Spinach and artichokes is a flavor combo that works so well in a dip that I had to carry it over to this breakfast casserole. With just a few simple ingredients, you can have a tasty, healthy casserole in no time. While I am calling it a breakfast casserole, I have now eaten it for lunch and dinner paired with a salad. That is my kind of versatility.

This easy meal comes together with 5 simple ingredients:
10 eggs
Low fat Cottage cheese
Low fat cream cheese
fresh spinach
canned artichokes
Why cottage cheese?
Low fat cottage cheese packs a huge nutritional punch. One cup has 21-25 grams of protein and a nice dose of magnesium and calcium. Some brands also offer high quality probiotics. Double win! If you are someone who does not typically enjoy cottage cheese, baking it into a recipe like this one is a great idea.
I added a little low fat cream cheese to bring even more flavor and creaminess. You could leave it out but the more cheese the better for me.
How to make it
This could not be easier to get into the oven. Simply whisk the eggs and fold in the other ingredients. Pour into a casserole dish and bake for about 25 minutes. That’s it!
Can I make this casserole ahead?
Yes absolutely! This spinach & artichoke breakfast casserole can be made ahead and enjoyed all week. (Or as long as it lasts!) It is easy to warm up in the microwave.

Ingredients
- 10 eggs
- 1 C low fat cottage cheese
- 4 ounces low fat cream cheese
- 2 Cups chopped spinach
- 12 ounce can artichokes-chopped
- Salt and pepper to taste
Instructions
- preheat oven to 375 degrees
- Whisk eggs in large bowl
- Fold in all remaining ingredients
- Spray 8 x 8 or 9x12 casserole dish w nonstick spray
- Bake for approx 25 min until eggs are set
- Serve warm
