Spicy Sesame Hoisin Corn & Skinny Mexican Corn

    • Happy Meatless Monday! I don’t know about you all but I am loving how good corn is right now. It’s so sweet & juicy and yum I could eat it everyday. I’ve been exploring with different spices and preparations the last few weeks and I am bringing you 2 of my favorites. So today you are getting 2 recipes: Spicy Sesame Hoisin corn and Skinny Mexican corn. Hope you enjoy! Corn Porn!!
    •  Cooking notes: The corn definitely tastes better if you can grill it (in  my opinion) however it can easily be cooked in a pot of salted water as well. I used the leftovers the next day in my salad yum! Also great added into a stir fry, eggs, or salsa. Bonus: you can literally prepare these in under 10 minutes.

Spicy Sesame Hoisin Corn
Recipe Type: vegetable side
Author: Confessions of A Mother Runner
Prep time: 5 mins
Cook time: 10 mins
Total time: 15 mins
Serves: 4
Adding an Asian flair to a summer classic
Ingredients
  • 4 ears of corn
  • 1/4 c Hoisin sauce
  • 1/4 c honey
  • juice of 1 lime
  • 1 tsp chili paste
  • splash of soy sauce
  • 2 tsp sesame seeds
Instructions
  1. Combine first 5 ingredients in bowl and whisk to combine-set aside
  2. Shuck and clean corn
  3. If you have access to a grill it makes for a tastier corn. Grill for approx 5 min turning halfway
  4. Corn can be boiled in salted water as well
  5. Baste cooked corn with sauce and sprinkle with sesame seeds before serving

Skinny Mexican Corn
Recipe Type: vegetable side

Prep time: 5 mins
Cook time: 10 mins
Total time: 15 mins
Serves: 4
A healthy take on Mexican street corn. All the flavor none of the guilt. Easy to make in minutes.
Ingredients
  • 4 ears of corn
  • 1/4 c of Adobo sauce (from chipotle in Adobo sauce can)
  • juice of 1 lime
  • handful of fresh cilantro-washed & chopped
  • 1/2 c of cotija or queso fresco
Instructions
  1. Shuck and clean corn ears
  2. Combine adobo, lime & cilantro set aside
  3. chop cheese and set aside
  4. Grill corn for approx 5 min on each side or prepare in a pot of salted water
  5. Baste corn with marinade
  6. sprinkle on cheese and serve

    OH YUM! I LOOOVVVE corn this time of year, but always just do it plain. This is a GREAT idea! Much better! Love the sweet with the spicy combo!

    I have to say that I have never tried Mexican corn–the whole idea of putting mayo on corn? Yuck. Yours sounds delish! I may have to try it!

    Oh WOW!! I have never seen corn dressed up this nicely, only with boring butter! No grill at our condo, but maybe if we baked it under the broiler for a few after boiling this could work. I am going to give it a shot!

    Ok so corn and hoisin and honey. Yeah you should just call that heaven instead. Love this. I’ve never made an asian inspired corn and now I can’t stop thinking how good this would be!

      The Mexican one you can make with enchilada sauce instead of chipotle and it won’t be spicy.

    Holy yummm. This looks delicious! Agree that grilled corn is superior to boiled, but boiled (and even raw!) is still pretty darn good, too.

    I am so glad you posted this today. Seriously, just the other day my sister and I were talking about having a mexican corn, very similar to this that we ate at a fair a few years back and we were wondering if we could ever remember how to make it.

    In my area Jersey corn is plentiful right now. It’s been selling for 4 for $1 in the market so these recipes are definitely in my near future! Yum!!! ?

    I love grilled corn. Did you see the Mexican Corn recipe in the Washington Post this week? I think it was a kids recipe – similar but used balsamic and cheese. I keep forgetting to link up my recipe – next week!
