Happy Meatless Monday! Wow hard to believe that we are already into August. When it is this hot out, I typically go for lighter dinners that often do not involve cooking too much. I came up with this recipe as a kind of healthier twist on a traditional Waldorf Salad by spiralizing the apples and serving them in lettuce wraps with walnuts, blue cheese & beets. I think it’s perfect for a light lunch or side dish for dinner or bbq. By the way if you don’t have a veggie spiralizer yet, what are you waiting for?? I love this one.
While my friend Tina is off and running to the altar these next few weeks, I have Debbie (Coach Debbie Runs) co hosting with me today. The 2 Debs! Please make sure to jump over and check out her recipe as well.
I recently had the opportunity to do an Olive Oil & Vinegar tasting with the fabulous Cary owner of AhLoveOil & Vinegar. She has 3 locations in the Washington, DC area as well as mail/phone orders so don’t feel left out.
I have been a fan of good quality flavored olive oils and vinegars for a while now but had no idea about all of the classifications and production of olive oil. It was fascinating really to have the opportunity to taste so many different flavor combinations and learn, from Cary, how to pair them with foods. If you have ever done a wine tasting, it is very similar. We discussed the process of making extra virgin olive oil as well as the health benefits. She explained to me how different the olive oil is that you might find in your grocery store. Find more info on choosing olive oil here.
After tasting so many yummy flavors, I settled on a Lemon olive oil and Green Apple white balsamic vinegar and set out to create a fun easy recipe using them. My version of Waldorf Lettuce wraps was a perfect compliment. You can use any good quality balsamic or olive oil for this recipe however it’s really fun to cook with the flavored ones. Hope you enjoy!

