretty genius after reading this recipe! Looks delicious. I love anything with berries and whipped cream (or double cream) in the summer.

    Oh my yum!!! We brought Strawberry Shortcake to a friends last night for a grill out. I love it but it was one of those things that I forgot just how much I love it! Simply delicious!

    So that is a funny question… I grew up with homemade whipped cream and I always made it so it was funny for me when I first saw canned whip cream or when my oldest first saw it too. It made me think of things we do that may be different than her friends or others because her reaction was so funny. I’m not a cool whip person. I use to have a half gallon of organic heavy whipping cream in the fridge more often than not until I went vegan, than it was only during the holidays for others or when I would bring desserts places as coconut whip cream took a little more notice and not everyone is a fan of. I started adding dairy back in last fall when in Ireland and am ok with some. My oldest now having more issues with dairy so one of my “treats” or times I deal with the tummy ache is for homemade whipped cream. I’m not a fan of it at coffee shops or restaurants but every few months or for sure during the holidays I will whip some up as the family enjoys it. I do enjoy Coco Whip only for convenience and straight out of the freezer and now try to always have a box of culinary coconut milk in the fridge “just in case”. Oh and one of those charged whipped cream dispensers from William Sonoma has been on my list for a few years now. I would have broke down and bought one by now but other gadgets seem to pop up or trump it. Someday.

      Ha I forgot about those dispensers from william Sonoma but I don’t even think you need them bc it is so easy to whip it up in 5 minutes. The banana extract was fabulous

    My mom used to make strawberry short cakes when I was growing up. SO yummy! I haven’t had them in such a long time now.
    I’ve made my own whipped cream using coconut milk instead of cream – just as delicious!

    I love cherry pie and all kinds of shortcakes. And trifles. You can never go wrong with a nice trifle.

    I do tend to make my own whipped cream. And pastry cream. So good.
