Happy Meatless Monday! It’s finally gotten very warm around here which means I am all about salads these days. I whipped up this easy Southwestern Pasta Salad with a Cilantro Lime Vinegarette. It’s very easy to make for a summer BBQ or make ahead lunches for the week. Please join Tina and I for this week’s linkup.
- 15 oz box of penne or pasta of your choice cooked according to package
- Rinse and cooled
- Corn from 2 ears of corn on the cob (approx 1 Cup)
- 1 C of edamame
- 1 15 oz can of black beans drained
- 2 Cups of grape or cherry tomatoes sliced in half
- 1 avocado-cut into chunks
- For Dressing:
- juice from 4 limes (about 1/4 cup)
- 1/4 cup Apple Cider Vinegar
- 1/2 tsp Kosher salt
- 3/4 Cup olive oil
- 1/2 Cup fresh cilantro
- 1 jalapeno pepper-quartered
- pepper to taste
- Place cooked pasta into large mixing bowl
- Add in black beans, edamame, corn, tomatoes & avocado
- Prepare dressing:
- In a food processor: pulse jalapeno and cilantro
- Add in lime juice, vinegar, salt, olive oil & pepper and combine
- Drizzle onto pasta salad and chill
This Southwestern Pasta is an easy to make yet very filling veggie filled protein salad. The cilantro lime vinegarette adds a little zing, is so versatile and can be used on any salad or grilled veggies. I am bringing this to my Memorial Day BBQ for sure. How about you? That looks very awesome! I’ve made something similar with quinoa, although never thought to try edamame in a southwestern dish. I may have to try this for my 4th of July party (I’m out of town – actually “in town” on Memorial Day – to watch my son Stephen compete at the Scripps National spelling bee)

So I love everything about this salad but I am most excited to try out that dressing!! Holy cow, that sounds fabulous. I was just telling Tina that I would probably add more heat to her buffalo chickpea wraps (which also look amazing), but I think the jalapeños here would be enough for me!

I LOVE that the base for this pasta salad is a vinaigrette, not mayo. That’s not to say I don’t like mayonnaise (hehe), but it’s refreshing to have something lighter. AND there’s avocado!! Yum.
I don’t like mayo either. Avocado I could eat everyday 🙂

Girl you know me too well, what time should I be over for dinner?!? I make a dish very similar to this but with quinoa and the girls haven’t been huge fans of it lately, the quinoa. I’m not sure why I didn’t think of pasta it would have been great when hubby needed to up his carbs and I bet the whole family would have loved this.
I love eating stuff like this during the summer so easy to make ahead. I wish we could have dinner together!

I am not a cilantro fan, but I would make the vinaigrette and just leave it out. The jalepeno would be tasty enough for me! Happy meatless monday!
The jalapeno is great and you could probably use a different fresh herb instead.

That salad looks really good. I truly enjoy pasta salad and when I find one that is out of this world – it is ON! I have never tasted a southwest version but would be very willing to try. YUM!
