Spiralized Waldorf Lettuce Wraps

    • Happy Meatless Monday! Wow hard to believe that we are already into August. When it is this hot out, I typically go for lighter dinners that often do not involve cooking too much. I came up with this recipe as a kind of healthier twist on a traditional Waldorf Salad by spiralizing the apples and serving them in lettuce wraps with walnuts, blue cheese & beets. I think it’s perfect for a light lunch or side dish for dinner or bbq. By the way if you don’t have a veggie spiralizer yet, what are you waiting for?? I love this one.

I have been a fan of good quality flavored olive oils and vinegars for a while now but had no idea about all of the classifications and production of olive oil. Waldorf Lettuce Wraps
Recipe Type: Vegetarian lunch or dinner side
Author: Confessions of A Mother Runner
Prep time: 10 mins
Total time: 10 mins
Serves: 2-3
A healthy twist on a Waldorf salad with spiralized apples, walnuts and blue cheese in a lettuce wrap.
Ingredients
  • 4-6 lettuce wraps
  • 1 Granny Smith apple
  • 1 red of apple of your choice
  • 4 oz of walnut pieces (unsalted)
  • 4 oz good quality blue cheese
  • 2 cooked beets cut into quarters (can use pre packaged-cooked)
  • salt & pepper to taste
  • 1-2 Tbl of Lemon Olive Oil
  • 3 Tbl Green Apple white Balsamic vinegar ( or sub white balsamic of your choice)
  • juice of 1/2 lemon or lime to keep apples from browning
Instructions
  1. Wash & arrange lettuce wraps on platter & set aside
  2. Spiralize the apples and add to mixing bowl
  3. squeeze juice of lemon or lime onto apples
  4. Drizzle in olive oil and vinegar
  5. Add a pinch of salt and pepper and combine
  6. Add in walnuts and blue cheese
  7. Spoon into lettuce wraps
  8. top with cubed beets
  9. Chill for 30 min or serve immediately

    Waldorf salads are amazing but I always forget about them. We have an olive oil place that just opened in our town, I have to stay away because I will eat 3 pounds of bread sampling them all. I do like trying all the different flavors though and who knew there were so many different kinds? Looks like fun Deborah!

    There is a place in NYC’s Chelsea Market that has the most incredible flavored vinegars. I could spend YEARS in there!

    We did some olive oil and vinegar tasting when we toured the Jacuzzi Family winery back in June. There were some really good varieties. That combination of aples, beets, blue cheese sounds amazing!

    When I first got my spiralizer I used it all of the time, but now it sits in the garage storage cabinet, because our cupboards are so small there is no room to store it. I really need to drag it out and make some of these yummy recipes I keep seeing!

    Oh man I love the idea of spiralizing apples! I’m guessing you have the one with the handle and attachments? I have a rinky dinky little hand held one and not sure it will work. Flavored oils and vinegars rock right? They had a similar shop in the Chelsea Market I would frequent often. Next, I want to actually leave olive oil and try macadamia nut oil – people rave about it and say it tastes like butter!!

    I don’t own a spiralizer … yet. But I think I definitely need to get one soon. I love all of the zoodle recipes I keep seeing this summer and a spiralized apple sounds great!

    Love this idea! My mom and grandma always make waldorf salad. It is one of those salads I could eat a whole big bowl of (well depending on who makes it and how it is made as I sometimes could get a bad tummy ache). What a fun idea to turn it into lettuce wraps for those nights the family says, salad again?!? Of course I am lucky, really lucky, and they rarely say that!

    Ok so the olive oli and vinegar alone sound like something I would bathe in. Seriously, I have an obsession with fruit flavored vinegar, call me crazy. But then you put it on a lettuce wrap with walnuts and beets. Yeah I’m coming over for dinner, make me like 10 🙂

    This version looks delicious and very pretty! The Waldorf salad I had growing up had mayonnaise dressing and I was not a fan.