- 4-6 lettuce wraps
- 1 Granny Smith apple
- 1 red of apple of your choice
- 4 oz of walnut pieces (unsalted)
- 4 oz good quality blue cheese
- 2 cooked beets cut into quarters (can use pre packaged-cooked)
- salt & pepper to taste
- 1-2 Tbl of Lemon Olive Oil
- 3 Tbl Green Apple white Balsamic vinegar ( or sub white balsamic of your choice)
- juice of 1/2 lemon or lime to keep apples from browning
- Wash & arrange lettuce wraps on platter & set aside
- Spiralize the apples and add to mixing bowl
- squeeze juice of lemon or lime onto apples
- Drizzle in olive oil and vinegar
- Add a pinch of salt and pepper and combine
- Add in walnuts and blue cheese
- Spoon into lettuce wraps
- top with cubed beets
- Chill for 30 min or serve immediately
Thanks again to Carey for letting me sample all the wonderful oils & vinegars with her. If you have questions, please check out her site.
Flavored Oils & Vinegars -what do you think? Spiralized apples?
Were you talking directly to me about the spiralizer?? I don’t know what I’m waiting for, and definitely need to check one out! This looks great! So interesting all the different flavored olive oils must be.
The spiralizer is a must have it’s fun to use! 🙂 The flavored olive oils are a game changer
Oooh love the idea of a waldorf salad in a lettuce wrap! Looks so good! 🙂
It was yummy! Thanks 🙂
Waldorf salads are amazing but I always forget about them. We have an olive oil place that just opened in our town, I have to stay away because I will eat 3 pounds of bread sampling them all. I do like trying all the different flavors though and who knew there were so many different kinds? Looks like fun Deborah!
The flavored oils can really up your salad game!
There is a place in NYC’s Chelsea Market that has the most incredible flavored vinegars. I could spend YEARS in there!
It can really up your cooking game to change the flavors with olive oils and vinegars. I spent a long time tasting them all too!
That salad looks fantastic! I love that store! So wild to taste all the flavors of vinegar and olive oil,
It really is amazing how they can change the flavor so much!
We did some olive oil and vinegar tasting when we toured the Jacuzzi Family winery back in June. There were some really good varieties. That combination of aples, beets, blue cheese sounds amazing!
It’s a great combo hope you give it a try!
Spiralized apples? I’m so doing that!
You must!!
The two Debs! I like it! I never would have thought of spiralizing apples! What a great original way to make this salad.
It just sort of came to me but I loved it when I tasted it. Fun to have you helping out today 🙂
Yummy! I’ve been all about spiralizing lately!
I’m also a huge fan of good olive oil. Makes a huge difference when you cook.
Me too! It’s fun and yes the flavored oils are a game changer
Looks really delicious and I like the idea of the salad wraps. So light and perfect for Summer!
They are great for summer! Thanks
I love trying different flavored vinegars to use in my salad dressings and other recipes. It would be great to do a tasing of them. Next time I’m in the DC area visiting my family I’ll have to check out AhLoveOil & Vinegar.
I hope you do have time to stop in!
This sounds so good! And a healthier version too! It is fun to do the olive oil tastings – lots to learn ! I need one of those spiralizer gizmos! Excited to link up today!
Oh yes you do need need a spiralizer asap!! 🙂
We did a lot of oil and vinegar tastings at Pike Place Market while we were in Seattle last month. Its amazing how many delicious flavors and varieties there are out there!
I know they can really change the taste and flavor so much!
This looks great. I still need a spiraling looks like you can make so great recipes with it.
Oh you definitely need one asap! You can do so much with it
When I first got my spiralizer I used it all of the time, but now it sits in the garage storage cabinet, because our cupboards are so small there is no room to store it. I really need to drag it out and make some of these yummy recipes I keep seeing!
yes you do!!
DELICIOUS! Thanks so much for sharing : ) Have a fabulous week!!
Thanks hope you give it a try
Oh man I love the idea of spiralizing apples! I’m guessing you have the one with the handle and attachments? I have a rinky dinky little hand held one and not sure it will work. Flavored oils and vinegars rock right? They had a similar shop in the Chelsea Market I would frequent often. Next, I want to actually leave olive oil and try macadamia nut oil – people rave about it and say it tastes like butter!!
yes I have one with the handle it’s great. I have a link to it on the page. It’s my favorite. I love the olive oils too!
Oh I missed it!! Thank you – I’ve been thinking about investing in a good one so I’m glad to hear you like this one.
I love it!!
I don’t own a spiralizer … yet. But I think I definitely need to get one soon. I love all of the zoodle recipes I keep seeing this summer and a spiralized apple sounds great!
They are so good! Yes you need one I put a link to the one I like. It’s amazing the things you can do with them!
I keep meaning to buy a spiralizer!! Which one do you recommend?
I love my Paderna one. I have a link to it in the post. Super easy to use.
Oh, yum. Anything with beets is my favorite!
I love beets too!
What a fun twist on lettuce wraps. I had no idea there were so many options and as I’ve said in weeks past, you make meatless meals actually look yummy 😉
ah that’s so sweet! Thanks and hope you like it
Love this idea! My mom and grandma always make waldorf salad. It is one of those salads I could eat a whole big bowl of (well depending on who makes it and how it is made as I sometimes could get a bad tummy ache). What a fun idea to turn it into lettuce wraps for those nights the family says, salad again?!? Of course I am lucky, really lucky, and they rarely say that!
thanks I thought it was a nice “twist” 🙂
Your blog has such a homely feel to it.
I am hoping that you mean “homey” and not “homely” 🙂
I am always in the market for a fun lettuce-wrap snack! My favorite way to enjoy a “sandwich” in a healthy.
they are great aren’t they?!
I got a few flavored oils last December as a gift and LOVED them! One was blood orange – nom!
Ooh that sounds great too!
Oooh, I love the healthier twist on the Waldorf! Spiralized apples sound so good, especially to give the wrap a crunchy texture!
It’s a great crunchy texture hope you enjoy!
This looks really tasty. I’m not a blue cheese girl, but I will swap it out with another tasty flavor. Thanks!
Definitely could swap with another cheese and it would be delish!
Flavored olive oils are so much fun. We enjoyed some really great infusions in Italy.
They are great for cooking and salads!
What a great idea! I love spiralizing things. It just seems to make a meal more fun!
It does doesn’t it!
This is such a great idea!! I love Waldorf salads, but I never thought to use my spiralizer to make them! Can’t wait to try this 🙂
Super easy and fun to make. Hope you enjoy and thanks for stopping by today
Ok so the olive oli and vinegar alone sound like something I would bathe in. Seriously, I have an obsession with fruit flavored vinegar, call me crazy. But then you put it on a lettuce wrap with walnuts and beets. Yeah I’m coming over for dinner, make me like 10 🙂
I know they are so good! Now that would be fun if you came for dinner-anytime!!
I HAVE to get a spiralizer. I’m clicking on your link as soon as I post this comment.
The link doesn’t work!
oh no really! I will try to fix it
LOL oh yes you do!
Absolutely YES to spiralized apples! I do it all of the time! This looks delicious!
Thanks so much!
Great recipe idea for using the spiralizer. Lemon olive oil sounds amazing.
I love the flavored olive oils and vinegars
The wraps look so good, and Lemon olive oil and Green Apple white balsamic vinegar sound like fantastic additions 🙂
They were a great combo for sure!
I can taste that lettuce wrap through the screen. It looks fabulous!!!
thanks friend!
What a great idea! Spiralized apples, this I must try!
I think you will like them!
Mine will have no beets (they are the only veggie I don’t like), but I may have to find my spiralizer and try these!
I do remember you saying that I think you could throw in any other veggie and it would work
This version looks delicious and very pretty! The Waldorf salad I had growing up had mayonnaise dressing and I was not a fan.
I love the idea of using beets!
Same with me so I set out to make a healthier version
Yum! This looks delicious! 🙂 I love it.
Thanks hope you like it!
I love trying new oils and vinegar and this salad sounds amazing! 😀
You always have the most delicious sounding dishes on Meatless Monday.
Well thanks friend!
YES! I just got a spiralizer yesterday! So excited. 😀

Spiralized apples sound awesome! I’ve only ever spiralized zucchini. I’ve also never been to a specialty oil/vinegar store. Sounds delicious 🙂

Delish! A totally new spin on lettuce wraps! I’m in!! 🙂
Thanks! I think you would love them so easy to make
Never would have thought to spiralize apples – this looks delicious! I have really only spiralized zucchini, I clearly need to try other things out!
yes you do!!
Olive oil with lemon and vinegar sounds divine. I love eating salads and, now and pagan, I’ll try making a wrap. I’m definitely going to give your salad recipe a try. Yum. 🙂
