Roasted Veggie Pasta with Tomato Vinegarette

Happy Meatless Monday! It’s starting to feel a lot like spring around here this week and some of my favorite spring recipes include lots of grilled veggies. I am all about making something for dinner that I can eat for lunch the next day as well. This Roasted Veggie Pasta with tomato vinegarette is perfect for just that!

My friends over at Meatless Monday and Modern Table sent me over this (new to me) Mixed Lentil Penne to test out. It’s made from green and red lentil flour and thus is gluten free and also very high in protein (14 g per serving). They have some great options for GF and veggie lovers. Check it out here.

I mentioned that I love to make something for dinner that I can eat again and that’s what I love about this Roasted Veggie pasta salad with tomato vinegarette. This meal is great warm or cold. I had it for dinner and then the next day put it on top of spinach salad for a great post run refuel. Now that I am running more, I am looking for quality carbs to fuel my runs and help me recover afterwards. This pasta is loaded with plant based protein and carbs. You can of course use any type of pasta you choose.

Today I’ve used roasted eggplant, yellow and red peppers and tomatoes but any veggies you have in the fridge will work. It would be great with some zucchini or squash as well. I have the option of adding fresh mozzarella on top because well cheese-yum!

Roasted Veggie Pasta Salad with Tomato Vinegarette

The dressing is made out of the roasted tomatoes, balsamic and olive oil which pairs deliciously with the eggplant especially.

Roasted Veggie Pasta Salad with a Tomato Vinegarette

Roasted|veggie|vegetables|pasta|salad|tomato|vinegarette

Ingredients

  • 1 package of your favorite penne pasta
  • 1 large eggplant-cubed with skin on
  • 1 red and 1 yellow pepper-seeded and cut into bite size pieces
  • 4 oz mozzarella cheese -optional
  • 2-3 cups of cherry or grape tomatoes
  • 1/4 cup good quality balsamic
  • 1/3 cup olive oil plus more for drizzle on veggies
  • 1 tbl apple cider vinegar
  • 1 garlic clove-minced
  • 1/2 tsp mustard powder
  • salt, pepper, basil to taste

Instructions

  1. Cook pasta according to package
  2. Meanwhile preheat oven to 375
  3. Arrange veggie on baking sheet and drizzle w olive oil, salt, pepper
  4. Bake for approx 20 min until soft
  5. Place 1/2 cup of tomatoes aside & place remaining in food processor with balsamic, oil, garlic, vinegar & mustard
  6. pulse to combine and season with salt and pepper to taste
  7. Mix roasted veggies & remaining tomatoes into pasta and drizzle with dressing
  8. top with mozzarella if desired
  9. Can be eaten warm or as a salad
  10. Enjoy!

You can easily add other proteins to this salad to suit your family’s needs. Hope you enjoy!

      This one was very tasty and did not have a gritty texture of some of the others I have tried. It’s full of protein too

    Yummy!! You always make meatless Monday look so good!!! Roasted egg plant…never thought of that.

      Oh roasted eggplant is the bomb! I love to leave the skin on for a better texture. So many ways to season it too.

    We LOVE roasted veggies in this house…can’t wait to try this recipe! I also love the fact that the sauce is fresh, not bottled or canned.

    Oh, this looks delicious! Perfect for spring an summer! I’ve never heard of lentil pasta before but now I’m definitely going to have to look for it. I love meals that you can eat warm or cold. So convenient!

    I like roasted veggies. It gives them a different flavor when you cook veggies that way…yum! I’d prefer it warm but I’m sure it’d be just as good cold.

    Look at those stunning colors in that dish! I love the mozzarella balls, too – the white really pops against the background of everything else. The recipe sounds delicioso!!! I am equal opportunity pasta eater – I will eat pasta in any form, and any temperature. =)

    Oh delicious! Tomatoes, basil, and fresh mozzarella are one of my favorite combos and who doesn’t love pasta! Lentil pasta is still one I haven’t tried but I’m going to have to add to the list for sure.

    This looks amazing. Definitely pinning, this year I am growing a lot of tomato’s (well that’s the plan) and I am going to need a lot of recipe’s for them over the summer and fall as I start canning.
    Just on a side note, my sister and I tried your skillet Enchilatas, over the weekend. They were delicious, we both loved them and probably ate more than we should have LOL!!! Thanks for the recipe for our dinner!

    I have never tried lentil pasta- it looks the same as regular so I bet I could fool all my kids too! There is nothing better than pasta with veggies and a quick sauce to make a comfort-meal. I like cold pastas too- but they are a summer thing completely for me.

    I love all kinds of pasta dishes. Hot and cold. It just depends on what kind on a mood I am in. Summer is all about the cold pasta and in the wintertime I love warm pasta.

    Yum!! I have only used eggplant to make eggplant parm so this woul dbe a good way to switch things up. and tomatoes and mozzarella are always a good combo 🙂
