Smokey & Spicy Butternut Squash Soup w Chipotle drizzle

Happy Meatless Monday! One thing I love about fall is a nice big bowl of soup on a chilly night. I’ve taken the traditional Butternut Squash soup and kicked it up a notch with the addition of chipotle peppers to give it a smokey, spicy goodness. Even better, I’ve added silky tofu to bump up the protein. Makes a great one dish meal with plenty leftover for lunch the next day. Smokey Butternut Squash Soup

Smokey Butternut Squash Soup w Chipotle drizzle
Recipe Type: soup

Prep time: 10 mins
Cook time: 1 hour 30 mins
Total time: 1 hour 40 mins
A smokey spicy twist on the traditional Butternut squash soup
Ingredients
  • For soup:
  • 20 ounces of Butternut Squash cubed (can buy pre packaged)
  • 3 celery stalks-chopped
  • 1 onion-chopped
  • 1 carrot-chopped
  • 2 garlic cloves
  • 1 package silky tofu
  • 32 oz vegetable stock
  • 1 tsp smoked paprika
  • 1 can of Chipotle in Adobo sauce (2 minced for soup and 1 minced for cream)
  • For Cream:
  • 1 chipotle minced
  • 2 oz Greek Yogurt
Instructions
  1. Soup:
  2. In a large stockpot add: onion, celery, garlic and carrot and saute w olive oil for 5 min
  3. Add squash, veg broth and 2 chipotle peppers, paprika, salt & pepper to taste
  4. Bring to a boil then simmer for at least one hour until squash is soft-add tofu
  5. Puree all ingredients either with an immersion blender or in batches in a blender
  6. Return to pot and add more paprika or salt if desired
  7. Chipotle Cream:
  8. puree 1 chipotle pepper and 2 oz Greek yogurt until smooth
  9. put a dollop on top of each bowl before serving

    I love butternut squash soup but have never thought of adding something spicy to it… oh my gosh, I have to try! (once I get all my kitchen things delivered lol).

    This sounds delicious! I love the smoky/spicy flavor of chipotle peppers in adobo sauce, and I can see how it would pair well with the sweetness of butternut squash. I’ll definitely try this!

    Yummm! Clearly fall is for squash we are all on the same track. This looks great. I love a little heat in my soups. I would have to skip the soy but I bet it’s great without the tofu too!

    This sounds delicious. I love some butternut squash soups but it’s often too sweet for me depending on the recipe. This one definitely sounds like it would be savory and that’s right up my alley.

    All about soups in the fall months as they are warm and I can use lots of veggies we usually have from our garden. Sadly no garden this year while we were gone most of the summer but still enjoying some soups! I will have to add this to the list.

    Sadly I couldn’t post a Meatless Monday post, well unless you consider that our shake doesn’t have meat (LOL meat shake sounds so gross) because my girls and I decided we had to post our Shake, Shake, Shake, Shake It Off Shake on the release of Taylor’s cd which I realized was a Monday and I always thought movies and cds were released on Tuesday.
