Roasted Brussels Sprouts w Pecans, Cranberries & Gorgonzola

It’s crunch time! Thanksgiving is only days away. Need another veggie side to feed your family and guests? Look no further because these Roasted Brussels Sprouts with pecans, cranberries and Gorgonzola is scrumptious and sure to please. Savory, sweet and salty all in one.

Prep the ingredients in advance for a stress free Thanksgiving. Note: take the time to arrange the Brussels Sprouts with the cut side down so that they brown and carmelize. #Gluten Free #Vegetarian

Brussels sprouts|Cranberry|pecan|Gorgonzola|Thanksgiving|Christmas

Finishing note: Adding the Gorgonzola on top of the warm Brussels Sprouts causes it to melt slightly and it is so so good.

Roasted Brussels Sprouts w Pecans, Cranberries & Gorgonzola
Recipe Type: Vegetable side dish
Author: Confessions of A Mother Runner
Prep time: 15 mins
Cook time: 15 mins
Total time: 30 mins
Sweet & savory blend of Brussels sprouts, pecans, cranberries & Gorgonzola
Ingredients
  • 4 lbs of Brussels Sprouts-halved
  • 4 oz pecan halves
  • 3 Cups fresh cranberries
  • 4 ounces Gorgonzola cheese
  • Olive oil, Kosher salt, pepper
  • 4Tablespoons Balsamic vinegar
  • 4 Tablespoons reduced sugar Maple Syrup
  • 1/2 teaspoon nutmeg
Instructions
  1. Preheat over to 425
  2. Coat baking pan with olive oil
  3. Lay Brussels sprouts cut side down to allow for browning
  4. Sprinkle on cranberries, kosher salt, pepper, Balsamic and Maple syrup
  5. Roast for approx 15 min (depending on size of Brussels sprouts)
  6. Cranberries will begin to burst
  7. Remove from oven and sprinkle with nutmeg, pecan and Gorgonzola

    This recipe is perfect for today because it is Eat a Cranberry Day! Another delicious recipe. I love the brussels sprouts, gorgonzola, cranberry combo. Of course the pecans [sometimes I use walnuts] and balsamic make it that much better 🙂

    Oooooh good idea! Love the combination of brussels with the tart of the cranberry! That sounds wonderful! Especially with gorgonzola, that is one of the best cheeses! Cant wait to see what else we have today! Have a great monday my friend!

    another fantastic pairing–brussels and cranberry. I would also add in a squash (for my own preferences) but mmmmm!

    Love love love brussels sprouts! This recipe sounds awesome. I’ll have to try it one day when hubby isn’t working from home because he can’t stand the smell. Yes, I am the only woman on the planet that sneaks brussels sprouts rather than chocolate LOL.

      That is crazy! My kids said it smelled like dinosaur feet when I made them. Don’t know how they know what dinosaur feet smell like 🙂

    I was secretly hoping you would do a brussel sprout recipe! I hated them as a kid but recently tried them (took some persuading ) at a restaurant a few months ago and they were fantastic! I like the thought of the cheese on top too= yum!

    This is very pretty . I am sure the twang from the cranberries really sets off the roasted brussels sprouts.

    Sounds delicious! I’ve never thought to do blue cheese with brussel sprouts but that sounds like it would be a great combination. Sadly we never do brussel sprouts for the holiday itself as most of my family members don’t like them 🙁

        Haha nope, my parents hated them so never had them growing up. I’ve been seeing recipes pop up for them all over the blogosphere the past few weeks though so I am going to have to give them a go. This is a first recipe I have seen without bacon (which we don’t really eat) so I am 99.9% sure this how I am going to make brussel sprouts for the first time 😉

    These look amazing! I am usually in charge of desserts and a few side dishes for Thanksgiving. My husband’s favorite is bacon wrapped green beans so those are a must!
