People do seem to be going a little “Pumpkin Crazy” these days however most of the recipes and pictures I see are for pies, breads and lattes. Don’t get me wrong, I love a good pumpkin bread too but let’s not forget that pumpkin is a vegetable in the squash family with a ton of health benefits.

I’ve kicked up the health benefits even more by combining Kale & Pumpkin into a yummy lasagna. Hope you enjoy!
- 1 pkg whole wheat no cook lasagna noodles (or pasta sub of your choice)
- 4 c Kale (washed & cut from stem)
- 2 C your favorite tomato sauce
- 15 oz can of pumpkin
- 12 oz part skim ricotta
- 2 C low fat mozzarella cheese shredded
- 1/4 tsp nutmeg
- 1/4 tsp all spice
- 1/4 tsp cinnamon
- pepper & salt to taste
- 1 egg
- Preheat oven to 375 degrees
- Saute kale in a small amount of olive oil until soft (approx 5 min)
- In a small bowl combine: ricotta, pumpkin, spices, egg and 1/2 C of the mozzarella-set aside
- spray casserole dish with cooking spray
- pour a small amount of tomato sauce into pan to coat
- layer noodles, cheese mixture and sauce repeating as you would a traditional lasagna
- top layer is sauce and the remainder of the mozzarella cheese
- cover with foil and bake 40 min
- uncover and bake an additional 20 min or until brown and bubbly
- let sit 5 min, cut to serve and enjoy!

I LOVE lasagna! Sometimes, instead of noodles, I use sliced eggplant for the noodle layer. Yum!

Honestly I don’t think I have a favorite pumpkin recipe but I do love squash – does that count?
yes! They are in the same family and pretty much interchangeable in recipes IMO
I have to say that I am over all this pumpkin mania! Your lasagna sounds delish, tho. I make a butternut squash sauce for pasta (with sage butter, yum!) which I will be serving to my family this week.
That also sounds good! I am kind of over the whole pumpkin latte and dessert things thats why I decided to do something healthy

Looks like you & TIna were both craving lasagna this week. Both looks so good. I don’t eat pasta, but I’ve been using zucchini and eggplant as substitutes for mine.
You could certainly sub in one of those veggies. I do love my carbs sometimes. We were on the same page this week for sure. Hope you try them out.

You know I thought about putting those in bc I am a big fan but didn’t want it to look like I tried too hard. Those will be coming back into my recipes very soon though
Yum, this sounds delicious! I’ve never tried pumpkin or squash in a tomato sauce lasagna before. I’ve had it with pasta in a creamy sauce but this sounds much healthier. I wasn’t sure when the kale goes in from the recipe. Does it get mixed in with the pumpkin/cheese or is it its own layer?
I used the kale as it own layer but it could go either way really. Hope you like it!

Pumpkin in my lasagne! Sounds amazing! Of course, I would need to do some altering to go dairy free but thanks for the idea! I have some pumpkins at home waiting for me to puree them and toast the seeds. I see pumpkin lasagne in my future!
